Time 2h

Yield 12

Number Of Ingredients 16

Baking spray
2 sticks (8 ounces) unsalted butter
1/2 cup natural cocoa powder
1 tablespoon instant espresso powder
1 cup water
2 cups (about 10 ounces) all-purpose flour
2 cups (about 15 ounces) packed dark brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups coarsely mashed ripe bananas (about 3 medium bananas)
1/2 cup sour cream, at room temperature
3 large eggs, at room temperature, lightly beaten
2 teaspoons pure vanilla extract
1/2 cup walnuts, chopped
1 tablespoon confectioners' sugar

Steps:

  • Adjust oven rack to middle position and preheat oven to 350°F. Coat Bundt pan with baking spray. Combine butter, cocoa powder, espresso powder, and water in medium saucepan and bring to boil over medium-high heat, stirring, until mixture is homogenous, about 2 minutes.
  • Whisk flour, brown sugar, baking powder, baking soda, and salt together in large bowl, then, mix in cocoa mixture. Whisk in bananas and sour cream, then eggs and vanilla. Stir in walnuts.
  • Scrape batter into prepared pan and bake until tester inserted in center of cake comes out clean, about 45 minutes.
  • Transfer cake to cooling rack and cool 10 minutes, then invert directly onto rack and cool to room temperature, about 1 hour. Sprinkle with confectioners' sugar and serve.

  • Preheat the oven to 180C/160Fan/350F. Grease and line a deep loaf tin - the one I use measures 5x9 inches, and is 4 inches deep. I would NOT recommend using one any shallower - this is quite a deep cake, and using a shallower loaf tin would result in overflow!
  • In another large bowl, cream together the soft butter and sugar until light and fluffy. Gradually add the beaten eggs, beating well after each addition. Beat in the vanilla.

  • For the Cake: Preheat oven to 350 degrees. Grease a 9x13 baking dish. Cream together butter and sugars until smooth. Add eggs, one at a time, beating after each. Blend in mashed bananas, vanilla and beat until creamy. Whisk together in a separate bowl the flour, cocoa powder, baking soda, cinnamon and salt. Slowly incorporate mixture into the wet ingredients. Combine well and pour into prepared baking dish. Bake for 30 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • For the Frosting: Melt the chocolate with butter on low heat until smooth. Remove from heat and pour into mixer. Blend in the sour cream, vanilla and salt. Gradually add the sugar until it is your desired spreading consistency. Whip until smooth. NOTE: This recipe makes a very generous amount of frosting. I like to have a thick layer on my cakes. If you don't want a thick frosting layer, simply cut the recipe in half.
