CHOCOLATE CHERRY ALMOND SNACK BARS



Chocolate Cherry Almond Snack Bars image

Chewy, crunchy, satisfying chocolate cherry almond bars made with real, wholesome ingredients.

1/3 cup (114g) honey or brown rice syrup*
1/4 teaspoon pure vanilla extract
1/3 cup (40g) almond meal*
1/8 teaspoon salt
1 Tablespoon (15g) almond butter
2 cups (280g) whole almonds, roughly chopped
1/2 cup (60g) dried cherries, roughly chopped
1/3 cup (58g) mini chocolate chips

Steps:

  • Preheat oven to 300°F (149°C). Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Using a rubber spatula or wooden spoon, mix the honey, vanilla, almond meal, salt, and almond butter together until combined. Fold in the almonds, cherries, and chocolate chips until combined.
  • Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 20 minutes. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This helps firm up the bars which makes them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars. Individually wrap each bar in plastic wrap or parchment. Store at room temperature for 1 week or in the refrigerator for up to 2 weeks. I find they get a little sticky at room temperature over a few days, so I prefer the refrigerator.

I learned this recipe from a childhood friend whose mother made these for family parties and get-togethers. They are a great Christmas or special occasion cookie. My Mother makes hers with walnuts, I prefer pecans for a mini pecan pie taste.

1 cup butter, softened
2 (3 ounce) packages cream cheese
½ cup white sugar
2 cups all-purpose flour
2 teaspoons butter, melted
2 eggs
½ teaspoon vanilla extract
2 cups chopped pecans
1 ½ cups brown sugar
½ cup honey

Steps:

  • In a medium bowl, mix together the butter, cream cheese and sugar until smooth. Stir in the flour and mix thoroughly. The dough should be somewhat firm. Roll into 36 small balls, place them on a plate and refrigerate for one hour.
  • Make the filling in a medium bowl. Beat the eggs, melted butter, vanilla and brown sugar until smooth and well blended. Stir in the nuts. Preheat oven to 375 degrees F (190 degrees C). Press the chilled dough balls into the bottom and up the sides of tart pans or mini muffin cups. Fill each shell with filling almost to the top. Use a squeeze top honey container if you have one, to drip about 1/2 teaspoon of honey onto the top of each cup.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is lightly browned. Allow to cool in the tins completely before removing.

2-1/2 ounces semisweet chocolate
2 teaspoons shortening, divided
2-1/2 ounces white baking chocolate
1/2 cup dried cherries, chopped
1/2 cup boiling water
1/4 teaspoon almond extract
1 package (8 ounces) cream cheese, softened
3 tablespoons confectioners' sugar
1 drop red food coloring
1/4 teaspoon grated lemon zest

Steps:

  • In a microwave, melt semisweet chocolate and 1 teaspoon shortening; stir until smooth. Brush evenly on the inside of 12 paper or foil miniature muffin cup liners. Repeat with white baking chocolate and remaining shortening. Chill until firm, about 25 minutes. , Meanwhile, in a small bowl, combine the cherries, water and extract; let stand for 5 minutes. Drain, reserving liquid., In a small bowl, combine the cream cheese, confectioners' sugar, food coloring, lemon zest and 2 tablespoons reserved cherry liquid; beat on medium-low speed for 2 minutes or until smooth. Fold in cherries., Cut a small hole in the corner of a pastry or plastic bag; insert a tip. Fill with cherry mixture. Pipe into chocolate cups. Refrigerate for 1 hour or until firm. Carefully remove from liners.

1 teaspoon vegetable shortening
1 cup broken pecans or 1 cup walnuts

Steps:

  • Place chips and shortening in medium microwave safe bowl and microwave on high or 1 to 1 1/2 minutes or until smooth when stirred.
  • Stir in nuts.
  • Spoon heaping teaspoonful of mixture into 1" paper candy cups.
  • Refrigerate until firm.
  • Peel off paper cups, if desired.

24 oz. package chocolate almond bark
1/2 cup dried cherries
1/2 cup roasted peanuts
1/2 cup macadamia nuts
1/4 cup pumpkin seeds

Steps:

  • In a small crock pot melt the chocolate bark on low stirring occasionally.
  • Place mini candy cup papers on a baking sheet or in a mini muffin pan.
  • Fill cups half way with any combination of dried cherries and nuts that you'd like.
  • Using a small cookie dough scoop carefully fill the paper candy cup with chocolate bark.
  • Lightly tap the baking sheet or mini muffin pan on the counter to help the chocolate settle around the cranberries and nuts.
  • If making a combination of flavors top each candy cup with the corresponding dried fruit and nuts used.
  • Set aside to harden at least an hour.
  • Package in fun Christmas treat bags.

1/2 cup butter, softened
3-3/4 cups confectioners' sugar
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
2 cups sweetened shredded coconut
2 cups finely chopped walnuts
2 jars (16 ounces each) maraschino cherries with stems, well drained and patted dry
2 packages (11-1/2 ounces each) milk chocolate chips
1 tablespoon shortening

Steps:

  • In a large bowl, beat butter and confectioners' sugar until smooth. Beat in milk and vanilla until well blended and mixture looks like softened butter. Fold in the coconut and walnuts. , With moist hands, shape 2 teaspoonfuls of coconut mixture around each cherry, forming a ball. Place on a waxed paper-lined baking sheet. Cover and refrigerate for 1 hour or until chilled., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip coated cherries into chocolate. Place on waxed paper; let stand until set. Store in an airtight container at room temperature for up to 1 month.

1/2 cup miniature semisweet chocolate chips
1/3 cup chopped almonds, toasted

Steps:

  • Put butter and sugar in a large mixing bowl and beat with an electric mixer on medium speed for 3-4 minutes.
  • Stir in buttermilk, eggs and almond extract; mix well.
  • Combine dry ingredients. Add to the buttermilk mixture; stir just until dry ingredients are moistened.
  • Stir in cherries, chocolate chips, and nuts.
  • Grease and flour bottom only of 9 X 5 inch loaf pan. Pour batter into prepared pan.
  • Bake in a 350 degree oven 55-65 minutes.
  • Let cool in pan on wire rack 10 minutes and remove from pan. Cool.
  • Wrap in plastic wrap and store in refrigerator.
  • To toast almonds: Spread almonds in an ungreased pan. Bake in a 350 degree oven for 5-7 minutes, stirring occasionally, or until brown.
