This Buttermilk Chocolate Cake is so moist ,fluffy, and perfectly chocolatey!

Number Of Ingredients 21

1 1/2 sticks (170g) unsalted butter, softened ( do not microwave)
2 cups (400g) sugar
3 large eggs, room temperature - putting cold eggs in a bowl of very warm water will warm them quickly
2 cups (242g) all purpose flour
3/4 cups (69g) unsweetened cocoa powder (not Dutch processed cocoa (measure the sift)
1 1/2 teaspoons (7g) baking powder
1 teaspoon (6g) baking soda
1 1/2 cups (355g) buttermilk ( if you do not have buttermilk, see Note below)
2 teaspoons (8 g) vanilla
1/2 cup (104g) vegetable oil (I use canola oil)
1 cup (240g) heavy cream
1/4 (29g) cup powdered sugar
1 (4g) teaspoon vanilla
3 sticks (339g) unsalted butter, softened (do not soften butter in the microwave)
9 cups powdered sugar (icing sugar in UK) (1034g) more if needed. ** For cupcakes, I like to use 8 c. (920g) for a softer frosting
1 1/2 cups unsweetened cocoa (124 grams) (not Dutch processed, measure then sift
1/2 cup milk (121 grams) more if needed to reach the spreading consistency you like
2 teaspoons vanilla (12 grams)
Notes:
1. If you do not have buttermilk this is the substitute. Use a measuring cup for liquid, add 1 Tablespoon plus 2 teaspoons lemon juice or vinegar then fill with milk to the 1 1/2 cup mark, stir. Wait 5 minutes and it is ready to use.
2.This recipe also works well for cupcakes. Bake standard size cupcakes at 350 degrees for 18 to 20 minutes. Remove from muffin tin onto a cooling rack immediately after baking.

Steps:

  • Preheat the oven to 350 degrees, grease and flour three 8x2 inch round pans
  • In a medium bowl, whisk the flour, cocoa, baking powder, and baking soda. Set aside
  • In another bowl, add the buttermilk, oil and vanilla. Set aside
  • In the bowl of your mixer, add the softened butter and mix at medium speed until smooth. Gradually add the sugar and continue to mix on medium speed 3 to 5 minutes until lightened in color and fluffy.
  • Add the eggs one at a time, mixing until the yellow of the yolk disappears.
  • Alternately, add the flour mixture and buttermilk mixture, beginning and ending with the dry ingredients (3 additions of dry and 2 of wet).
  • Do not mix above medium speed or over mix the batter.
  • Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean or with just a few crumbs attached. Let cool 5 to 10 minutes and turn out of pan.
  • Chill the mixing bowl and beaters/ whisk attachment in the freezer for 10 minutes.
  • Pour the whipping cream, powdered sugar and vanilla into the chilled mixing bowl, begin beating on low speed gradually increasing to medium high speed.
  • The cream begins to thicken (approx. 1 1/2 minutes) and soft peaks form....peaks that slightly bend over. Watch closely as this happens quickly. Do not over beat.
  • Use immediately as the whipped cream will gradually begin to deflate over time.
  • Add butter and beat for approximately 1 min. on medium speed. Add vanilla and blend into the butter. Add powdered sugar and cocoa powder.
  • Add most of the milk. Begin beating at low speed so you won't have a cloud of powdered sugar in your kitchen. Beat at medium speed 1 minute. Reduce speed to low and beat an additional two to three minutes, adding remaining milk as needed.

2 1/4 teaspoons baking soda
1/2 teaspoon kosher salt
1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar, packed
3 extra-large eggs, at room temperature
3 teaspoons pure vanilla extract
1 1/2 cups buttermilk, at room temperature
3/4 cup sour cream, at room temperature
3 tablespoons brewed coffee
1 recipe Orange Buttercream, recipe follows

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs and vanilla and mix well. Combine the buttermilk, sour cream, and coffee. On low speed, add the flour mixture and the buttermilk mixture alternately in thirds, beginning with the buttermilk mixture and ending with the flour mixture. Mix the batter only until blended.
  • Pour the batter into the prepared sheet pan, smooth the top with a spatula, and bake in the center of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool to room temperature before frosting.
  • 2 cups sugar
  • 2/3 cup water
  • 6 extra-large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1 1/4 pounds (5 sticks) unsalted butter, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons Triple Sec or other orange liqueur
  • 1 tablespoon orange food coloring
  • Combine the sugar with 2/3 cup water in a medium heavy-bottomed saucepan and, without stirring, bring to a boil. Cover the saucepan and allow the mixture to boil until the sugar dissolves. Uncover and continue boiling until the mixture reaches 240 degrees F on a candy thermometer. Pour the syrup into a heat-proof measuring cup.
  • Place the egg whites and cream of tartar in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the eggs form stiff peaks. With the mixer on high speed, slowly pour the syrup into the egg whites. Continue beating on high speed until the mixture is absolutely at room temperature, about 10 to 15 minutes.
  • With the mixer on medium speed, add the butter, 1 tablespoon at a time, and then add the vanilla and liqueur. (If the mixture becomes runny, the meringue was too warm and the butter melted. Chill slightly and beat again.) Add the food coloring and combine.
  • Yield: 6 cups

1 cup semisweet chocolate chips
¼ cup water
2 ¼ cups cake flour
1 teaspoon baking soda

¾ cup butter, softened
2 teaspoons vanilla extract

3 eggs

1 cup semisweet chocolate chips
¼ cup honey
2 tablespoons water
⅛ teaspoon salt
2 cups heavy whipping cream

Steps:

  • Grease three 9 inch cake pans. Line bottoms with parchment paper. Preheat oven to 375 degrees F (190 degrees C).
  • In a small pan over low heat, combine 1cup chocolate chips and 1/4 cup water. Stir until chocolate chips have melted, and mixture is smooth. Allow to cool to room temperature.
  • Sift together flour, soda and 1/4 teaspoon salt. Set aside.
  • In a large bowl, cream the butter or margarine with the sugar. Add vanilla. Add eggs one at a time, beating well after each addition. Beat in chocolate mixture. Stir flour mixture into creamed mixture alternately with buttermilk. Blend until smooth. Divide batter into three 9 inch pans, and smooth tops.
  • Bake for 25 minutes, or until pick inserted in center comes out clean. Cool cakes in pans for 10 to 15 minutes, then invert on wire racks; turn right side up to cool completely.
  • Place 1 cake layer upside down on cake platter. Spread with 1/2 inch layer chocolate whipped cream. Repeat with another cake layer. Top with remaining cake layer. Frost with remaining cream.
  • To Make Chocolate Whipped Cream Frosting: In small saucepan over low heat stir 1 cup chocolate chips, honey, 2 tablespoons water and 1/8 teaspoon salt until chocolate is melted and mixture is smooth; cool completely. In medium bowl beat cream until it holds its shape. Gradually fold about 3 large tablespoons cream into chocolate mixture, then fold chocolate mixture into remaining whipped cream until blended.

1 cup (2 sticks) plus 1 tablespoon unsalted butter, at room temperature

1/2 cup Dutch-process cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 3/4 cups buttermilk
2 teaspoons pure vanilla extract
2 1/4 cups light brown sugar
3 large eggs
8 ounces semisweet or bittersweet chocolate, finely chopped, and melted (see Note)
For the frosting:
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature
1 cup confectioners' sugar
4 ounces bittersweet chocolate, finely chopped, melted, and cooled to room temperature (see Note)
2 tablespoons soy sauce
1 teaspoon pure vanilla extract

Steps:

  • Make the cake: Preheat the oven to 350°F. Grease a 9-by-13-inch glass or metal cake pan with the 1 tablespoon of room temperature butter.
  • Whisk together the flour, cocoa, baking powder, baking soda, and salt in a large bowl. Combine the buttermilk and vanilla in a medium bowl or a 2-cup liquid measuring cup.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl, if using a handheld mixer), cream the 1 cup of butter and the brown sugar on low speed until creamy and well combined. Increase the speed to medium-high and beat until light and airy, about 2 minutes. Reduce the mixer speed to medium-low and add the eggs one at a time, mixing well between each addition and scraping down the side and bottom of the bowl as needed. Once all 3 eggs are added, beat for 1 minute on medium speed to get the mixture nice and fluffy.
  • Reduce the speed to medium-low and add the flour mixture alternately with the buttermilk mixture in three batches, starting with the flour. Add the melted chocolate and mix on medium speed until well incorporated, stopping the mixer to scrape down the side and bottom of the bowl as needed.
  • Use a rubber or offset spatula to scrape the batter into the prepared pan and even it out as much as possible. Bake until a cake tester inserted into the center of the cake comes out clean and the center of the cake resists light pressure, about 40 minutes. Remove from the oven and set aside to cool completely, at least 2 hours, before frosting.
  • Make the frosting: Put the butter in the bowl of a stand mixer fitted with the whisk attachment (or in a medium bowl, if using a handheld mixer). Beat on medium-high speed until smooth. Turn off the mixer and sift the confectioners' sugar into the bowl and combine on low speed. Add the melted chocolate, soy sauce, and vanilla and beat on low speed until combined. Increase the mixer speed to medium-low and whip until glossy, 15 to 30 seconds.
  • Use an offset spatula or butter knife to spread the frosting on top of the cooled cake. Cut into squares and serve.
  • DO AHEAD: The cake will keep, loosely covered with plastic wrap in the refrigerator, for up to 3 days. Let it sit out at room temperature for 15 to 20 minutes before slicing and serving.

1 1/2 cups sugar

1/2 cup good quality cocoa powder

1 tablespoon instant coffee, dissolved in
1 tablespoon hot water
1 cup sour cream

Steps:

  • Preheat oven to 350°F.
  • Butter a 10-inch springform pan and line the bottom with parchment paper.
  • Cream together the butter and the sugar with an electric mixer until light and fluffy.
  • Add the eggs, one at a time, continue beating until thick and light.
  • Sieve together the cocoa, baking soda, baking powder, cinnamon and flour.
  • With your mixer on low speed add the dry ingredients in 4 portions, alternating with the buttermilk and coffee, beat until all is very well blended.
  • Pour the batter in the springform pan and bake for 50 to 60 minutes, or until a cake tester comes out clean.
  • Run a knife around the edge of the cake and let the cake cool completely whilst in the pan.
  • Make the frosting just before you need it.
  • Mix together the sour cream and the icing sugar, whip the cream until stiff, then mix the two creams together.
  • Release the cake and turn it upside down on a platter.
  • With a serrated knife cut the cake into layers (I use a piece of sewing thread to cut the cake).
  • Spread frosting over one layer, carefully replace the other layer on the top and spread the rest of the frosting over the top and the sides.
  • Leave in the fridge until ready to serve.

Steps:

  • Preheat the oven to 325°F.
  • Grease and flour the insides of two 14-14.5 ounce cans.
  • Place the cans on a baking sheet, and set aside.
  • Whisk the buttermilk, egg yolk, and vanilla together in a small bowl.
  • Gradually pour the melted butter into the buttermilk mixture, whisking constantly.
  • Sift the flour, cocoa powder, baking soda, and salt into a medium-size mixing bowl; add sugar, and then whisk to blend well.
  • Add the buttermilk mixture and whisk just until the dry ingredients are moistened.
  • Divide the batter between the prepared cans.
  • Bake the cakes until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  • Place the cans to a wire rack to cool for 15 minutes.
  • Run a knife around the edge of each can and invert them to release the cakes.
  • Turn the cakes upright and let them cool completely on the rack.
  • Meanwhile, make the frosting: Place chocolate in the top of a double boiler set over simmering water, and heat, stirring occasionally, until melted. (May also do this in the microwave.).
  • Let the chocolate mixture cool for 5 minutes. Then add the sour cream, vanilla, and salt, and whisk to blend well.
  • Let the frosting cool to room temperature, stirring it occasionally.
  • When frosting and cakes have cooled, cut each cake in half horizontally.
  • Spread a layer of frosting about 1/2 inch thick on the cut side of one cake half, then stack the other half on top of it.
  • Frost the top and sides of the cake.
  • Repeat with the remaining cake and frosting.
  • Store the cakes in the refrigerator in an airtight container, bringing them back to room temperature before serving.

1/2 cup (1 stick) unsalted butter
3/4 cup buttermilk
4 tablespoons unsweetened cocoa powder
1 pound confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Lightly grease a 9-by-13-inch cake pan with butter. Combine the flour, sugar and baking soda in the bowl of a stand mixer or mixing bowl. Combine the butter, cocoa and 1 cup water in a medium saucepan and bring to a boil while mixing. Add the cocoa mixture to the flour mixture, along with the buttermilk eggs and vanilla, and beat for 3 minutes. Pour into the prepared cake pan and bake until firm to the touch and a toothpick inserted in the center comes out clean, 30 to 40 minutes. Let cool 10 minutes in the pan before turning out on a rack to cool completely.
  • For the frosting: Make the frosting as soon as the cake is out of the oven. Combine the butter, buttermilk and cocoa in a small saucepan and bring to a boil while mixing. Combine with the confectioners' sugar in the bowl of a stand mixer and beat until smooth. Spread the frosting evenly on the cake.

This is a great old-fashioned chocolate fudge cake--the cake to turn to for "Chocolate Cake Occasions." This cake is moist, with a fine grain and excellent flavor. Since both kids and adults love this cake, it's great for family gatherings or birthday parties. You could even go as far as to making a double chocolate cake by adding 1 cup semi-sweet mini chocolate bits tossed with 1 Tbsp. sifted flour mixture, and add to batter after adding melted chocolate. 2 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon freshly grated nutmeg
4 ounces unsweetened chocolate
1 cup unsalted butter, at room temperature
1 3/4 cups sugar
4 large eggs
1 1/3 cups buttermilk
1 teaspoon vanilla

Steps:

  • Preheat oven to 325* (F).
  • Spread solid shortening on bottom and sides of two 9-inch layer pans, or one 9x13x1 1/2 inch sheet pan.
  • Dust evenly with unsweetened cocoa or flour; tap out excess.
  • Sift together flour, baking soda, salt, and nutmeg.
  • Set aside.
  • Melt chocolate in top pan of double boiler.
  • Remove chocolate from heat after completely melted, and set aside to cool until comfortable to touch.
  • In large mixing bowl, cream butter and sugar together.
  • Add eggs one at a time, beating well after each addition.
  • Add flour mixture, alternating with buttermilk, beginning and ending with flour mixture.
  • Add vanilla and cooled chocolate.
  • Pour mixture into prepared pan (s).
  • Bake in lower third of oven for 40-50 minutes for sheet cake, or 35-45 minutes for layer pans, or until toothpick comes out clean.
  • Leave cake in layer pans for 10 minutes; remove to wire rack and cool completely.
  • Cool sheet cake completely in pan.
  • Split cake layers with serrated knife-- fill and frost the layers with chocolate buttercream icing or flavored whipped cream.

Steps:

  • For cake, combine butter, sugar, chocolate, and boiling water in a large mixing bowl; beat well.
  • Add eggs, one at a time, beating well after each addition.
  • Dissolve soda in buttermilk; set aside.
  • Combine flour and baking powder; add to chocolate mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Mix well after each addition.
  • Stir in the vanilla.
  • Pour batter into 2 greased and floured 9 inch round cake pans.
  • Bake at 325 degrees for 35 minutes or until a toothpick comes out clean.
  • Cool in pans 10 minutes; remove the layers from pans, and let cool completely.
  • For the filling, combine all ingredients in a small saucepan; cook over medium heat until mixture reaches soft ball stage (240 degrees).
  • Remove from heat, and beat until spreading consistency.
  • For the frosting, combine all ingredients, beating until smooth.
  • Spread the filling between layers, spread top and sides of the cooled cake with the sour cream chocolate frosting.

1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups (packed) golden brown sugar
3 large eggs
1 1/2 cups sour cream
3 cups semisweet chocolate chips (about 18 ounces)
1/2 cup almonds, toasted, chopped

Steps:

  • Preheat oven to 350°F. Butter and flour 13x9x2-inch metal baking pan. Whisk first 5 ingredients in medium bowl to blend. Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in flour mixture in 4 additions alternately with 3/4 cup sour cream in 3 additions. Fold in 1 1/2 cups chocolate chips and almonds; spread in prepared pan. Bake cake until tester inserted into center comes out clean, about 45 minutes. Transfer to rack; cool cake. Meanwhile, combine remaining 3/4 cup sour cream and 1 1/2 cups chocolate chips in heavy medium saucepan. Stir over very low heat just until chocolate melts and frosting is smooth (do not boil). Spread frosting over cake in pan. Let stand until frosting sets, at least 1 hour.

Steps:

  • Preheat the oven to 350°F Butter two 8-inch round cake pans. Line the bottoms with parchment paper, butter the paper, and dust the pans with flour, knocking out any excess. In a medium bowl, sift together the flour, cocoa, baking soda and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs and vanilla and mix well. Combine the buttermilk, sour cream, and coffee. On low speed, add the flour mixture and the buttermilk mixture alternately in thirds, beginning with the buttermilk mixture and ending with the flour mixture. Mix the batter only until blended.
  • Divide the batter between the two pans and smooth the tops with a spatula. Bake on the middle rack of the oven for 25-30 minutes or until a toothpick comes out clean. Cool for 10 minutes on a rack, remove from the pans, and allow to finish cooling.
  • To make the frosting, chop the chocolates and melt in a bowl over simmering water until smooth. Allow to cool.
  • Mix the egg whites, sugar, cream of tartar and salt in the bowl of an electric mixer fitted with a whisk. Heat the egg whites in the bowl over simmering water until they are warm to the touch, about 5 minutes. Whisk on high speed for 5 minutes or until the meringue is cool and holds a stiff peak.
  • Add the butter, 1 tablespoons at a time, while beating on medium speed. Scrape down the bowl, add the chocolate, vanilla, and espresso and mix for 1 minute or until the chocolate is completely blended inches If the buttercream seems very soft, allow it to cool and beat it again.
  • To frost the cake, place one cake layer on a serving plate, flat side up. Frost the top of that layer with buttercream. Place the second layer on top, also flat side up and frost the top and sides.
