Peanut Butter Bars with Salted Chocolate Ganache image

Nonstick cooking spray, for baking dish
1 1/2 cups confectioners' sugar
1 1/2 cups graham cracker crumbs
1 cup creamy peanut butter
Kosher salt
1 stick (8 tablespoons) unsalted butter, melted
8 ounces semisweet baking chocolate, chopped into small pieces
1 cup heavy cream
1 teaspoon flaky sea salt, optional

Steps:

  • Coat the bottom and sides of an 8-by-8-inch baking dish with nonstick spray.
  • In a large bowl, stir to combine the confectioners' sugar, graham cracker crumbs, peanut butter, 1/8 teaspoon salt, and melted butter. Press the mixture into the prepared baking dish and set aside.
  • Place the chocolate and 1/8 teaspoon salt in a medium bowl. Heat the cream in a small saucepan until bubbles start to form around the edges. Pour the cream over the chocolate, let sit for 1 minute and then whisk until completely melted and smooth.
  • Pour the ganache over the peanut butter mixture and refrigerate until the chocolate is cooled and set, at least 45 minutes and up to overnight.
  • Sprinkle evenly with the flaky sea salt. Cut into squares to serve.

1-1/2 cups packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup milk
FROSTING:
2/3 cup creamy peanut butter
1/2 cup shortening
4 cups confectioners' sugar
1/3 to 1/2 cup milk
TOPPING:
1/4 cup semisweet chocolate chips
1 teaspoon shortening

Steps:

  • In a large bowl, cream the shortening, peanut butter and brown sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition., Transfer to a greased 15x10x1-in. baking pan. Bake at 350° for 16-20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, in a small bowl, cream the peanut butter, shortening and confectioners' sugar until light and fluffy. Gradually beat in enough milk to achieve spreading consistency. Frost bars. , In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over frosting. Store in the refrigerator.

1/2 cup light corn syrup
1/2 cup white sugar
1/2 cup margarine or 1/2 cup butter, softened
3/4 cup peanut butter
1 teaspoon vanilla
0.5 (16 ounce) package mini marshmallows
5 1/2 cups crispy rice cereal
1/4 cup chopped peanuts (optional)
2 cups semisweet chocolate morsels
2 tablespoons shortening

Steps:

  • Pour the rice cereal and chopped peanuts (if using) in a large bowl; set aside.
  • In a heavy-bottomed saucepan combine the light corn syrup and white sugar; bring to a boil; continue to boil for 1 minute.
  • Reduce heat to low and stir in butter or margarine, peanut butter and vanilla until melted and smooth.
  • Add in mini marshmallows and stir until blended.
  • Pour the marshmallow mixture into the rice cereal and stir with a wooden spoon until well combined.
  • Press the mixture into an greased 11 x 7-inch baking pan, flatten with the back of a buttered spoon.
  • In a microwave-safe bowl microwave the chocolate chips with shortening on HIGH until melted, removing once to stir.
  • Immediately spread the hot chocolate mixture evenly over the bars; chill to harden the chocolate.
  • Cut into desired size bars.

Steps:

  • Preheat oven to 350 degrees. In large mixer bowl, beat peanut butter and butter until smooth, about 1 minute. Add sugar, eggs and vanilla extract; beat until creamy. Blend in flour and salt. Stir in 1 cup milk chocolate chips. Spread into (ungreased) 13 x 9 inch baking pan.

1 cup margarine
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
3/4 cup peanut butter
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick oats
3 cups powdered sugar
1/4 cup milk
2 tablespoons peanut butter
1 teaspoon vanilla

Steps:

  • Cream the first 6 ingredients.
  • Add the final 4 mixing well.
  • Spread on large greased cookie sheet.
  • Bake at 350° for 25 minutes.
  • Meanwhile, combine all frosting ingredients (will be fairly stiff), mix well and spread on slightly warm cookies. Cut and serve.

1/3 cup shortening
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract

3 cups confectioners' sugar
1/4 cup milk
1/4 cup semi-sweet chocolate chips
1 teaspoon shortening

Steps:

  • In a mixing bowl, cream peanut butter, shortening and brown sugar.
  • Beat in eggs and vanilla.
  • Combine the flour and salt; gradually add to creamed mixture.
  • Add milk; mix well.
  • Transfer to a greased 15 x 10 x 1 baking pan.
  • Bake at 350 for 16-20 minutes or until a toothpick inserted near the center comes out clean. (I always bake it for 16 minutes.)
  • Cool.
  • For frosting, in a mixing bowl, cream peanut butter, shortening and confectioners' sugar.
  • Gradually beat in enough milk to achieve spreading consistency.
  • Frost bars.
  • Melt chocolate chips and shortening; stir until smooth.
  • Drizzle over frosting.

1/2 cup chunky peanut butter
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup flour
6 (1 1/2 ounce) hershey milk chocolate candy bars

Steps:

  • Melt peanut butter and butter in a bowl over hot water.
  • Add remaining ingredients and stir until blended.
  • Put in a greased and floured 9x13 pan.
  • Bake in a 350° oven for 30 to 35 minutes or until done.
  • Top with chocolate bars while hot.
  • Let chocolate melt, then spread over bars.
  • Cool and cut into bars or squares.
  • Remove from pan and store in a tightly covered container.
