These peanut butter chocolate chip cookie cheesecake bars are just as extreme as they sound. For true dessert lovers! Super yummy!

1 stick butter, unsalted (1/2 cup), softened
1/2 cup white sugar
1/3 cup packed brown sugar
1/2 cup peanut butter
1 egg
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt (less if you don't like salty/sweet)
1/2 cup rolled oats
2 cups chocolate chips
8 ounces cream cheese, softened
1/3 cup sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • Make the cookie dough: Preheat oven to 325 degrees. Cream the butter, sugars, and peanut butter until smooth and fluffy. Add the egg and beat until incorporated. In a separate bowl, mix the flour, baking soda, and salt. Slowly add the flour mixture in with the butter and sugar, mixing well after each addition. Stir in the oats and chocolate chips.
  • Make the cheesecake filling: Cream the cream cheese, egg, sugar, and vanilla until smooth.
  • Press half to two-thirds of the cookie dough in the bottom of a 9-inch square baking dish. Pour the cheesecake filling over the dough. Crumble the remaining dough and sprinkle over the top, OR roll it into a flat layer and place it over the cheesecake layer.
  • Cover with foil and bake for 20 minutes; remove foil and bake for another 15-20 minutes, or until tops is lightly browned and cheesecake layer is set. Serve warm or cold and store leftover bars in refrigerator.

3 tablespoons vegetable oil
1 tablespoon water
1 egg
1 1/4 cups semisweet chocolate chips
1/4 cup butter or margarine
1 package (8 oz) cream cheese, softened
2/3 cup crunchy or creamy peanut butter
3/4 cup powdered sugar
1/2 cup whipping cream

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie base and topping ingredients until soft dough forms. Shape 6 (1-inch) balls of dough. On ungreased cookie sheet, place balls 2 inches apart; flatten in crisscross pattern with fork.
  • Press remaining dough in pan. Bake cookies and base 10 to 12 minutes or until edges are light golden brown. Cool 10 minutes. Reserve cookies for topping.
  • In small microwavable bowl, microwave chocolate chips and butter uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and stirred smooth. Spread evenly over bars. Refrigerate until firm, about 30 minutes.
  • In medium bowl, beat cream cheese, peanut butter, powdered sugar and whipping cream with electric mixer on low speed until blended. Beat on high speed about 2 minutes or until light and fluffy. Spread over chocolate layer.
  • Crush reserved cookies; sprinkle over cream cheese layer. Press in lightly. Refrigerate until set, about 30 minutes. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

CHEESECAKE LAYER:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1-1/2 teaspoons vanilla extract
3/4 cup semisweet chocolate chips, melted and cooled
2 large eggs, room temperature, lightly beaten
GANACHE:
1-1/2 cups semisweet chocolate chips
1/2 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. Line a 13x9-in. pan with foil, letting ends extend up sides; grease foil. In a microwave, melt butter in a large microwave-safe bowl. Stir in sugar, cocoa and vanilla. Add egg; blend well. Add flour, baking powder and salt; stir just until combined. Spread as a thin layer in prepared pan. Bake until top appears dry, 6-8 minutes. , Meanwhile, in a large bowl, beat cream cheese, sugar and vanilla until smooth. Beat in cooled chocolate chips. 1 carton (8 ounces) frozen whipped topping, thawed

1 (12 ounce) can seamless crescent rolls
8 ounces cream cheese, room temperature
1/3 cup sugar
2 teaspoons vanilla
3/4 cup peanut butter chips (use a mixture) or 3/4 cup chocolate chips (use a mixture)

Steps:

  • Beat sugar, cream cheese and vanilla together until smooth and creamy.
  • Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough. Pinch together seams on pre-cut crescents if necessary.
  • Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch.
  • Sprinkle your chips on top of cream cheese - press them in lightly to aid in rolling.
  • Roll the crescent sheet up tightly and wrap in cling wrap.
  • Place in freezer for at least 2 hours it won't get really solid as the cream cheese mix won't freeze hard.
  • When chilled preheat oven to 350°.
  • Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup).
  • Slice the crescent roll into 1/4" slices. They won't keep the precise round shape, but that is fine!
  • Bake on prepared cookie sheet for 12 -14 minutes until crescent roll appears golden brown.
  • Cool on the parchment paper or wire rack.
