- For the crust: Preheat the oven to 350 degrees F. Line a 24-cup muffin tin with cupcake liners.
- Pulse the graham crackers in a food processor until fine crumbs form. Add the butter and sugar, then pulse until well combined. Distribute the crumbs among the prepared cups, about 2 tablespoons in each, and press to firm them up.
- For the filling: Beat the cream cheese in an electric mixer fitted with the paddle attachment until smooth. Mix in the sugar and eggs. Add the vanilla and 3 tablespoons of the salted caramel and mix again. Distribute the batter among the muffin cups, about 3 tablespoons per cup. Tap the tin on the counter to distribute the batter evenly.
- Bake, watching to make sure they don't burn, until set in the middle, 15 to 17 minutes. Cool on a wire rack, then chill for 2 hours.
- For the ganache: Place the chopped chocolate in a bowl and set aside. Heat the cream in a saucepan until warm and bubbles begin to form around the edges, 1 to 2 minutes. Pour over the chocolate and allow to sit for 2 minutes. Mix until smooth, then set aside to cool slightly.
- Place about 1 tablespoon ganache on top of each cheesecake. Sprinkle the top with the pecan pieces and mini chocolate chips. Drizzle with the remaining 1/4 cup plus 1 tablespoon caramel and freeze, uncovered, for 1 hour. Transfer to an airtight freezer container and freeze for up to 3 months.
- Allow to thaw at room temperature for 30 minutes before serving.

- Microwave caramels and milk in small microwaveable bowl on HIGH 4 min. or until caramels are completely melted, stirring after 2 min. Pour over crust; sprinkle with nuts.

- In a medium bowl, combine graham cracker crumbs, sugar and melted butter. Mix well and press into the bottom and 1 inch up the sides of a 9 inch springform pan. Pour on melted caramel/pecan mixture and chill for 30 minutes.
- To make the Caramel Filling: In a small saucepan, combine caramels and milk. Cook over low heat, stirring, until smooth. Stir in chopped pecans. Preheat oven to 325 degrees F (165 degrees C).
- In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. In a large bowl, beat cream cheese, sugar and vanilla until smooth. Beat in the eggs one at a time. Fold 1/3 of the filling into the melted chocolate, then pour the chocolate mixture back into the filling and mix until no streaks remain. Pour into crust.
- Bake in the preheated oven for 50 minutes, or until center is almost set. Place a pan of water on rack underneath cheesecake as it bakes to help keep it from cracking. Cool in oven with door cracked open. Refrigerate at least 5 hours before serving.

- Heat oven to 350°F (325°F for dark or nonstick pans). Grease two 8- or 9-inch round cake pans, or spray with baking spray with flour.
- Make and bake cake mix as directed on box for two 8-inch or 9-inch rounds. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling rack. Cool completely, about 1 hour.
- In 1-quart saucepan, heat caramels, butter and whipping cream over medium heat 6 to 8 minutes, stirring frequently, until caramels are melted and mixture is smooth. (Or place caramels, butter and whipping cream in 4-cup glass measuring cup; microwave uncovered on High 1 to 3 minutes, stirring once or twice.) Stir pecans into melted caramel. - Place 1 cake layer on plate, round side down. Spread with 1 cup of the pecan filling. Top with second layer, round side up. Spread remaining pecan filling into 4- to 5-inch circle on top of cake. Spread chocolate frosting on rest of top and side of cake. Store loosely covered.

- Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°). Grease bottom and side of 10-inch springform pan with shortening. In medium bowl, stir brownie mix, water, oil and 2 eggs until well blended. Stir in chocolate chips. Spread in pan.

In chilled small bowl, beat 3/4 cup whipping cream and the powdered sugar with electric mixer on high speed until stiff peaks form. Spoon whipped cream in 12 dollops around edge of dessert. Cut into wedges to serve. Store covered in refrigerator.

- Set oven to 350 degrees.
- Prepare a buttered non-stick 10-inch tube pan.
- To make the topping; combine brown sugar, butter and water in a saucepan; boil over medium heat, stirring often, until butter is melted, and mixture is glossy, 3-5 minutes.
- Chop 1/2 cup of the pecans into the caramel mixture.
- Spread evenly into the bottom of a buttered tube pan.
- For the cake; sift together the flour, cocoa, baking powder, coffee granules, salt and baking soda.

A dense chocolate cake with a nutty caramel sauce. The directions say to use a 9" springform pan with a can of dried beans in the center...I figure a bundt pan would have the same result. I have not made this yet, so times are an estimate. Although using all butter for the sauce gives great flavor, the use of some margarine helps the caramel stay softer.

- Preheat the oven to 350ºF.
- Grease a 9-inch springform pan. To prevent leaking use a tight fitting base or set the pan on a sheet of tin foil and firmly press foil up around the sides of the pan.
- Insert and empty 14 oz can filled 3/4 full with dried beans into the center of the springform pan.
- Melt the butter and margaring for the sauce in a medium saucepan over medium heat.

- Beat the cup of butter for the cake with the sugar and vanilla in a large bowl, scraping down the sides occasionally, until light and fluffy.
- Add eggs 1 at a time, beating well after each addition.
- Combine the flour, cocoa, cinnamon, baking powder, baking soda, and salt in a medium bowl.
- Add the flour mixture and the sour cream to the butter mixer, beginning and ending with the flour mixture, beating on low speed until well combined.
- Carefully spoon the batter into the pan, spreading gently over pecan mixture in an even layer.
- Bake for 45-50 min or until tested clean.
- Let stand in pan on a wire rack for 30 minute.
- Run a knife around the inside and outside edges of the cake.
- Remove the can of beans and invert the cake onto a serving platter/plate. Do not remove the pan, let stand inverted for 2 minute.
- Remove pan and replace any pecans that have come off the cake.
- Cool completely, and serve.

Press mixture firmly over bottom and up sides of 9-inch-diameter tart pan with removable bottom. Bake crust until golden and firm, about 7 minutes. Cool completely on rack.
- Stir bittersweet chocolate in top of double boiler set over simmering water until melted and smooth. Pour chocolate into tart crust. Using small metal spatula, spread over bottom of crust. Arrange 1 1/2 cups pecans in single layer over chocolate.
- Mix 1/4 cup water and 1 cup sugar in heavy medium saucepan. Stir over medium heat until sugar dissolves. - Lightly coat the inside of one 9 by 1-1/2 inch round cake pan with melted butter. Line the bottom of the pan with parchment paper; then lightly coat the parchment paper with more melted butter. Set aside.
- Put the cream in a small saucepan and warm it over low heat. Adjust the heat to keep the cream warm while you cook the sugar. Whisk together sugar and water in a large saucepan over medium-low heat until sugar dissolves. Increase heat to medium-high and bring mixture to a boil. Using a basting brush dipped in water, brush the sides of the pan down to dissolve any sugar crystals that form. Boil until the mixture turns a dark golden color, tilting the pan slightly to ensure the sugar cooks evenly, about 10 minutes.
- Remove the cake from the pan and transfer it to a serving plate so that the top is up. Use a long serrated knife to level the top of the cake as necessary. Then cut the cake in half horizontally into two even layers. Carefully slip a round cake board or the removable bottom from a tart pan or springform pan between the layers, lift the top layer off, and set it aside. Pour 3/4 cup of the cooled caramel sauce over the center of the bottom cake layer and spread it evenly. Carefully slide the top layer over the caramel filling, centering it over the bottom layer. Spread another 3/4 cup of caramel sauce over the top layer. Spoon the pecans onto the cake, mounding them toward the center. Drizzle caramel sauce on the pecans. You can drizzle all the remaining sauce on the pecans or you can reserve some of it to drizzle on each slice when you serve the cake.
