CHOCOLATE CHIP-BANANA BELGIAN WAFFLES

- Preheat a Belgian waffle iron to medium-high. In a large bowl, whisk together the pancake mix, salt, cinnamon, egg, oil, milk, mashed banana and vanilla. Add the chocolate chips; stir until just combined., Grease the waffle iron with nonstick cooking spray. Pour a heaping 1/3 cup batter into each waffle iron quarter, spreading the batter out to the edges. Close and cook until the waffle is crisp and the waffle iron stops steaming, about 4 minutes. Repeat with the remaining batter. To serve, top the waffles with banana slices, walnuts and hot fudge.

Eat for breakfast sprinkled with powdered sugar, or top it with a scoop of ice cream for dessert. Recipe came with my Cuisinart waffle maker. Recipe called for 1 2/3 cups milk, but I ended up adding at least another 1/3 cup.

Steps:
- Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.
- Let batter sit 5 minutes before using.
- Preheat waffle iron.
- Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).
- Serve immediately.

CHOCOLATE CHIP BANANA OAT WAFFLES
These chocolate chip banana oat waffles are crispy on the outside, but fluffy on the inside. They are made with a base of oats, bananas, and soy milk for a hearty and healthy breakfast.

- To begin, bring frozen blueberries to a low boil in a small covered saucepan.
- Then, add in maple syrup, water, and flour, and turn the heat down to low-medium. Cook for another 10 minutes.
- In the meantime, grind up the rolled oats (if you aren't using oat flour) in your blender. Then, add the baking powder, cinnamon, and salt in with the oat flour and pulse to combine. Empty the dry mixture into a bowl from your blender, then set aside.
- Add all wet ingredients for the waffles into the bottom of your blender, then add the dry ingredients over top. Blend until you achieve a smooth batter consistency. It should be thick, but still pourable.
- Fold in chocolate chips at this point if you are using them. Set the batter aside while you preheat your waffle iron on medium.
- Once heated, lightly oil the waffle iron with coconut oil or vegan butter (unless you have a non-stick one). Ladle batter evenly onto waffle iron, adjusting as needed for different sized irons. Cook for 4-5 minutes until slightly crispy and golden brown.
- You can keep the cooked waffles warm by storing them on a wire rack in your oven set to 200°F. Just don't stack the waffles once they are cooked to prevent them from turning soggy.
- While the waffles are cooking, blend the blueberry mixture together until you achieve a smooth, syrup consistency. Keep it in the fridge until you are ready to serve.
- Serve waffles with vegan butter, nut butter, blueberry syrup, banana slices, or any other fruit you love!

- To prepare flax egg, combine flaxseed and water in a medium (to large) mixing bowl, stir, and allow to sit for a few minutes to thicken.
- Once thickened, add peeled bananas and baking powder to the flax egg and mash well with a fork until only small chunks remain. Add in oil and whisk to combine. Then add dairy-free milk and stir to combine.
- Next add salt and oats and stir again. Then add gluten-free flour and stir until just combined. Finally, add in chocolate chips and stir once more.
- The batter should be cake-like in texture — slightly thick but pourable (not runny). When you dip a mixing spoon into it, it should leave soft peaks. If too thin, add more gluten-free flour and stir. If too thick, thin with a little dairy-free milk and stir. (We usually add a bit of gluten-free flour at this point.)
