CHOCOLATE-DIPPED ALMOND-MARSHMALLOW CHEX™ BARS

Steps:
- Line 13x9-inch (3-quart) baking dish with cooking parchment paper; spray with cooking spray. Set aside.
- In 4-quart saucepan, melt butter over medium heat. Add marshmallows. Stir with wooden spoon or rubber spatula until melted. Add almond extract. Reduce heat to low; stir in cereal and almond paste until evenly coated. Pour into baking dish. Use greased rubber spatula or greased hands to press mixture firmly and evenly in dish. Refrigerate 20 minutes.
- Remove from baking dish. Use heart-shaped cookie cutter to cut into hearts. Scraps can be rerolled with greased rolling pin.
- Microwave chocolate in microwavable bowl uncovered on High in 30-second increments, stirring after each. Dip hearts halfway into chocolate; sprinkle with sprinkles, and place back on parchment paper. Place in freezer a few minutes until chocolate hardens.

- Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
- In large microwavable bowl, microwave butter uncovered on High about 45 seconds or until melted. Add marshmallows; toss to coat. Microwave 1 to 1 1/2 minutes longer. Stir until marshmallows are completely melted and mixture is well blended.
- Add cereal; mix well. Using waxed paper or spatula sprayed with cooking spray, press mixture evenly into baking dish. Cool 15 minutes. For bars, cut into 6 rows by 3 rows.

- In a mixing bowl, cream butter and sugar.
- Add eggs and vanilla; beat until fluffy.
- Combine flour, baking powder, salt, and cocoa; add to creamed mixture.
- Stir in nuts.
- Spread in a greased 15x10-inch pan.
- Bake at 350°F for 15-18 minutes.
- Sprinkle marshmallows evenly over cake; bake 2-3 minutes longer.
- Using a knife, dipped in water, spread the melted marshmallows evenly over cake; cool.
- For topping: combine chocolate chips, butter and peanut butter in a small saucepan.
- Cook over low heat, stirring constantly, until melted and well blended.
- Remove from heat; stir in cereal.
- Spread immediately over bars.
- Chill.
- Cut into squares and serve.

EASY CHOCOLATE DIPPED MARSHMALLOWS
Sweet treats for anytime or occasion. For the kids or dinner parties.This recipe comes from Real Simple February 2009. In 10 minutes you have a great dessert or sweet snack with few ingredients. We made them for the holidays and topped with green sprinkles but you can top with anything your heart desires. The site wouldn't let me use just topping so I had to put ice cream topping but there is no ice cream involved here. You get the idea though. Enjoy this little ditty. ChefDLH

- Melt chocolate one of two ways (see below).
- Dip half of each marshmallow in the melted chocolate, letting the excess drip off.
- Then sprinkle with your desired toppings.
- Serve immediately or chill until firm, about 20 minutes.

- Melt chocolate in top of a double boiler or a heat proof bowl set over (not in) a saucepan of simmering water. Cook, stirring occasionally until melted, 2-3 minutes.
