- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Beat the eggs in a large mixing bowl until smooth, then whisk in 1/3 cup barbeque sauce, garlic, chipotle chiles, adobo sauce, kosher salt, black pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. Mix in the onion, oatmeal, and ground beef with your hands until evenly blended. Pack the mixture into the prepared pan. Brush the top of the meatloaf with 2 more tablespoons of barbeque sauce.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

CHIPOTLE MEATLOAF
From Cooking Light- can use all ground turkey instead of turkey and breast-even sub ground beef or pork for that matter. I always soften my onions before adding them to meatloaf or meatballs. When I make this, I omit the basil, and up the chipotle, cumin and pepper. I also add black pepper and dried chipotle pepper to the sauce.

- Preheat oven to 350°F.
- To prepare meat loaf, chop chile. Combine chile, adobo, onion, and next 14 ingredients in large bowl, stirring to combine. Place turkey mixture in a 9x5 inch pan coated with cooking spray. Bake, uncovered, at 350°F for 30 minutes.
- To prepare topping, combine 1/4 c tomato sauce, 1 T ketchup, and 1/2 t hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer reaches 160°F
- Let stand 10 minutes before slicing.

MEATLOAF SANDWICH WITH CHIPOTLE KETCHUP

- Preheat the oven to 350 degrees F.
- For the meatloaf: In a large mixing bowl, combine the ground beef, eggs, marinara, parsley, salt, pepper and breadcrumbs. Mix thoroughly and put on a baking dish. Shape the meat into a loaf and cover the baking dish. Bake in the preheated oven for 60 to 90 minutes. Uncover the last 15 minutes of bake time. Remove the meat from the oven and let it sit for 15 minutes before slicing. Slice and keep warm.
- For the chipotle ketchup: Puree the tomatoes until smooth in a blender. Cook the onions in a heavy pan, over medium heat until softened. Add the pureed tomatoes to the onions, then add all the remaining ingredients except the lime juice. Simmer uncovered, stirring frequently, until thick, about 1 hour.
- Remove from heat and let the mixture cool down a little before adding it to a blender. Add the lime juice and puree again.
- Put 1 piece of sliced meatloaf on half of the wheat bread slices, add a slice of pepper jack cheese and top with chipotle ketchup. Cover with remaining bread slices and serve.
SPICY MEATLOAF WITH CHIPOTLE SAUCE

- Combine chipotles, tomatoes, garlic and water in medium saucepan. Season with salt and pepper. Bring to boil. Reduce heat and simmer until reduced by 1/3, about 20 minutes. Cool. Transfer to processor. Puree until smooth. Strain.
- Heat oil in heavy large skillet over medium high heat. Add onion and celery and saute until tender, about 10 minutes. Add cumin and nutmeg and stir 1 minute. Remove from heat. Transfer to large bowl. Cool.
- Preheat oven to 375 degrees F. Add beef, pork, bread crumbs and salt to onion mixture. Add 1/2 cup chipotle sauce. Mix until well blended. Add eggs and mix well. Press mixture into 9x5-inch loaf pan. Brush top with some of remaining chipotle sauce. Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour. Transfer to rack. Cool slightly. Drain off any oil. Turn meatloaf out onto platter. Serve with remaining salsa.
CHIPOTLE-GLAZED MEATLOAF WITH SWEET POTATOES
Instead of the usual ground beef or red meat blend, this meatloaf recipe is made with ground turkey. It gets plenty of flavor from minced chipotle chiles, Worcestershire sauce, and adobo sauce. Serve alongside sweet potatoes for a complete and healthy meal.

- Preheat oven to 375 degrees. Combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a bowl. Transfer mixture to a 5-by-9-inch nonstick loaf pan. Stir together chiles and ketchup; brush onto top of loaf.
- Prick potatoes with a fork. Set loaf pan on a rimmed baking sheet; surround with potatoes. Bake until a thermometer inserted in center of loaf reads 160 degrees, 1 hour, 15 minutes. Peel potatoes; add oil, season with salt and pepper, and mash. Reserve half of loaf for next day; serve remainder with potatoes, watercress, and limes.
CHIPOTLE ( TURKEY ) MEATLOAF
From Cooking Light December 2005. It calls for 2 pounds of ground turkey. I made this for my husband using 1/2 turkey and 1/2 lean beef since he doesn't like turkey loaves - it gave it the flavor of beef while still lightening it up. He loved it.

- Line a rimmed baking sheet with foil. Spray a wire cooling rack with cooking spray and set on top of the baking sheet. Ingredients. As Needed cooking spray.
- In a large frying pan, sauté the onion, celery, bell pepper, green onion, garlic and jalapeños in the oil until the vegetables soften, about 5 minutes.
- Combine BBQ sauce, beef broth or milk, Traeger Beef Rub, Worcestershire sauce, chipotle peppers, mustard, chipotle chile powder and pepper. Stir until smooth.
- In a large mixing bowl, combine ground beef, ground pork and spicy sausage. Add the egg, potato chip crumbs and the cooled vegetable mixture. Mix lightly, but thoroughly with your hands until well combined.
- Form a rectangular loaf about 8 to 12 inches long and 1-1/2 to 2 inches high. Lay it on top of the cooling rack.
- When ready to cook, set the Traeger temperature to 165°F and preheat with the lid closed for 15 minutes. Grill: 165 ˚F.
- Put the pan with the meatloaf on the grill grate and smoke for 1 hour. Increase the Traeger temperature to 325°F and bake the meatloaf for 1 hour more.
- For the Glaze: Combine ketchup, brown sugar, adobo sauce, white vinegar and mustard in a small saucepan. Ingredients. 1/2 Cup ketchup. 1 Tablespoon brown sugar.
