STICKY CHINESE FIVE SPICE CHICKEN | MARION'S KITCHEN

Glossy, sticky, sweet... this simple marinade turns everyday, oven-baked chicken into what dreams are made of. To amp up the flavour even more, leave it overnight so soak up all that goodness. Gorgeous!

Number Of Ingredients 12

4 skin-on, boneless chicken thighs (or any skin-on chicken pieces)
3 tbsp hoisin
2 tbsp honey
1 tbsp oyster sauce
1 tbsp dark soy sauce
3 garlic cloves, finely grated
2 tsp Homemade Chinese Five Spice (you can use store-bought too)
400g Chinese broccoli (gai larn)
steamed rice to serve
Basting Sauce:
2 tbsp honey
1 tbsp dark soy sauce

Steps:

  • Step 1.In a large bowl, combine the hoisin, honey, oyster sauce, dark soy sauce, garlic and Chinese five spice. Add the chicken pieces and mix until well coated. Marinate for at least 2 hours and up to overnight.
  • Step 2.Preheat oven to 180°C/356°F (fan-forced).
  • Step 3.Line a large baking tray or roasting dish with foil. Top with a baking rack. Place the chicken pieces onto the baking rack. Cook in the oven for 10 minutes.
  • Step 4.While the chicken is cooking, steam the Chinese broccoli in a bamboo steamer. Or alternatively, place the broccoli in a microwave safe bowl, add a ¼ cup water. Then cover with cling film and microwave on high for 2 minutes. Leave covered until ready to serve.
  • Step 5.Mix the basting sauce ingredients together in a small bowl.
  • Step 6.Remove the chicken from the oven and brush the top of the pieces with the basting sauce. Place back into the oven to cook for a further 5 minutes or until cooked through.
  • Step 7.Serve with steamed Chinese broccoli and rice.

My homemade better-for-you honey chicken does away with heavy, stodgy batter, and instead delivers a light, crispy, sticky texture you'll love. The secret behind the flavour sensation? The next-level marinade

Number Of Ingredients 16

600g (1.3 lb) chicken breast, cut into roughly 3cm cubes
½ cup chicken stock
2 tbsp Chinese shaoxing wine*
2 tbsp white vinegar
3 tbsp honey
1 tbsp light soy sauce
1/4 cup sugar
2 garlic cloves, finely chopped
1 1/2 cups plain flour
2 tsp cornstarch (corn flour), dissolved in 2 tbsp water
vegetable oil for frying, plus 1 extra tablespoon
1 tsp sesame seeds
Marinade:
2 tbsp light soy sauce
1 tbsp Chinese shaoxing wine
1 egg white, lightly whisked

Steps:

  • Step 1.In a large bowl, place chicken and marinade ingredients. Mix thoroughly to break up the egg white. Allow to marinate for 10-20 minutes.
  • Step 2.In another bowl, mix together the chicken stock, Shaoxing wine, vinegar, honey, soy sauce and sugar.
  • Step 3.Place the flour in a large tray or bowl. Add the chicken pieces and the marinade and use your hands to pat and press the liquid and flour together around the chicken pieces to form a craggy coating.
  • Step 4.Fill a wok or saucepan to about 1/3 capacity with the vegetable oil. Heat over high heat. The oil is hot enough for frying at 325°F or 165°C or when a wooden spoon dipped into the oil forms small little bubbles. Shake excess flour from the chicken pieces. Cook chicken pieces in 2 to 3 batches for about 3 minutes or until golden and cooked through. Drain on kitchen paper.
  • Step 5.In a clean wok or pan over medium heat, add 1 tablespoon of oil and then add the garlic. Cook for about 10 seconds or until fragrant. Then add the chicken stock mixture. Cook for 2-3 minutes until the sugar has dissolved and the liquid starts to foam. Then add the cornstarch mixture. Cook for another 1-2 minutes or until the sauce has thickened slightly. Add the chicken pieces and toss until evenly coated. Transfer to a serving plate and sprinkle with sesame seeds.
  • Notes: - Shaoxing is a Chinese cooking wine made from fermented rice. Use it to add flavour to Asian broths, stocks and stir-fries. If you don't wish to use alcohol simply substitute chicken stock.

Found this recipe on the website of a German cook named Marion. Though honey and mustard are commonly paired, the addition of orange and dill is new to me. This is an untried recipe posted for the Zaar World Tour.

1 1/4 lbs boneless skinless chicken breasts
8 teaspoons Dijon mustard
8 teaspoons honey
2 tablespoons fresh dill, finely chopped
1 tablespoon orange zest, finely grated

Steps:

  • Pre-heat oven to 375°F
  • Wash the chicken breast fillets and pat dry. If one side is much thicker than the other you may want to give it a quick pound with a meat mallet (skin-side down) to even it out.
  • For the sauce, mix the Dijon mustard, honey, dill and orange zest in a small bowl, stir well.
  • Brush both sides of the fillets with the marinade and bake the chicken for 30 minutes.
  • Cut the fillets with a sharp knife on the thickest part, if the juices run clear they are done.

Crisp fried chicken strips in a sweet sauce. Despite the name there is no honey in this recipe. I have not yet tried it, it is for an ISO request on the recipe board. Note: When the recipe was first posted, there were an additional 2 Tablespoons of salt listed in the batter. This was a typo and never should have been there. Several reviewers alerted me to the error, and the extra salt listing has been removed.

4 tablespoons cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 cup water
1/2 teaspoon salt
1 egg
1 egg white
1 1/2 lbs boneless chicken breasts, cut in thin strips
2 cups peanut oil, for deep-frying
1 1/2 tablespoons peanut oil
2 teaspoons chopped ginger
3 tablespoons finely sliced garlic
1 teaspoon salt
3 tablespoons sugar
1 teaspoon Chinese white rice vinegar
1/2 cup water
1 teaspoon cornstarch, mixed with
1 teaspoon water
garnish toasted sesame seeds (optional)

Steps:

  • MIX THE BATTER INGREDIENTS together in a medium-sized bowl; it should be thick and smooth.
  • Allow the batter to sit, covered for at least 30 minutes.
  • Combine the chicken with the batter.
  • Heat a wok or large deep skillet until it is hot and add the oil for frying.
  • When the oil is barely smoking, deep-fry the chicken for 2 minutes or until the batter is just firm.
  • You should do this in several batches.
  • Remove the chicken with a slotted spoon and drain on paper towels.
  • TO MAKE SAUCE: Heat a small saucepan; when it is hot, add the oil, ginger and garlic, and stir for 30 seconds.
  • Then add the rest of the sauce ingredients and simmer for 2 minutes.
  • Keep warm.
  • Reheat the oil in the wok until it is very hot, but not smoking.
  • Deep-fry the chicken again until it is golden and crisp, about 1 minute.
  • Remove and drain, place on a warm platter, drizzle with the sauce (and sprinkle with the optional toasted sesame seeds if desired) and serve immediately.
