CHOCOLATE CHIP COFFEE CAKE (GIFT MIX IN A JAR)

Steps:
- Creating the Gift in a Jar:
- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, cinnamon, baking soda, baking powder, sugar and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- CHOCOLATE CHIP COFFEE CAKE GIFT TAG:
- Additional ingredients to be added by the recipient: 2 eggs, 1 cup sour cream, 1/2 cup butter, softened and 1 tsp vanilla extract.
- CHOCOLATE CHIP COFFEE CAKE INSTRUCTIONS:
- Preheat oven to 350.
- Place the eggs, sour cream, butter and extract in a large bowl and blend with an electric mixer set on low speed.
- Add the contents of the jar and continue to blend for 2 minutes.
- Pour the batter into a generously greased 9 x 13 inch pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Cool for 10 minutes in the pan, then remove the cake and cool completely on a wire rack.
- Store in an airtight container for up to 1 week.

Steps:
- Mix the salt and baking soda in with the flour, then layer the ingredients except for the instant coffee, egg, margarine and water into the jar so that would be Brown sugar, sugar, chocolate chips, flour mixed with salt and baking soda.
- Place the instant coffee in a snack size baggie and seal.
- Attach a gift card with the following instructions:.
- Coffee Chocolate Chip Cookies.
- Sift dry ingredients through a colander to separate the chocolate chips from other ingredients.
- Beat 1 cup of unsalted butter or margarine or butter flavored Crisco in a medium bowl.
- Dissolve the coffee in 2 tablespoons hot water.
- Beat sifted ingredients into butter until blended.
- In a small bowl, beat 1 egg with 1 teaspoon vanilla extract.
- Mix beaten egg mixture into butter mixture until blended.
- Add dissolved coffee and beat again.
- Stir in chocolate chips.
- Drop teaspoonsful of batter, spaced well apart, (or roll into balls) onto a greased cookie sheet.
- The cookie yield is approximate as I always make large cookies.
- Bake at 350-375 degrees F for 8 minutes or until lightly browned.

- Spoon the batter into papered muffin tins, filling each liner half full.
- Bake for 17-20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the tin, then transfer to a wire rack and cool completely.
- Serve immediately or store in an airtight container for up to 5 days.

- In a mixing bowl, cream the butter, cream cheese and 1 1/4 cups of sugar.
- Beat in eggs and vanilla.
- Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with milk.
- Stir in chocolate chips.
- Pour into a greased 9-inch springform pan.
- Combine the pecans, cinnamon and remaining sugar; sprinkle over batter.
- Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 15 minutes.
- Carefully run a knife around edge of pan to loosen.

- Preheat the oven to 350°F Grease an 8-inch square baking pan. In a medium bowl, mix together the flour, baking powder, baking soda and salt. In a small bowl, combine 1/4 cup sugar and the cinnamon.
- Using an electric mixer, beat together the butter and remaining 1 cup sugar until fluffy, about 5 minutes. Beat in the eggs, 1 at a time, then beat in the sour cream and vanilla. Fold in the flour mixture, in 2 parts, until just combined. Spread half the batter into the cake pan and sprinkle with half the cinnamon-sugar and half the chocolate chips. It's ok to just put it in the middle and gently even out. It may not touch the edges of the pan but will spread out when cooking. Spoon the remaining batter as evenly as possible over the filling, spreading gently. Sprinkle with the remaining cinnamon-sugar and chocolate chips.
- Bake until golden and a toothpick inserted in the center comes out clean, 30 to 35 minutes.
