VANILLA BIRTHDAY CAKE WITH CHOCOLATE FROSTING



Vanilla Birthday Cake with Chocolate Frosting image

Nonstick spray, for spraying pans
2 cups granulated sugar
2 sticks (1 cup) unsalted butter, at room temperature
4 large eggs, at room temperature
1 1/2 cups cake flour
1 1/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
1 cup whole milk, at room temperature
1 teaspoon pure vanilla extract
Chocolate Frosting, recipe follows
8 ounces semisweet chocolate, chopped
2 cups confectioners' sugar
2 sticks (1 cup) unsalted butter, cut into pieces, at room temperature
1 tablespoon whole milk
1 tablespoon pure vanilla extract
1/8 teaspoon kosher salt

Steps:

  • Adjust the racks to the center of the oven and preheat to 350 degrees F. Spray two 9-by-1-1/2-inch round cake pans with nonstick spray.
  • Add the granulated sugar and butter to the bowl of a stand mixer outfitted with the paddle attachment. Beat until creamy, just 2 minutes. Add the eggs one at a time to the mixture and beat until mixed together.
  • Whisk together the cake flour, all-purpose flour, baking powder and salt in a medium bowl. In a measuring cup, mix the milk and vanilla extract together. Turn the mixer back to medium speed and add the flour mixture and milk mixture alternately to create a smooth batter.
  • Evenly divide the cake batter between the prepared pans. Bake until the cakes start pulling away from the edges of the pan and a toothpick inserted into the center of the cakes comes out clean, 30 to 35 minutes. Cool the cakes for 10 minutes in their pans, then turn them out on a wire rack to cool completely before frosting.
  • Frost the cake by tucking parchment underneath the first cake layer and the cake plate. Spread the Chocolate Frosting evenly over the first layer, then place the second cake on top. Frost the top of the cake, then work your way over the sides. Remove the parchment and serve.
  • Add the chopped chocolate to a heatproof bowl and set over a lightly simmering pot of water (make sure the bottom of the pot is not touching the water). Stir until the chocolate is completely smooth and melted. Remove from the heat and cool until room temperature, about 15 minutes.
  • Add the confectioners' sugar to a medium bowl and whisk out the lumps.
  • Beat the butter in a stand mixer outfitted with the paddle attachment until creamy. Add the cooled melted chocolate. Gradually add the confectioners' sugar in 3 batches and beat until combined. Add the milk, vanilla and salt, and beat until the mixture is creamy, well mixed and spreadable.

3/4 cup egg whites (4-5 extra-large eggs), at room temperature
1 1/2 cups granulated sugar
1/4 teaspoon cream of tartar
3/4 teaspoon kosher salt
1 1/2 pounds unsalted butter, at room temperature
3 teaspoons pure vanilla extract
3 teaspoons instant espresso powder, dissolved in 1 1/2 teaspoons water
3 tablespoons dark rum, optional

Steps:

  • Chop the chocolates and place them in a heat-proof bowl set over a pan simmering water. Stir until melted and set aside until cooled to room temperature.
  • Mix the egg whites, sugar, cream of tartar, and salt in the bowl of an electric mixer fitted with a whisk attachment. Place the bowl of egg whites over the pan of simmering water and heat the egg whites until they are warm to the touch, about 5 minutes. Return the bowl to the electric mixer and whisk on high speed for 5 minutes, or until the meringue is cool and holds a stiff peak.
  • Add the butter, 1 tablespoon at a time, while beating on medium speed. Scrape down the bowl, add the melted chocolate, vanilla, espresso, and rum, if using, and mix for 1 minute or until the chocolate is completely blended in. If the buttercream seems very soft, allow it to cool, and beat it again.

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs and vanilla and mix well. Combine the buttermilk, sour cream, and coffee. On low speed, add the flour mixture and the buttermilk mixture alternately in thirds, beginning with the buttermilk mixture and ending with the flour mixture. Mix the batter only until blended.
  • Pour the batter into the prepared sheet pan, smooth the top with a spatula, and bake in the center of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool to room temperature before frosting.
  • 2 cups sugar

  • 6 extra-large egg whites, at room temperature

  • 1 1/4 pounds (5 sticks) unsalted butter, at room temperature

  • Combine the sugar with 2/3 cup water in a medium heavy-bottomed saucepan and, without stirring, bring to a boil. Cover the saucepan and allow the mixture to boil until the sugar dissolves. Uncover and continue boiling until the mixture reaches 240 degrees F on a candy thermometer. Pour the syrup into a heat-proof measuring cup.
  • Place the egg whites and cream of tartar in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the eggs form stiff peaks. With the mixer on high speed, slowly pour the syrup into the egg whites. Continue beating on high speed until the mixture is absolutely at room temperature, about 10 to 15 minutes.
  • With the mixer on medium speed, add the butter, 1 tablespoon at a time, and then add the vanilla and liqueur. (If the mixture becomes runny, the meringue was too warm and the butter melted. Chill slightly and beat again.) Add the food coloring and combine.

1 (4 ounce) package sweet German cooking chocolate, divided in two
1/2 cup butter
1/2 cup sugar
1 teaspoon vanilla
7 egg yolks

  • grease and line bottom of 8x8 inch pan with wax paper.
  • melt half the chocolate and set aside.

  • add egg yolks one at a time, beating well.
  • mix flour and cornstarch together, then stir into beaten mixture.
  • divide batter in half.
  • add melted chocolate to ONE half, stirring well.
  • wash beaters VERY WELL.
  • beat egg white in separate bowl until soft peaks form.
  • gradually add 1/4 cup sugar, beating till stiff peaks form.
  • divide egg whites in half and fold the halves, one at a time (chocolate second), into divided batters with a spatula. Batter may appear curdled at

  • spread scant 1/2 cup of chocolate batter evenly in prepared pan.
  • Place pan approx 5 inches from flame in broiler and cook 1-2 minutes.
  • Spread scant 1/2 cup plain batter on top of cooked chocolate cake, bake under broiler flame 1-2 minutes.
  • repeat steps with remaining batter, trying to keep all additions 5 inches from flame. If this cannot be done simply reduce cook time by a few seconds for each additional layer.
  • When done you should have around 10 layers.
  • cool in pan 10 minutes, loosen side with butter knife, invert onto wire rack, remove wax paper and cool.
  • ICING DIRECTIONS.
  • melt together remaining chocolate and 3 tbsp butter.
  • Stir in powdered sugar until crumbly.
  • pour in enough boiling water to make drizzling consistency (about 1/4 cup).

1/3 cup cornstarch
2 teaspoons baking powder

1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup milk, at room temperature
3 large eggs, at room temperature

1 1/4 pounds milk chocolate, chopped
12 ounces semisweet chocolate, chopped
1 16-ounce container sour cream (2 cups)
1 tablespoon coffee
1 tablespoon pure vanilla extract

Steps:

  • To make the cake:
  • Position a rack in the center of the oven and preheat to 350 degrees F. Brush two 8-inch round cake pans with oil, line the bottoms with circles of parchment paper, lightly brush the paper and pan with oil, and dust with flour.
  • Put the flour, baking powder, and salt into the bowl of a food processor. Add the sugar and orange zest and pulse a few times to combine evenly. Cut the butter into small pieces and add to dry ingredients. Pulse until the mixture looks like coarse sand, with some pea-size bits of butter, about 5 times.
  • Whisk the milk, eggs, and vanilla together in a liquid measuring cup. With the processor running, pour in the wet ingredients and process to make a smooth batter (this takes less than a minute). Divide the batter between the prepared pans and bake until a toothpick inserted in the center comes out clean, about 25 minutes.
  • Cool the cakes on a rack for 15 minutes. Then run a knife around the edges of the pans, turn the cakes out onto a plate, and peel off the paper. Flip the cakes upright and cool completely on the rack, about 45 minutes. (This is important-icing a warm cake is not a happy thing).
  • When ready to ice the cake, make the frosting:
  • Put the chocolates in a medium microwave-safe bowl. Microwave on medium for a minute, stir, and repeat until chocolate melts, about 3 minutes in all. (Or put chocolates in a heatproof bowl set over an inch or so of water at a very slow simmer; set the bowl on the pan; don't let the bowl touch the water. Stir occasionally until smooth.)
  • Let chocolate cool slightly. Stir the sour cream, coffee, and vanilla into the chocolates. Beat with a handheld electric mixer until frosting is silky and fluffy. (Spread frosting soon after making it; it firms up at room temperature.)
  • Set a large flat plate on a large inverted bowl or bottom of a salad spinner (of course, if you have a cake stand, use that). Dab a little frosting in the center of the plate and place a cake layer, top side up, on top. With an offset spatula, scoop about one-third of the frosting onto the cake and spread it evenly to the edge of the cake. Place the other layer on top and press down lightly. Spread another third of the frosting around the sides. Spread the remaining frosting on the top of the cake. Lightly touch the frosting with the back of a spoon to make swirly peaks. Serve immediately or set aside at room temperature for up to 2 hours before serving. If refrigerating the cake, bring to room temperature 30 minutes before serving.

GERMAN CHOCOLATE CAKE ICING / FROSTING

I never liked German Chocolate cake until I met my husband and got this recipe from my mother in law. It is soooo good! It's also horribly unhealthy for you but sometimes it's worth it to indulge! I always have to make it for my hubby's birthday and now my dad's birthday as well! As a note, this recipe is for the icing & we just buy a box of mix for the cake. Please note a few things: 1) Be sure to stir the mix every few seconds on the stove to avoid sticking 2) Be sure the mix comes to a strong, rolling boil to provide a smooth texture by reducing those sugar grains 3) This is a caramel type icing and won't adhere to the sides of the cake well 4) I usually premeasure the milk, coconut, & pecans to help things move along quickly. Steps:

  • Preheat oven to 350.
  • Sift together dry ingredients into a large mixing bowl. Add a little bit more than half of the milk and beat two minutes.
  • Add butter, remaining milk, eggs, vanilla, and melted chocolate. Beat 2 more minutes.
  • Bake in either 2 8" layers or one 9" square pan. Bake about 30-35 minutes for 8" pans or 40-45 minutes for the 9" pan. You can also double this for a 9 x 12" cake.
  • Top with Broiled Frosting.

3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, divided
1 cup margarine, divided
1-1/2 cups granulated sugar
3 eggs
1 Tbsp. vanilla, divided
2-1/2 cups flour, divided
1 tsp. baking soda
1/4 tsp. salt
1-1/2 cups water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 cups powdered sugar

Steps:

  • Heat oven to 350ºF.
  • Microwave 1-1/2 pkg. (6 oz.) chocolate and 3/4 cup margarine in large microwaveable bowl on HIGH 2 min. or until margarine is melted. Stir until chocolate is completely melted and mixture is well blended.
  • Use mixer to beat granulated sugar into chocolate mixture. Add eggs, 1 at a time, mixing well after each. Blend in 2 tsp. vanilla. Add 1/2 cup flour, baking soda and salt; mix well. Add remaining 2 cups flour alternately with water, mixing well after each addition.
  • Pour into 2 greased and floured 9-inch round pans.
  • Bake 33 to 35 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove from pans to wire racks; cool completely.
  • Melt remaining chocolate. Beat cream cheese and remaining margarine in large bowl with mixer until blended. Add melted chocolate and remaining vanilla; mix well. Gradually beat in powdered sugar until light and fluffy.
  • Stack cake layers on plate, filling and frosting with chocolate frosting.
