Of course you can have chocolate for breakfast! Shake things up with this favorite southern breakfast dish of chocolate gravy. This recipe features butter, flour, coco and milk. Served on top of hot flaky biscuits, everyone will be cheering for more!

3 cups plus 2 tablespoons all purpose flour
2/3 cup plus 2 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plus more for pan vegetable shortening
1 cups buttermilk
1/4 cup melted unsalted butter
1/4 cup melted, plus 1/3 stick butter
1/3 cup cocoa
2 cups whole milk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a medium bowl, combine the 3 cups flour, 2 tablespoons sugar, baking powder, baking soda and salt. Cut in the shortening with a fork until it looks like cornmeal. Add the buttermilk, a little at a time, stirring constantly until well mixed.
  • Turn the dough out onto a lightly floured surface. Knead lightly 2 or 3 times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut dough into circles with a 2-inch cutter.
  • Place the biscuits in a greased iron skillet. Gently press down the top of the biscuits. Brush the biscuits with half the 1/4 cup melted butter and bake for 14 minutes or until golden brown. Brush the hot biscuits with the remaining melted butter. Split the biscuits in half and ladle Chocolate Gravy over the hot biscuits.
  • Chocolate Gravy:
  • Heat 1/3 stick butter in a cast iron skillet over low heat. Mix in 2/3 cup sugar, 2 teaspoons flour and cocoa. Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch. Serve hot over biscuits.

1 tablespoon butter, softened
2 teaspoons vanilla

Steps:

  • Whisk the cocoa, flour, and sugar together in a bowl until there are no lumps. Pour the milk into the mixture and whisk until well incorporated. Transfer the mixture to a saucepan and cook over medium heat, stirring frequently, until its consistency is similar to gravy, 7 to 10 minutes. Remove from heat and stir the butter and vanilla into the mixture until the butter is melted. Serve immediately.

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon fine sea salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into bits and chilled
3/4 to 1 cup buttermilk
3/4 cup sugar
3 tablespoons all-purpose flour
1/4 cup cocoa powder
2 cups 2-percent or whole milk
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • For the biscuits: Heat the oven to 500 degrees F. Spray an 8-inch round cake pan with nonstick spray and set aside. In a bowl, combine 2 cups of the flour, the baking powder and salt. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until it resembles coarse meal. Pour in the buttermilk and gently mix until just combined; use enough buttermilk so that the dough is very wet and looks like cottage cheese.
  • Place the remaining 1 cup flour in a shallow bowl. Spray a medium ice-cream scoop or tablespoon with nonstick spray. Scoop up some biscuit dough and drop it into the flour. Sprinkle flour over the top and roll the dough gently in the flour. Shake off excess flour and shape the dough into a round. Place it in the prepared cake pan. Continue process until all the dough is used, making 8 to 10 biscuits and pressing them snugly next to each other in the pan. (This will keep them soft and tender.) Bake until golden brown, 12 to 15 minutes. Transfer the pan to a rack to cool just slightly. Serve warm.
  • For the chocolate gravy: Meanwhile, in a medium heavy saucepan, whisk together the sugar, flour and cocoa until no clumps of flour or cocoa remain. Whisk in the milk until well combined. Place over medium heat and cook, whisking constantly, until the mixture begins to boil and then thickens like gravy, 5 to 10 minutes. Remove the saucepan from the heat and stir in the butter until it melts. Spoon warm gravy over the warm biscuits and serve the remaining gravy on the side.

A dear and very close friend of mine who lives in Australia asked me about southern biscuits and gravy for breakfast. It is RARE that I make this because it's artery clogging as HECK so if you're steadfastly health conscious...forget it!! It is an old southern tradition ...like grits. So if you only do it once every 5 years (haha) you're probably safe from a coronary. It's out of this world good! For those who don't know, biscuits and gravy is really more like biscuits, sausage and gravy. Every southern cook adds her/his own twist to it ...like throwing in sugar and vanilla isn't the norm--it's just the way I do it -- once every 5 years or more!

2 cups flour
1/4 cup sugar
1 teaspoon vanilla
4 teaspoons baking powder
1/4 teaspoon baking soda
1 pinch salt
3 ounces cold butter, diced
8 ounces buttermilk
1/2 lb ground sausage
2 tablespoons butter
4 tablespoons flour
3 cups cold milk
salt and pepper

Steps:

  • Combine the dry ingredients. Knead in the butter.
  • Add buttermilk and knead on a floured surface. Make sure you only knead it just enough to get the dough together. Do it gently so the flour doesn't develop gluten which will cause your biscuits to be tough.
  • Flatten the dough with the ball of your
  • fist. Use a glass to cut out your bisquits. Don't make them too tall or the outside may get crusty while the inside is still too doughy.
  • Cook them in a 350 degree oven on a greased cookie sheet and then get started on the gravy straight off.
  • Fry up the sausage until it's thoroughly cooked. Remove the sausage with a slotted spoon.
  • Don't drain the grease. You'll need it to make the roux. You should have about 2 tablespoons of rendered fat. Add the butter and melt it. Then add the flour a little at a time over medium heat, constantly whisking.
  • Cook for about 2-3 minutes. Now start adding the cold milk a little at a time, whisking incessantly.
  • Toward the end of the milk add the sausage back inches When it's nice and thickened up add salt and pepper to taste.
  • Cut the biscuits in half, pour the gravy over them, and enjoy! We're talking breakfast heaven here!

4 tablespoons unsalted butter, cut into 1/2-inch pieces and frozen for 30 minutes
1 cup and 1 tbs buttermilk

6 tablespoons Dutch-processed cocoa powder

4 cups whole milk
1 teaspoon vanilla extract

Steps:

  • Biscuits:.
  • Adjust oven rack ti middle position and heat oven to 450 degrees, Line baking sheet with parchment paper. Pulse all purpose flour, cake flour, sugar, baking powder, salt, baking soda, cream cheese, and butter in food processor until mixture resembles coarse meal, about 15 pulses. Transfer flour mixture to large bowl. Stir in buttermilk until combined (dough may appear slightly dry).
  • Turn out dough onto lightly floured counter and knead briefly until dough comes together. Roll dough into 8 by 6 inch rectangle, about 3/4 inch thick. Cut into twelve 2-inch squares and transfer to prepared baking sheet. Bake until light brown, 12-15 minutes. Transfer to wire rack to cool for 5 minutes. Serve warm.
  • To Make Ahead: Unbaked cut biscuits can be refrigerated on baking sheet, covered with plastic wrap, for up to one day. To finish, heat oven to 450 degrees and bake as above.

  • Whisk sugar, flour, cocoa, and salt together in larger saucepan. Slowly whisk in milk until smooth. Bring to simmer over medium heat, stirring constantly, and simmer until thickened, 2-3 minutes. Remove from heat and whisk in vanilla. Serve over biscuits.
