CHOCOLATE BUNDT CAKE WITH PEPPERMINT GLAZE
I love making this just when the Christmas season starts - it totally gets me in the spirit of the holidays! (This actually tastes better the next day, in my opinion)

Steps:
- Preheat oven to 350 degrees (175 degrees C).
- Grease and flour a Bundt pan- mix the cocoa with the flour so it doesn't leave a white coating on the cake.
- Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla.
- Beat until smooth.
- Stir in chocolate chips by hand.
- Pour batter into prepared pan.
- Bake for 1 hour- but check it after 55 minutes just in case.
- Allow to cool.
- In a medium bowl, mix powdered sugar with peppermint extract (to taste- adjust as necessary), then mix a few drops of hot water.
- Stir stir stir.
- If it's too thick, add another couple drops of water.
- Drizzle over turned out cake.
- Sprinkle with crushed candy canes, if you got`em.
CHOCOLATE CHIP BUNDT CAKE WITH CHOCOLATE GLAZE

- Make sure all the ingredients are at room temperature (except for the water).
- Preheat the oven to 350°F / 180°C (conventional oven). Grease a 12 cup bundt pan, making sure to get all the nooks and crannies. Dust the inside of the pan with cocoa powder. Set aside.
- In a large mixing bowl, place the white sugar, large eggs, sour cream, milk, vanilla, salt and vegetable oil. Whisk until smooth.
- Whisk the flour, cocoa powder and baking soda together. Add the dry ingredients into the wet ingredients. You can sift all the dry ingredients directly into the wet ingredients as well.
- Fold the dry ingredients into the wet ingredients until mixed through.
- Add the hot water or hot coffee and whisk until the water is mixed well into the batter. Do not over mix the batter.
- Immediately pour the batter into the prepared bundt pan. Keep the pan on a baking tray to make it easier to move the pan around.
- Bake the cake in the preheated oven for 50 - 60 minutes, or until a toothpick inserted into the cake comes out clean.
- Remove the cake from the oven and let it rest for 10 - 15 minutes.
- Flip the cake out onto a cooling rack. Let the cake cool to room temperature.
- Once the cake is cooled, cover the cake with plastic wrap / cloth napkin / or the bundt cake pan, until you're ready to pour the glaze.
- Place the cake on the wire rack, and then place the wire rack on a baking tray. When the ganache and cake have cooled, you can pour the ganache carefully over the cake.
- Allow the glaze to set, then move the cake onto a platter.
- Serve the cake just as is, or with whipped cream.
- If you're using chocolate bars or larger chocolate chips, chop the chocolate into smaller pieces and place them in a medium-sized bowl. Cut the butter into smaller pieces and set aside as well.
- Place the heavy cream and salt in a small saucepan. Heat over medium high heat and stir to dissolve the salt.
- Heat until the cream is starting to simmer.
- Remove from the heat and pour the heavy cream over the chocolate. Let it sit for about 30 seconds and whisk to create a smooth ganache.
- While the ganache is still warm, add the butter and whisk until the butter is melted and mixed through the ganache well.
- If the ganache looks "curdled" or split, use a stick blender to blend the ganache until it's smooth and shiny again.
- Let the ganache cool to room temperature (about 72 - 76°F). While the ganache is cooling, periodically whisk it to make sure that the ganache is not lumpy.
- The warmer the ganache, the thinner the glaze will be (and the cooler the ganache, the thicker the glaze). Depending on how thick or thin you want the glaze to be, you may have some glaze leftover.
- You can store any leftover ganache to make hot chocolate or chocolate milkshake later!

PUMPKIN BUNDT CAKE WITH CHOCOLATE GLAZE
This is a recipe I used to make before being diagnosed diabetic. I don't think it can be re-vamped with Splenda and still be as good, so I'll make it for really special times, when I have been really good at watching the carbs! UPDATE: I changed the amounts of spices in this. I usually add more than called for and two reviewers thought it needed more. If it sounds TOO spicy for you, cut the amounts in half.

- Preheat oven to 350°F.
- Coat a 10-12 cup bundt pan (or a 10" tube pan) with non-stick cooking spray.
- Sift flour, baking powder, soda, salt and spices together; set aside.

I was looking for this recipe on here, but could only find the ones with chocolate pudding. So I just made my own up with ingredients I knew that that recipe included. This cake is so moist, but so full of flavor!!! It works for most people, as it is not too rich with a ton of chocolate, but just enough. It is great for last minute company or when you need a dessert quickly. This makes a yellow cake with chocolate chips and then can use optional chocolate glaze.

- Preheat oven to 350 degrees and grease your bundt pan.
- For the cake, mix all ingredients (except chocolate chips) together.

This a a light and moist cake that is not overly sweet due to the addition of coffee. The recipe comes from Food and Wine Magazine (November 2006). I have made it many many times and enjoy eating it as much as making it. This cake travels well. I have also subsituted Splenda for the sugar and it turned out the same. I will try to cut the the oil to 1/2 cup and add 1/4 cup applesauce next time I make it. You can also make double the ganache for extra chocolate decadence!

- Preheat oven to 350. Spray 12 cup bundt pan with vegetable oil spray. In a small saucepan, melt 2 ounces of the chopped chocolate over low heat, stirring constantly. Scrape the chocolate into a medium bowl and let cool slightly. Whisk in oil and sugar until smooth, then whisk in the egg.
- In a small bowl whisk the flour, cocoa powder, baking soda and salt. Add half of the dry ingrediants to the chocolate mixture along with 1/2 cup of the coffee and 1/2 cup of buttermilk and whisk until smooth.
- Pour the batter into the prepared pan and bake for about 45 minutes. Let the cake cool for 10 minutes, then turn it out and let cool completely.
- In a small saucepan, bring the cream to a boil. In a heat proof bowl, combine the remaining 3 ounces of chocolate with the corn syrup and butter. Pour the hot cream over the chocolate and let stand until melted, about 5 minutes. Let the ganache glaze cool until thick but pourable, about 5 minutes.
- Pour the ganache over the cooled cake. Let cake stand until the glaze is set(about 30 minutes).

- Preheat oven to 350 degrees.
- Butter and flour a 10-cup Bundt pan.
- In a saucepan, melt the butter and 4 oz of the chocolate over low heat, stirring with a whisk.
- Add the cocoa and stir until smooth; let cool.
- In a bowl, whisk together the flour, baking soda, and salt.
- In the bowl of a stand mixer, beat the eggs and sugar on medium speed until lightened.
- On low speed, stir in the sour cream, bourbon, 2 tsp of vanilla, and the chocolate mixture.
- Stir in the dry ingredients just until combined.
- Scrape the batter into the prepared pan.
- Bake until a toothpick inserted into the center of the cake comes out clean, 40-45 minutes.
- Let cool in the pan on a wire rack for about 15 minutes.
- Unmold the cake onto the rack and let cool completely.
- Meanwhile, make the glaze: in a saucepan, warm the cream over low heat.
