CHIPPED BEEF CHEESE BALL
Chipped beef cheese ball is always a favorite appetizer at the holiday parties. This recipe is great for a crowd or can be divided into smaller portions for individual cheese balls.

Steps:
- In a medium bowl, cream together the softened cream cheese, Worcestershire sauce and garlic powder.
- Set aside 1/4 cup of minced dried beef.
- Fold in the remaining minced dried beef, finely minced red onion, finely chopped green bell pepper, shredded cheddar cheese, and 1/4 cup of the chopped pecans.
- To form the cheese ball, lay out a large piece of plastic wrap.
- Scoop the cheese ball mixture onto the plastic wrap and use the plastic wrap to gather the cheese ball into a round ball.
- Chill in the refrigerator for a minimum of 1 hour before coating the cheeseball with the remaining pecans and dried beef.
- To coat the cheeseball, combine 1/4 of the minced dried beef with the remaining pecans.
- Hold the cheeseball in one hand and press the pecan, dried beef mixture into the outside of the cheese ball.
- Serve with crackers of your choice.

QUICK CHIPPED BEEF CHEESE BALL
I got this recipe from a friend who used to work at the deli of our local grocery. When they were bought out by a larger chain their cheese ball recipe changed. - Add in half of the dried beef.
- Using a hand mixer, blend the ingredients together well.

I came across a recipe for "beer dip" a few years ago that I tweaked to turn into this wonderful cheese ball. It has since become my standard cheese ball, requested at family functions. It's rolled in cheddar cheese, because that's my family's preference-- I'm sure it could be rolled in chipped beef or nuts if you prefer. Cooking time includes time to chill and form the cheese ball.

- Reserve one cup of cheese.
- In a medium bowl, combine remaining ingredients (I use a hand mixer to make sure it's combined well).
- Push mixture together in the center of the bowl, making a ball shape, cover bowl, and refrigerate 2 hours or longer.
- Place a large strip of plastic wrap on the counter top.
- Sprinkle remaining cup of cheese over the center of the plastic wrap.
- Place cream cheese mixture in the center of the shredded cheese, and use plastic wrap to mold into a ball.

- (I often use more than one cup of cheese to completely cover the cheese ball).

BEEF AND GREEN ONION CHEESE BALL
My DH and I love to host parties. If I try to have a party without this cheeseball everyone asks where it is! It's so easy to make and has so few ingredients that there's no reason not to make it. In fact, I usually make two. My family loves the chopped pecans it is rolled in so they would eat all around the outside and save the middle for last. I finally started adding extra pecans into the cheese mixture to make everyone happy. This goes well with any cracker, but we find we prefer wheat crackers, especially Triscuits with it. (Cook time is actually chill time)

- Use your food processor to finely mince the dried beef.
- Use your food processor to finely mince the green onions (white bulb and green stalks together).
