GARLIC AND CHEESE POPOVERS

- Butter: In a small bowl, mix together the butter, anchovy paste, chives, lemon juice, and lemon zest until smooth. Season with salt and pepper (if using), to taste.
- Popovers: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count muffin or popover pan with vegetable oil cooking spray. Set aside.
- In a blender, add the eggs and garlic. Blend on medium speed until frothy, about 15 seconds. Add the milk and the cheeses and blend until smooth. Add the flour, salt, pepper and parsley. Blend on medium speed until incorporated. Pour the batter into the muffin cups, filling each cup to within 1/4-inch of the top. Bake, without opening the oven door, until puffed and golden, about 30 to 35 minutes. Remove the popovers from the oven and serve with the anchovy butter.

Steps:
- If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
- After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
- Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
- Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
- Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
- Whisk chives into batter. Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
- Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.
POPOVERS
There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they're in the oven!

- Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

I love the look, taste and presentation of a well done pop over and this savory version has it all. Popovers do not hold or store well, so plan on enjoying them when they are fresh from the oven. If they have cooled, warm them briefly in a 350 oven for 5 to 10 minutes

- Lightly coat popover pan with butter or oil.
- Place empty pan in oven while it's heating.
- In medium bowl, whisk together milk, eggs butter and flour until well blended.
- Add salt, red pepper, and rosemary.
- Remove pan from oven and close oven door.
- Divide batter among the hot prepared cups and tow with cheese.
- Return pan to oven and bake for 20 minutes at 450.
- Then reduce to 350 for 15 to 18 minutes until popovers are a deep golden brown.

- Generously grease six 2/3-cup popover cups or nine 1/2-cup muffin cups.
- In a large bowl with an electric mixer combine milk, flour, oil, and salt and beat mixture on high speed 1 minute. Add eggs 1 at a time, beating 20 seconds after each addition, and beat in chives and pepper.
- Divide batter among cups and put in middle of a cold oven. Set oven at 425°F. and bake popovers 35 to 40 minutes, or until puffed and golden brown.
