1 cup semisweet chocolate chips
2 tablespoons coconut oil
1 Granny Smith apple
1/4 cup chopped peanuts
1/4 cup shredded coconut

Steps:

  • Melt the chocolate chips and coconut oil together over a double boiler. Line a baking sheet with parchment paper or wax paper.
  • Slice the apple into 1/4-inch-thick slices. Dip the apple slices one at a time into the chocolate, making sure to coat them evenly. The chocolate should go at least three-quarters of the way up each apple slice. Let the excess chocolate drip off.
  • Press one side of each slice into the peanuts or coconut, and place the slices non-peanut/coconut-side down on the parchment. Place in the fridge or freezer until the chocolate hardens, 10 to 15 minutes. Serve.

2 large Granny Smith apples, stemmed
4 ounces chopped bittersweet chocolate
2 teaspoons coconut oil
4 ounces chopped white chocolate

Steps:

  • Line a baking sheet with parchment or a silicon baking mat.
  • Cut the apples lengthwise (stem to bottom) into 4 thick slices each. Remove any visible seeds and keep the core intact. The end slices will be rounded; cut a thin slice off so they lay flat. Poke a small hole in the bottom of each slice with a wooden ice-pop stick and push halfway into the apple.
  • Combine the bittersweet chocolate and 1 teaspoon of the coconut oil in a medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth. Add the white chocolate and remaining 1 teaspoon coconut oil to another medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth.
  • Dip half of the apple slices completely in the bittersweet chocolate, letting the excess drip back into the bowl, and place on the prepared baking sheet. Dip the remaining apple slices in the white chocolate. Let sit at room temperature so the chocolate thickens a bit, 10 to 15 minutes.
  • Transfer the leftover dark and white chocolate to 2 separate small resealable plastic bags and snip a small corner off each bag. Pipe 3 to 4 dark chocolate concentric circles on the white chocolate-dipped apples and visa-versa. Drag a toothpick through the circles, starting the center and working your way out to create a spider web design. Refrigerate until hardened, 15 to 20 minutes.

2 teaspoons shortening

Steps:

  • In a small saucepan, combine milk and butter. Cook and stir over low heat until butter is melted. Place the confectioners' sugar in a large bowl; add milk mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla. Roll into 3/4-in. balls; place on waxed paper-lined baking sheets. Refrigerate until firm, about 1 hour., In a microwave, melt the chips, bittersweet chocolate and shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.

1/2 cup shortening
3/4 cup maple syrup
1/2 cup sugar
3 large eggs, room temperature
3 tablespoons 2% milk
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1-1/2 ounces unsweetened chocolate, melted
1/2 cup chopped pecans
1/2 cup sweetened shredded coconut
FROSTING:
1/4 cup butter, softened
1 cup confectioners' sugar
1/2 cup baking cocoa
1/2 cup maple syrup
1 cup miniature marshmallows

Steps:

  • In a large bowl, cream the shortening, syrup and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and vanilla. Combine the flour, baking powder and salt; add to creamed mixture and mix well. Remove half the batter to another bowl., Combine melted chocolate and pecans; stir into 1 bowl of batter. Spread into a greased 13x9-in. baking pan. Add coconut to remaining batter. Spread carefully over chocolate batter. , Bake at 350° until a toothpick inserted in the center comes out clean, about 25 minutes. Cool completely on a wire rack., For frosting, in a small bowl, beat butter until smooth. Gradually add the confectioners' sugar and cocoa. Gradually add syrup, beating until smooth. Fold in marshmallows. Frost bars.

This is a perfect application for maple butter, combining with almond for the filling and garnishing the dark chocolate crust. An elegant dessert for holiday guests.

250 ml (1 cup) maple butter
250 ml (1 cup) almond powder
12 slices of whole-wheat bread, crusts removed
340 g (12 oz) 70% dark chocolate
125 ml (1/2 cup) maple butter

Steps:

  • In a bowl, combine maple butter and almond powder until you obtain a spread-like consistency. Set aside.
  • Using a rolling-pin, flatten the bread slices, spread with almond mixture, then roll up into little logs. Refrigerate for 1 hour.
  • Melt chocolate in double boiler over low heat. Remove from heat.
  • Working with one at a time, dip the log rolls in the melted chocolate, and allow them to set in the fridge.
  • In a bowl, melt maple butter in the microwave for 30 seconds over high heat. Using a cone made out of wax paper or a spoon, decorate the logs with the melted maple butter.

CANDIED ORANGE SLICES DIPPED IN CHOCOLATE

Someone gave us a gift of these delicious orange slices. These tangy oranges and creamy chocolate are an unbeatable combination. They look fancy and colorful, and are easy to make. A Christmas favorite. These do take a while to make but are well worth it. The orange slices are delicious even without the chocolate. Drying time not included in time. NOTE: When cooking the orange slices DO-NOT STIR. If someone is helping you make sure they do not stir just them push down on the orange slices as recipe says. :) I cut the slices in half again after cooking.

4 valencia oranges
2 cups water
3 1/2 cups granulated sugar
3 cups granulated sugar, as needed for coating
2 lbs semisweet chocolate, chopped into small pieces (reserve a 2-ounce chunk)

Steps:

  • Cut the oranges in half lengthwise, with the cut side down slice the oranges crosswise into 1/4-inch slices, (you will have 1/2 of a slice of orange:DO-NOT peel),discard the ends.
  • In a 10-inch saute pan combine the water and the 3 1/2 cups of sugar, stir to blend, then bring to a boil over medium heat.
  • Add the orange slices, separating them, and simmer them gently for 1 hour uncovered; peroidically dunk any floating slices.
  • Remove from heat and cool to room temperature.
  • Remove the orange slices, with a slotted spoon and transfer to a cooling rack set over a baking sheet to let drain and dry for 24 hours; NOTE; I dryed them in my oven set for for baked goods, or if oven has a pilot light, this worked great if it is a damp day.
  • After drying the slices, toss them in the granulated sugar and reserve them, do not stack them as they will stick together.
  • While you are coating the orange slices with the sugar, have the chocolate melting slowly in the top of a double boiler over 120 degree water: Chocolate can be melted in the microwave.
  • When all the chocolate is melted and creamy and registers 100 degrees on an instant themometer, remove the top section from the double boiler.
  • Add the 2-ounce of chocolate and gently stir until the thermometer reads 88 degrees to 91 degree, then remove what remains of the chunk of chocolate.
  • Now dip the orange slices 2/3 of the way into the chocalate; gently scrape off excess chocolate against the side of the pan.
  • Place the orange slices on a sheet of wax paper to set.
  • Work quickly with the slices if the chocolate becomes to thick for dipping, place it over the 120 degree water again until it reaches 88 to 91 degrees.

12 ounces white candy coating disks, melted
12 ounces dark chocolate candy coating disks, melted
2 ounces milk chocolate candy coating disks, melted

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture. Stir in almonds and chocolate chips. Cover and refrigerate for 2 hours. Divide dough in half. Shape into two 8-in. rolls; wrap each in plastic wrap. Refrigerate for 3 hours or until firm., Unwrap and cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 350° for 8-10 minutes or until set. Remove to wire racks to cool., Dip half of the cookies in white coating; allow excess to drip off. Place on waxed paper. Repeat with remaining cookies in dark chocolate coating. , Place milk chocolate coating in a resealable plastic bag; cut a small hole in one corner of the bag. Pipe designs on cookies. Let stand for 30 minutes or until set.
