1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
3 eggs
1/2 cup sugar
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
1-1/3 cups whole milk
1 cup (about 1/3 of 8-oz. tub) thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Microwave butter and chocolate in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter and chocolate are completely melted and mixture is well blended, stirring every 30 sec. Cool 10 min.
  • Line 9-inch pie plate with pie crust as directed on package.
  • Add eggs, sugar and dry pudding mix to butter mixture; whisk until blended. Gradually add milk, mixing well after each addition. Pour into crust.
  • Bake 55 min. to 1 hour or until center is almost set and edge of pie is slightly puffed. Cool completely.
  • Refrigerate 2 hours.
  • Serve topped with COOL WHIP.

½ cup heavy whipping cream
1 cup fresh strawberries (halved)

Steps:

  • To make crust: combine almond crumbs, butter, cacao powder and 1-tablespoon sugar in a medium bowl. Evenly pat into bottom of 8-inch round springform pan. Chill for at least 30 minutes to set. Or you can bake crust, see notes below.
  • To make filling: Beat cream cheese in a large bowl until creamy, about 2 minutes. Slowly beat in chocolate pudding and ¼ cup sugar until combined.
  • In a separate medium bowl, beat heavy whipping cream on high until thick peaks form, about 5 minutes. Fold into pudding mixture with a spatula. Pour into crust and evenly spread.
  • Chill for 1 hour to thicken.
  • Top with a thin layer of chocolate pudding and strawberries, then serven.

1 cup Granulated Sugar
1/2 cup All-Purpose Flour
1/2 cup Unsweetened Cocoa Powder

2 teaspoons Vanilla Extract
16 ounces Cream Cheese, Room Temperature

Steps:

  • In a medium-sized saucepan add sugar, flour, cocoa powder, and salt. Whisk together until well combined.
  • Whisk egg yolks until well combined, and slowly whisk in whole milk.
  • Slowly pour milk mixture into flour mixture while stirring to prevent lumps.
  • Bring to a simmer over medium heat while stirring. Make sure to scrape sides, and bottom of pan to prevent pudding from scorching.
  • Cook until chocolate pudding is thick, and holds stir lines when stirred. Stir in vanilla, and set aside.
  • Beat cream cheese until light, fluffy, and smooth. Scrape sides of bowl, and beaters often to remove lumps.
  • Mix warm chocolate pudding into cream cheese until smooth, and well combined. Scrape sides of bowl often while mixing.
  • Pour chocolate pudding cheesecake mixture into baked pie shell. Cover and refrigerate until cold, or overnight.
  • Use a vegetable peeler to run along edge of chocolate bar to form chocolate curls, and shavings.
  • Serve chocolate pudding cheesecake with sweetened whipped cream, and chocolate shavings.

1 cup (240 grams) whole milk
4 ounces (112 grams) bittersweet chocolate chips
8 ounces (226 grams) cream cheese
1/4 cup (50 grams) granulated sugar
6 1/2-ounce can whipped cream topping
10 Oreo cookies, roughly chopped

Steps:

  • Make the crust: In the bowl of a food processor with a blade attachment, pulse the cookies until you get cookie crumbs. Put the crumbs in a medium bowl, add the melted butter and toss with a fork to combine. Press the cookies into a 9-inch pie pan and refrigerate for 30 minutes, or until you're ready to use it, whichever comes second.
  • Make the ganache: Put the chocolate chips in a medium bowl and set aside. Pour the cream into a small saucepan and, over medium-high heat, bring the cream to a boil. Turn off the heat and pour the cream over the chocolate. Cover the bowl with a kitchen towel and let it sit for 3 minutes. Remove the towel and whisk the ganache until it's shiny. Pour half of the ganache into the pie crust and spread evenly all the way up the sides. Pour the rest of the ganache into a piping bag and set aside at room temperature.
  • Make the chocolate whipped cream: In a medium bowl using a rubber spatula, blend the cream cheese, powdered sugar and cocoa powder together until the mixture is light and fluffy. Add the heavy cream and whisk until medium-stiff peaks form. (Make sure it doesn't get too stiff.) Place the whipped cream in the fridge until you're ready to use it. In another medium bowl, whisk together the instant pudding and the milk until it thickens. Using a rubber spatula, fold half of the chocolate whipped cream into the bowl of pudding. Return both bowls of creamy pudding and remaining whipped cream to the fridge.
  • Make the filling: In a microwave-safe bowl with the microwave on high, heat the chocolate chips in 10-second increments, stirring each time, until they're all melted. Add the cream cheese and sugar and mix together.
  • Finish the pie: Take the pie crust from the refrigerator. Using an offset metal spatula, spread the pie filling evenly into the pie crust. Return the pie crust and filling to the fridge for 15 minutes to set. Take the filled pie crust and the pudding-and-whipped-cream mixture from the fridge. Spread the mixture evenly over the pie filling. Refrigerate for another 8 to 10 minutes.
  • Remove the pie from the fridge and spread the remaining chocolate whipped cream over the pie. Spray canned whipped topping all over the pie in a fun design. Pipe the remaining ganache all over the pie (optional). Top with the chopped Oreos, shaved chocolate (shaved from a bar with a vegetable peeler) and chocolate sprinkles. 24 chocolate sandwich cookies
5 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon kosher salt
3 cups whole milk
4 large egg yolks
6 1/2 ounces bittersweet chocolate, chopped finely
2 tablespoons salted butter
2 teaspoons vanilla extract
Whipped cream, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • Pulse the cookies in a food processor until finely chopped. With the processor running, add the butter. Press the crumbs into the bottoms of four 4 1/4-inch disposable aluminum pie pans. Bake until set, about 5 minutes. Let cool.
  • For the filling: Whisk together the sugar, cornstarch and salt in a medium saucepan. Whisk in the milk and egg yolks. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes. The second it starts to bubble and thicken (it should be thick like pudding), remove it from the heat. Add the chocolate, butter and vanilla, then stir until everything is beautifully combined.
