1 onion , chopped
1 garlic clove , sliced
2 tbsp sunflower oil
1-2 tbsp chipotle paste (see tip, below)
400g can chopped tomatoes
1 tbsp cider vinegar
8 skinless chicken thigh fillets
small bunch coriander , chopped
soured cream and rice, to serve

Steps:

  • Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
  • Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.

1 (7 ounce) can chipotle peppers in adobo sauce
2 tablespoons sour cream
4 skinless, boneless chicken breasts
1 cup sour cream
10 ounces baby spinach, rinsed
½ cup chicken broth
salt to taste

Steps:

  • Combine chopped chile peppers with 2 tablespoons sour cream. Mix together and spread mixture over chicken breasts. Sprinkle lightly with salt to taste, cover and marinate in refrigerator for at least 2 hours.
  • Place marinated chicken in an ungreased 9x13 inch baking dish and broil for about 5 minutes (rack should be about 6 inches from the top.) Pour 1 cup sour cream around edges of chicken and turn over chicken breasts. Broil for an additional 5 minutes. Sour cream should be lightly brown on the edges. Move breasts into a separate dish and cover to keep warm. Set aside.
  • Pour leftover broiled sour cream into a medium saucepan over high heat. Add spinach, broth and salt to taste. Boil for about 1 minute until all melted and mixed together. Pour mixture over chicken breasts and serve.

2 boneless skinless chicken breast (cut into 1" chunks)
1 pound penne pasta
2 tablespoons lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
2 tablespoons butter
2 tablespoons olive oil
1/4 cup honey
2 tablespoons chipotle pepper sauce from canned adobo peppers
1 yellow bell pepper (chopped)
1 red bell pepper (chopped)
1/2 yellow onion (chopped)
3 cloves garlic (minced)
2 cups heavy cream
1 cup frozen peas
1 pound fresh asparagus (the thinner the better)
6 ounces shredded parmesan cheese
cilantro and tortilla chip strips for garnish (optional)

Steps:

  • Set your water to boil for your pasta.
  • Add the asparagus to the pasta water and boil for 2-3 minutes or until tender crisp.
  • Shock it with cold water through a colander.
  • Add the pasta to a minute shy of the directions and drain into the same bowl as the asparagus but don't rinse.
  • In a bowl with your chicken add the lemon juice, salt and pepper and let sit as you cook the rest of the dish.
  • In a large skillet add the butter and melt over medium heat.
  • Add the bell peppers and onions and cook until just translucent.
  • Add in the garlic and cook an extra minute.
  • Remove the vegetables and add in the olive oil.
  • Add the chicken to the pan and turn the heat up to medum-high.
  • Brown the chicken on both sides.
  • Add in the honey and stir, cooking an additional 5 seconds.
  • Add the bell pepper mixture back to the pan
  • Stir well, then add in the adobo sauce, heavy cream and Parmesan cheese.
  • Cook for 3-4 minutes then add in the pasta, asparagus and frozen green peas.
  • Stir to coat everything and serve with any garnishes you'd like (Cheesecake Factory uses tortilla strip chips and cilantro).

1/2 pound sliced fresh mushrooms
1 medium sweet red pepper, chopped

Steps:

  • Cook sausage in a large skillet over medium heat until no longer pink; drain. Remove and keep warm., Saute mushrooms and red pepper in oil in the same pan until tender. Stir in the brown sugar, chipotle pepper, chili powder, salt and marjoram; cook 1 minute longer., Add cream, stirring to loosen browned bits from pan. Bring to a boil; cook and stir for 2-3 minutes or until slightly thickened. Reduce heat., Add 1 cup cheese; cook and stir until melted. Stir in sausage and peas; heat through. Serve with spaghetti. Sprinkle with remaining cheese.

Today's recipe is copycat of Cheesecake Factory's Spicy Chicken Chipotle Cream Sauce Pasta. I simply love their Chipotle Pasta... The hint of spice, creamy sauce, crunchy veggies, and succulent chicken.... oh, and crispy tortilla chips!!! yumm! There is nothing in this dish which I don't like. You know the best part? You can skip chicken and it still is flavorful Italian vegetarian dinner or lunch. With just 15 minutes of cooking time, Chipotle Sauce can be blended in advance and used multiple times for quick weekday dinner! Sounds even better! Isn't it? And it costs just fraction of what you will pay for dinner of four!Original recipe calls for Honey Glazed Chicken. I shared a healthier version of Honey Glazed Chicken a few days ago. If you want to try that with Chipotle Pasta, follow the recipe link in notes.I'm sure you know by now that I LOVE pasta! In India, few years back, there were not many restaurants offering pasta in menu. So obviously I have not grown up on it.Close to my office in India, there was a Pasta House by name 'Noodle Company'. Once my colleagues took me for lunch there and I ordered Fettuccine Alfredo. Oh boy, did I enjoy it? loved it.. adored it... dreamed about it for days! Perfect sign of a foodie! Isn't it? Specially the copycat version I made at home is utterly delicious! Lacking words to describe the flavor! You can use simply use rotisserie chicken, or sauteed mushrooms (vegetarian option) instead. (go for glazed version)My version of Chipotle Pasta differs slightly from cheesecake factory's original. Here is what I did differently:1. I have used broccolini instead of asparagus and zucchini instead of red bell peppers. (feel free to bring your own veggies.)2. Used no-oil healthy Baked Honey-Lemon chicken instead of spiced honey-glazed chicken. Get the recipe. here.3. Cheesecake Factory uses chipotle chili powder and no citrus in the sauce. I, however, have used Chipotle Adobo for pronounced chipotle flavor and lime juice to balance the richness of creamy sauce. You can skip both of these. Yet, I recommend trying it once! 2 Chipotle in Adobo, 2 whole peppers and plus 1 tbsp sauce
1/4 tsp Kosher Salt
2 tbsp Olive Oil
1 tbsp Tomato Paste
Black Pepper, to taste
2 tbsp Lime, juice, half of one juicy lime
3 Garlic, cloves
1 lbs Pasta, Penne or Fusilli
1 lbs Chicken, Rotisserie or Honey Glazed Chicken, check recipe in link
1 Zucchini, sliced into half moons
1/2 Cup Green Peas, frozen
1 Head Broccolini, broken into florets, or use broccoli
1/4 Cup Parmesan Cheese, or more per liking
1/3 Cup Heavy Cream, mixed with 1/4 cup pasta water
2 Tortillas, corn, sliced into strips
Canola Oil, for frying

Steps:

  • Combine all Chipotle Sauce ingredients in blender, puree to a smooth paste, transfer to a bowl, and refrigerate if not using immediately. (yields about 1/2 cup sauce)
  • Bring a large pot of water to rolling boil. Season with salt. Add half-moon sliced zucchini, and broccolini. Boil for 1 minute or until just crisp tender. Remove to a plate. In same boiling water, add pasta and cook until al-dente or follow the package directions. Once cooked, drain the pasta (reserve pasta liquid) and set aside both.
  • If serving tortillas chips. Heat oil for frying in a shallow frying pan. (you don't need a lot of oil. Just fill a small pan 1/2 inch). Slice corn tortilla into thin strips. When oil is hot, add strips and fry until light golden. Remove on a plate lined with paper towel. Season with salt. Set aside.
  • Heat a pan on medium heat. Add chipotle pasta sauce and let it sizzle for 15 seconds. Now add cream and 1/4 cup pasta water and let it cook for 30 sec more or until warms through.
  • Mix well and switch off the heat.
  • Add in pasta, boiled veggies, frozen peas, and toss to combine.
  • Transfer to serving plates. Top with sliced chicken and tortilla strips. Garnish with grated parmesan and chopped parsley. Serve and enjoy!

An easy taco pasta skillet recipe using chipotle seasoning mix for an extra kick of flavor.

2 cups vegetable broth
1 cup water
16 ounces rotini pasta*
2 cups cooked ground beef
15 ounce can of diced tomatoes with juice
15 ounce can of corn (drained)
1 red or green bell pepper (diced)
1 jalapeno pepper (deseeded and diced (optional))
3 green onion (thinly sliced)
1 stalk of celery (thinly sliced)
1 tablespoon chipotle seasoning or taco seasoning
1 cup shredded Monterey Jack cheese

Steps:

  • Add 2 cups of broth, the water, and pasta to a skillet or other oven-safe pan. Cook over a high flame until it reaches a boil. Lower the flame, cover with a lid, and simmer for 8 minutes or until most of the liquid has been absorbed and the pasta is al dente.
  • Preheat the broiler.
  • Add the cooked ground beef, diced tomatoes with juice, corn, diced peppers, 2 of the green onions, celery, and chipotle seasoning.
  • Stir until the ingredients are thoroughly combined.
  • Cook over a medium flame for 3 -4 minutes or until the meat and vegetables are heated through.
  • Top with shredded Monterey Jack cheese and the remaining sliced green onion.
  • Place the pan 4 - 6 inches below the broiler. Broil for 2 - 3 minutes or until the cheese is melted and begins to brown.

Mildly spicy angel hair pasta tossed with vegetables in a very light cream sauce creates this Creamy Chipotle Pasta.

8 ounces angel hair pasta ((reserve 1/4 cup pasta water))
1-2 teaspoons olive oil
1 medium yellow onion (sliced into thin strips)
1 large garlic clove (minced)
1 red bell pepper (sliced into 1" matchsticks)
6-8 ounces button or baby bella mushrooms (quartered)
Optional: 1 cup chopped kale leaves or baby spinach
1 teaspoon kosher salt (divided)
1/2 teaspoon freshly ground black pepper (divided)
1/4 cup heavy cream
1 chipotle pepper in adobo sauce (finely minced)
1/2 teaspoon dried oregano
1/4 cup pasta cooking water (reserved for use as needed)

Steps:

  • Place a pot of water on the stove and bring it to a boil. Add about a tablespoon of salt to the water and then cook the pasta until it is tender. Scoop out a bit of the cooking water and set it aside prior to draining the pasta.
  • While the pasta is cooking, heat the oil in a large skillet over medium-high heat. Add the onions and saute for about 4-5 minutes, until they are lightly browned. Add the garlic and saute until fragrant, about 30 seconds.
  • Add the bell peppers and mushrooms and stir to combine. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon of pepper. Saute for 2-3 minutes until they are hot and slightly tender, but still a bit crisp.
  • While the vegetables are finishing, whisk together the cream, the chipotle pepper, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the oregano. Add the cream mixture to the hot skillet and stir to coat the vegetables.
  • Let it cook for about a minute and then add the pasta to the skillet with all of the vegetables. Toss to combine and then continue tossing and stirring the skillet while allowing the sauce to finish thickening for about a minute until it is coating the pasta and vegetables.
  • Add a splash or two of the pasta water to the skillet, if the pasta seems dry. (If you forgot to reserve the pasta water, use a splash of cream.) Serve immediately. Enjoy!

pot of boiling water
2 cups asparagus (1-inch slices)
1 pound whole wheat penne pasta
3 cups whole milk
3 chipotle peppers
1/2 tsp salt
1 tbsp oil
4 cloves garlic (chopped)
1 medium onion (chopped)
1/2 red bell pepper (chopped)
1/2 yellow bell pepper (chopped)
2 cups asparagus (steamed)
2 tbsp desi atta (or all-purpose flour)
2 tbsp unsalted butter
add chipotle sauce
1/2 tbsp pure honey
2 tsp chipotle powder
1 pound pasta (cooked)
2 cups asparagus (steamed)
1/2 cup frozen peas (run underwater)
1/2 - 3/4 cup reserved pasta water
1/2 cup parmesan cheese
few cilantro/parsley (chopped)
tortilla strips

Steps:

  • Boil a pot of water. You will be using this to steam the asparagus first and then cook the pasta.
  • In the meantime, chop all your veggies - garlic, onions, red & yellow bell peppers. Cut asparagus into 1-inch pieces.
  • Once water boils, add asparagus. Steam for 3 minutes.
  • Add asparagus to ice-cold water. This will stop the cooking process.
  • Add 3 chipotle peppers and salt to milk.
  • Blend. This is what you should have. Set aside.
  • Heat up a dutch castiron, once hot, add oil followed by chopped garlic. Cook for a minute.
  • Add onions and bell peppers. Season with salt. Saute for 6 minutes until softened and golden.
  • In the meantime, add whole wheat penne to the boiling hot water from earlier. Follow the instructions on the package and cook the pasta.
  • Once onions and bell peppers soften, add 2 tbsp of butter.
  • Once melted, add 2 tbsp Desi atta (or all-purpose flour) and cook for a minute. This will help thicken up the sauce.
  • Very slowly add the chipotle sauce a little at a time to avoid curdling.
  • Using a wooden spoon, mix the veggies with the sauce. Continue doing this until all the sauce has been added. Cook the sauce for 3 minutes until hot.
  • .
  • Add honey and dry chipotle powder.
  • Add all the penne. Mix well. Make sure you save the reserved pasta water for later.
  • Now add frozen peas (rinsed under warm water) and asparagus. Mix.
  • Add grated parmesan cheese and reserved pasta water at this time.
  • Mix well. Check for salt.
  • Add more freshly grated parmesan cheese. Garnish with fresh cilantro/parsley and tortilla strips.

2 boneless skinless chicken breasts, cubed into bite size pieces
4 sun-dried tomatoes
1/2 cup hot water
2 1/2 cups elbow macaroni (this is the uncooked measure)
2 tablespoons olive oil
3 garlic cloves, chopped
1/2 cup celery, sliced
1 (4 ounce) can chipotle peppers, drained and chopped SAVE the juice
2/3 cup onion, chopped
1 (12 ounce) can corn, drained
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon cumin
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/3 cup parmesan cheese
3/4 cup nacho chip, crushed
1/2 cup cheese

Steps:

  • In the 1/2 cup hot water soak the sundried tomatoes until soft, discard water and chop the tomatoes. Chop all other ingredients and shred the cheese.
  • Cook elbow pasta , drain and set aside.While pasta is cooking heat 1 tablespoon of olive oil in a LARGE skillet and brown chicken until no longer pink and it has a golden colour, remove from pan add extra oil if needed and saute the celery, garlic and onion.
  • Once these are softened remove from pan . Melt butter in same pan , scraping up any brown bits, wisk in flour and cumin and cook until it bubbles and gets a bit foamy , slowly wisk in the milk, cook until it thickens add the cheeses EXCEPT the 1/2 cup listed at the bottom of the recipe. Stir until melted over a low heat add the sundried tomatoes and chilpotles cook for a couple minutes for the flavours to meld. Add the liquid from the canned chilpotles a couple teaspoons at a time to suit your taste. Add pasta, chicken, corn and cooked veggies. Mix well .Pour into a large casserole . I used a 2 quart oval casserole.
  • Top with the crushed nachos and cheese.
  • Bake at 350 for 25 minutes or until bubbly and cheese is melted.

Chipotle Paste recipe. It gives a wonderful, smoky flavour to fish and meat, is perfect for grilling and barbecuing and adds depth to stews and chilli con carne.

20 chipotle chillies
2 anchos (optional)
2 chipotles in adobo plus a little of the adobo (optional)
2-3 chilli de arbol (if you want it a little hotter, optional)
2 cloves garlic
juice of 1 lime
1 Tbsp sugar
½ tsp salt
pinch of ground cumin
water as needed
1 Tbsp EV olive oil
½ tsp balsamic vinegar

Steps:

  • Dry roast the chillies for a couple of minutes on medium heat, being careful not to let them burn. They might puff up slightly. Cut the stalk end off and shake the seeds out, if you like.
  • When they are cool enough to handle, cut the chillies with scissors and soak in hot water for about 20 minutes.
  • Drain the chillies and give them a quick rinse, discarding the seeds if you like.
  • Place everything in a chopper and blend to a fine paste, with just enough water to make into a paste.
  • You can stop here, this is a delicious chipotle paste, as it is. If so, store in a small sterilised jar in the fridge and it will last a couple of weeks.Or you can go on and do that final step, cooking it for 5 minutes, and adding a little balsamic vinegar. This deepens the flavour.

1 canned chipotle pepper in adobo sauce
2 teaspoons adobo sauce (from the can of chipotles)
1 teaspoon freshly squeezed lime juice
Kosher salt

Steps:

  • Place the mayonnaise, chipotle pepper, adobo sauce, lime juice, and 1 1/4 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth. Refrigerate for up to a week.

1 ounce olive oil
1 hot link, cut in 6 bias slices
5 (21/25 shrimp), deveined, shelled and butterflied
4 ounces heavy cream
3 ounces Chipotle Sauce, recipe follows
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
9 ounces cooked penne pasta
2 ounces Parmesan, grated
1 tablespoon diced tomato
1 tablespoon diced scallion
1 cup BBQ sauce
1/2 cup canola oil
1/4 cup lemon juice
1/2 ounce Dijon mustard
2 ounces chipotle paste
1/2-ounce red chili flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper

Steps:

  • In saute pan over high heat, add olive oil and hot links. Sear links until browned. Add the shrimp and cook until pink. Lower heat to medium. Then add cream, chipotle sauce, salt and pepper. Add cooked pasta and the cheese. Toss to combine.
  • Serve in pasta bowl and garnish with diced tomato, scallions, and more grated Parmesan.
  • Combine all ingredients in blender, puree, cover and refrigerate.

Once it has cooled slightly, add the onion, 3/4 teaspoon of salt, 1/4 teaspoon of pepper, adobo sauce, and chipotle chile if using, and puree until smooth.
  • Sprinkle chicken with oregano, 1/4 teaspoon of salt, and pepper to taste. Heat 4 tablespoons oil in a large, deep and thick casserole or skillet set over medium-high heat. Once hot, sear the chicken thighs about 2 to 3 minutes per side until browned. Remove from skillet, reserve in a bowl.
  • Pour the remaining 2 tablespoons of oil into the casserole, set over medium-high heat. Once hot, add the pasta. Fry the pasta for a few minutes, stirring constantly, until browned, but not burnt, and it smells toasty. Pour the tomato puree over the pasta. It will jump all over the casserole, so you may want to use the lid as a shield over the casserole. Stir, cover partially and let the sauce cook for about 5 minutes, stirring occasionally, until it darkens and cooks into a thick puree consistency.
  • Nest the browned chicken thighs in the pasta, pour the chicken broth on top, stir gently, cover tightly, reduce heat to low and cook for 25 minutes.
