CHOCOLATE CHIP CREAM SCONES

Chocolate Chip Cream Scones image

Chocolate Chip Cream Scones are a simple pleasure, having a tender flaky texture and crumbly exterior with just the right amount of sweetness. They're perfect for breakfast or brunch, and make a nice addition to an afternoon High Tea!Adapted from Ratio: The Simple Codes Behind the Craft of Everyday Cooking

Categories     Breakfast     Brunch     Dessert

Time 58m

Number Of Ingredients 10

2 cups all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
6 tablespoons unsalted butter (very cold or frozen, see Recipe Notes)
½ cup heavy cream (plus extra for brushing on top, see Recipe Notes)
1 large egg (beaten)
1 teaspoon pure vanilla extract (or another flavoring, optional, see Recipe Notes)
3 ounces chocolate chips ((½ cup))
coarse sugar (for sprinkling, optional)

Steps:

  • Preheat the oven to 425 °F.
  • In a large bowl, combine the flour, sugar, baking powder, and salt.
  • If the butter is frozen, grate it using a box grater. Otherwise, cut the butter into small cubes.
  • Toss the butter into the flour mixture to coat, then use a pastry blender, two forks, or your hands to work the butter into the flour until coarse, pea-sized crumbs appear. Don't overdo this step as you don't want the butter to warm up and mix completely into the flour.
  • Whisk together the heavy cream, egg, and vanilla (if using) in a small bowl.
  • Slowly add the heavy cream mixture to the flour mixture and mix until the dough just holds together. Using a bowl scraper will help to combine the dough in the bowl without your hands warming up the butter, plus you can see any crumbs at the bottom that still need to be mixed in. Use the bowl scraper to push the dough into a ball in the bowl, then turn the dough out onto a lightly floured surface and shape it into a flattened disk about 1-inch high.
  • Sprinkle some of the chocolate chips on the dough, then fold the dough over them. Flatten the dough and reshape into a disk. Do this "fill and fold" method a few times until you have enough layers of your mix-in incorporated into the dough. Reserve some of the chocolate chips to press into the surface of the scones before baking.
  • Use a bench scraper to release the disk from the mat. Cover the dough with plastic wrap, and chill for at least 20 minutes or up to overnight to let the butter firm up again.
  • For wedge-shaped scones: Unwrap the chilled dough and place it on a half sheet baking pan covered in a Silpat silicone mat or parchment paper. Cut the disk into wedges using the bench scraper and place the wedges about 2-inches apart.
  • For cut scones: The unwrap the chilled dough and place it on a lightly floured work surface. Use a 3-inch round cookie cutter (or whatever size or shape you desire) to cut out shapes. Gather and cut the leftover dough again as needed, but hopefully not more than 2 times. Transfer the cut scones to a half sheet baking pan covered in a Silpat silicone mat or parchment paper.
  • Press in the reserved chocolate chips on the top of the portioned scones for a pretty presentation. Brush the tops of each scone with heavy cream and sprinkle on some coarse sugar. Bake for about 18 to 23 minutes or until they are dark golden brown.
  • Cool on the pan for 2 minutes, then move to a cooling rack.
  • Serve warm or at room temperature. Pair them with lemon curd and clotted cream for a lovely combination. Enjoy!
  • Scones stored in an airtight container at room temperature will keep for up to 5 days. Freeze the baked scones in a ziplock bag for longer storage.
  • For freshly baked scones anytime, freeze the cut, unbaked scones in a ziplock bag. Take out as many as you want to bake (there's no need to defrost them first), and bake at 400 °F for 20 to 25 minutes.
  • The yield is generally about 8 scones (that's what I get from a circle cut into wedges or using a 3-inch round cookie cutter), but yours may vary.

CHOCOLATE CHIP SCONES

Chocolate Chip Scones image

A recipe I found at King Arthur's Flour site and here is the intro they gave: Chocolate chips make EVERYTHING better, and scones are no exception! These rich, tender scones aren't overly sweet, allowing the flavor of dark chocolate to shine through. Serve them as is, or spread with raspberry or apricot jam for one of those "big sigh" moments. For ultra-tender texture, we like to use one of our lower-protein pastry flours in these scones. Use all-purpose if that's what you have; the dough will be a bit stiffer. Scones will still be tasty, just not quite so tender.

Time 35m

Yield 16 3 inch scones/biscuits, 16 serving(s)

Number Of Ingredients 10

2 1/2 cups pastry flour (can use cake flour or All purpose)
1/2 teaspoon salt (heaping)
1/4 cup sugar
2 1/4 teaspoons baking powder
6 tablespoons unsalted butter, cut into pats
3/4 cup cream (half and half, light, heavy, or whipping cream)
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups chocolate chips (9 to 12 ounces)
coarse white sparkling sugar, for topping (or demerara sugar)

Steps:

  • Preheat the oven to 400°F Lightly grease (or line with parchment) a baking sheet.
  • In a medium-sized bowl, whisk together the flour, salt, sugar, and baking powder till thoroughly combined. Add the butter, working it in until the mixture is unevenly crumbly.
  • Whisk together the cream , eggs, and vanilla. Set aside 2 tablespoons, and add the rest to the dry ingredients, along with the chocolate chips. Mix to form a moist dough.
  • Transfer the sticky dough to a heavily floured rolling mat or other work surface. Gently pat and round it into an 8" circle. Brush the dough with the reserved egg/cream mixture, and sprinkle heavily with coarse sugar.
  • Dip a 2" round cutter in flour, and use it to cut out a total of 16 scones; you'll have to gather the scraps and reshape the dough once. Space the scones evenly on the prepared pan.
  • Bake the scones for 20 minutes, until they're golden brown. Remove them from the oven, and serve warm. If not serving immediately or within a couple of hours, store in an airtight container. To reheat, wrap loosely in aluminum foil, and bake in a preheated 350°F oven for about 10 minutes.

BISQUICK CHOCOLATE CHIP SCONES

Bisquick Chocolate Chip Scones image

I found this recipe in a newspaper I think, it was for chocolate chip Bisquick scones. My family likes something sweet on Saturday mornings so I whip up a batch of these. By the time the coffee is done so are these yummy chocolaty treats.

Provided by busygirl

Categories     Scones

Time 22m

Yield 16 small wedges, 4 serving(s)

Number Of Ingredients 8

2 cups original Bisquick baking mix
1 cup mini chocolate chip
1/3 cup whipping cream (heavy)
2 -3 tablespoons whipping cream (heavy)
3 tablespoons sugar
1 tablespoon sugar
1 egg
1 teaspoon vanilla

Steps:

  • Heat oven to 425°F Spray cookie sheet with cooking spray (I skip this and use parchment or silpat). Stir Bisquick mix, 3 TBS sugar, and chocolate chips together, form a well in this mix. Pour in the 1/3 whipping cream, vanilla, and egg stir till soft dough forms( if it seems a little dry add 1-2 TBS more of whipping cream).
  • Split the dough in half and form two circles about an inch to an inch and a half thick. Brush top of the circles with additional 1TBS cream and sprinkle with sugar (hint: if you are out of brushing cream I love to use a bit of flavored coffee creamer). Cut each circle into eight wedges but, do not separate.
  • Bake about 12 minutes or till golden brown (always check that the center is done , if not bake a few more min.). When done pull from oven a let rest a minute or two, cut into prescored wedges and serve warm. ENJOY!

Time 30m

Yield 8 serving(s)

Number Of Ingredients 13

3 1/2 cups flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
12 tablespoons cold butter or 12 tablespoons margarine
2/3 cup very ripe banana, mashed
1 cup banana yogurt or 1 cup sour cream
1 egg yolk
3/4 cup miniature chocolate chip
3 semi-sweet chocolate baking squares, chopped into small pieces
1/4 cup whipping cream
1 (8 ounce) package whipped cream cheese

Steps:

  • Preheat oven to 350°F
  • Combine the first 5 ingredients in bowl.
  • Cut in the butter until the size of peas.
  • Add the yogurt or sour cream, egg yolk, bananas and chocolate chips.
  • Combine into ball. Flour a surface and knead gently until it comes together.
  • Grease a cookie sheet. Place ball in centre of sheet and pat down to form a disk, about 2 1/2 inches high (approx).
  • Cut dough in half and then in half the other way (now you have 4 pieces. Now repeat again. So now you have 8 triangles.
  • Pull trianges out from each other so they are not touching too much. This will give you lots of nice crust.

  • For Chocolate Glaze:.
  • When scones are done, put some mini choco chips on top of the scones. Leave for 5 minutes, then spread over top.
  • OR.
  • For Chocolate Cream Cheese:.
  • Heat chocolate and cream until chocolate is melted.
  • Cool to room temperature.
  • Stir into whipped cream cheese.
  • Serve along side scones. YUMMY!
