1 egg
125 g butter
3/4 cup sugar
1 tablespoon cocoa
1/2 teaspoon vanilla
250 g crushed wine biscuits

Steps:

  • lightly beat egg.
  • place butter and sugar in saucepan and heat till butter is melted.
  • add cocoa and mix well.
  • remove from heat and add egg and biscuit crumbs, mix well.
  • press into a greased tin and refrigerate until firm.
  • optional - ice with chocolate icing.
  • leave to set and cut into slices.

3 cups semi-sweet chocolate chips
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
1 dash Dash salt
¾ cup chopped nuts
1 ½ teaspoons vanilla extract

Steps:

  • In heavy saucepan, over low heat, melt chocolate chips with sweetened condensed milk and salt. Remove from heat; stir in nuts (optional) and vanilla.
  • Spread evenly into wax-paper-lined 8- or 9-inch square pan. Chill 2 hours or until firm.
  • Life fudge out of pan and place onto cutting board; peel off paper and cut into squares. Store covered in refrigerator.

6 tablespoons chilled unsalted butter, cut into small pieces, plus more for pan and bowl
3 cups sugar
1 tablespoon Valrhona cocoa powder
Large pinch of fine sea salt
3 tablespoons light corn syrup
1 cup milk
4 ounces Callebaut unsweetened chocolate, finely chopped
2 teaspoons pure vanilla extract

Steps:

  • Butter an 8-by-8-inch straight-sided baking pan. Line with parchment paper; set aside. Butter a large, shallow, stainless-steel bowl; set aside.
  • In a 3-quart saucepan, whisk to combine the sugar, cocoa, and salt. Place over medium-low heat, and add corn syrup and milk, stirring until smooth. Add chocolate. Cook, stirring, until chocolate is melted and sugar dissolved before it reaches a boil. Brush down sides of saucepan with a pastry brush dipped in water to prevent crystallization. Increase the heat to high, and cook until it reaches 236 degrees (soft-ball stage).
  • Pour into prepared bowl without scraping the sides of the saucepan. Dot top with butter. Let cool to 110 degrees to 118 degrees on an instant-read thermometer without disturbing, about 1 hour. Add vanilla. Using a plastic dough scraper, transfer to the bowl of an electric mixer. Using the paddle attachment, beat on low speed until the butter and vanilla are completely incorporated. Increase speed to medium, and beat, stopping occasionally, until fudge keeps its shape when dropped from a spoon and sheen is gone, 3 to 8 minutes. Using a clean plastic dough scraper, transfer to prepared baking pan, spreading evenly. Before fudge sets completely, score with a knife into 1-inch squares. Let stand until completely cooled.

1 (250 g) packet plain sweet biscuits (vanilla wine or super wine biscuits in NZ)
1 cup dried apricot (chopped)
4 ounces butter (113g)
3 ounces brown sugar (85g)
0.5 (395 g) can sweetened condensed milk

Steps:

  • Crush the biscuits and mix with the chopped apricots.
  • In a pot melt the condensed milk, butter and brown sugar together (Do not boil).
  • Mix with the biscuits & apricots.
  • Press into a greased sponge roll/slice tin.
  • Refrigerate and cut when cold.

125 g butter
200 g sweetened condensed milk (1/2 tin)
250 g wine biscuits (1 packet)
1 tablespoon cocoa powder
3/4 cup sultana
1/2 cup coconut
2 cups icing sugar
2 tablespoons cocoa powder
75 -100 g melted butter
2 -4 tablespoons water
1 teaspoon vanilla extract

Steps:

  • Melt butter over a low heat, add condensed milk.
  • Crush wine biscuits by putting them inside a plastic kitchen bag and rolling them with a rolling pin until resembling large breadcrumbs.
  • Pour butter mixture over biscuits, and mix in cocoa, sultanas and coconut.
  • Press into a slice tin then ice.
  • To make chocolate icing, mix icing sugar, second measure of cocoa powder, second measure of butter and water together - butter and water amounts vary according to personal taste. Too much water and the icing won't set well.
  • Slice when cool, and store in fridge. Also freezes well.

Number Of Ingredients 7

60g cocoa powder, sieved
200g caster sugar
60ml vegetable oil
2 large eggs
180g plain flour
1 tsp baking powder
70g icing sugar

Steps:

  • Mix the cocoa, caster sugar and oil together. Add the eggs one at a time, whisking until fully combined.
  • Stir the flour, baking powder and a pinch of salt together in a separate bowl, then add to the cocoa mixture and mix until a soft dough forms. If it feels soft, transfer to the fridge and chill for 1 hr. Heat the oven to 190C/170C fan/gas 5. Tip the icing sugar into a shallow dish. Form a heaped teaspoon of the dough into a ball, then roll in the sugar to coat. Repeat with the remaining dough, then put, evenly spaced, on a baking tray lined with baking parchment.
  • Bake in the centre of the oven for 10 mins - they will firm up as they cool. Transfer to a wire rack and leave to cool. Will keep for four days in a biscuit tin.
