About 400 gram leaf lettuce, split from the root, then cut into sections
3 cloves garlic, chopped
2 tablespoon oil
1/8 teaspoon salt

Steps:

  • Add oil to a wok, heat over high heat
  • Add garlic chopped, stir-frying for 2 seconds, then add leaf lettuce, stir-frying until leaves are wilted, add salt, strring evenly and quickly, turn off the heat.
  • Serve with rice,

My daughter found this on ABCNEWS.com and has made it several times now. Sometimes we are missing an ingredient the recipe calls for so we just add something different. We use a 4 ounce can of sliced mushrooms instead of the shitake. We also use frozen broccoli and snow peas to speed this recipe up.

1 tablespoon canola oil
1 1/2 cups broccoli florets
1 tablespoon water
3/4 cup julienned carrot
1 1/2 cups snow peas, ends trimmed
6 fresh shiitake mushrooms, slivered
1/2 cup sliced water chestnuts, drained
1 clove garlic, minced
1/2 teaspoon minced fresh ginger
3 tablespoons reduced sodium soy sauce
3 tablespoons chicken broth
1 teaspoon cornstarch
2 cups hot cooked rice

Steps:

  • Make 2 cups of rice as instructed on package and keep hot.
  • Heat wok over medium heat and add the oil, increase to medium-high heat.
  • Add the broccoli and water, stir-fry for 1 minute or until broccoli is bright green.
  • Add carrots, snow peas, mushrooms, water chestnuts, garlic and ginger; stir-fry for 1 to 2 minutes or until tender crisp.
  • In small bowl, combine the soy sauce, broth and cornstarch; mix well to dissolve.
  • Add to wok and stir-fry for about 1 minute.
  • Serve over rice.

Chinese people don't generally eat raw vegetables, but love cooked green vegetable dishes like this flavorful stir-fry lettuce.

1 head iceberg lettuce
1 1/2 teaspoons Chinese rice wine ​(or dry sherry)
2 teaspoons light soy sauce
3/4 teaspoon sugar (granulated)
1 1/2 tablespoons vegetable oil (or peanut oil)
2 garlic cloves (minced)
1 1/2 teaspoons fresh ginger (minced)
Optional: 1/8 to 1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon Asian sesame oil

Steps:

  • Gather the ingredients.
  • Wash lettuce, separating each leaf from core. Dry well with a clean kitchen towel or paper towel.
  • Without removing hard stems, cut leaves across into pieces of about 1 inch wide. Set aside.
  • Combine rice wine or dry sherry, soy sauce, and sugar in a small bowl. Mix well and set aside.
  • Heat oil in a wok over medium-high heat. Add garlic, ginger, and red pepper flakes and stir-fry until aromatic, or about 5 to 10 seconds. Start with 1/8 of a teaspoon of the red pepper flakes.
  • Add chopped lettuce into wok.
  • Stir-fry lettuce for 1 to 2 minutes, until leaves begin to wilt. Sprinkle with salt.
  • Give previously prepared sauce a quick re-stir and swirl into wok. Stir-fry for 1 to 2 more minutes, until lettuce becomes dark green in color. Taste and adjust seasonings, add remaining 1/8 of a teaspoon of red pepper flakes if desired, or a splash of soy sauce.
  • Remove from heat and stir in sesame oil.

As good as you can get in any restaurant. Its not hard to prepare at all and the flavour is a real taste sensation. The combination of the vegetables with the meat is delicious and just enough heat and spice to give this dish the nod from everyone.

150 g beef, thinly sliced
1 garlic clove, large, crushed
1/2 tablespoon soya sauce, light
1/2 tablespoon soya sauce, Dark
1 tablespoon oil, peanut
2 -3 cups Chinese vegetables, Been Shoots, Red Capsicum, Bok Choy, Chinese Leaf, Baby Corn, Spring Onions
1 teaspoon ginger, grated
1/2 cup water
1 tablespoon soya sauce, Light
1/2 tablespoon oyster sauce
2 1/2 teaspoons szechuan hot bean sauce
1/2 teaspoon sesame oil
1 teaspoon cornflour, heaped
water, to mix

Steps:

  • Cut the beef in thin slices, place in a dish with the garlic and the 1/2 tablespoon of Dark Soya sauce and the 1/2 tablespoon of light soya sauce. mix well, cover and place in the fridge to marinade for half an hour.
  • Cut up the vegetables of your choice, I use the vegetables I have mentioned, add the ginger and set aside.
  • Place the light soya sauce, oyster sauce, sesame sauce and the hot bean sauce in the water, mix the corn flour with enough water to make a paste and add it to the water.
  • Heat wok; add half of the oil and stir fry the vegetables. Place in warm oven. Add remainder of the oil to wok and quickly stir fry the meat for just a minute or two. Add the liquid, stir until it thickens.
  • Toss the vegetables back in and quickly stir.
  • Serve with fried rice or noodles of your choice.

500 g large shrimp, peeled
1 teaspoon fresh ginger, grated
4 cups Chinese vegetables
1 teaspoon garlic, crushed
1 tablespoon dry sherry
1 tablespoon soya sauce
2 teaspoons oyster sauce
1/2 teaspoon sesame oil
1 -2 dried bird's eye chiles or 1 -2 dried chili, crushed
1/2 cup chicken stock
2 teaspoons cornflour
1 tablespoon cooking oil

Steps:

  • Prepare vegetables, of your own choice, i.e. bok choy, bean sprouts, capsicum, onion, broccoli, asparagus, Chinese leaf, and baby corn--a mixture is great.
  • Blanche asparagus and broccoli for two minutes before adding to the other vegetables. Add the chili, crushed; place to one side.
  • In a cup, place the stock, adding the Soya sauce (a mixture of light and rich is nice) add the sherry, oyster sauce and sesame oil. Mix the corn flour with enough water to be able to add to the stock.
  • Heat wok, add half of the oil, stir fry the vegetables. Place in warm oven. Add remainder of the oil to wok and quickly stir fry the prawns for just a minute or two. Add the liquid and stir until it thickens.
  • Toss the vegetables in and quickly stir.
  • Serve separately with noodles of your choice.
