2 pounds pork tenderloin ((or 2 pounds pork tenderloin tips))
1/2 cup teriyaki sauce (we used Mr. Yoshidas)
1/2 cup chicken broth
1/4 cup soy sauce
1/4. cup ketchup
2 tablespoons Hoisin sauce
4 cloves garlic (minced)
1 teaspoon Chinese 5 spice powder (optional)
a few drops red food coloring (optional, it just gives it that Chinese BBQ pork look)

Steps:

  • Place pork in a large Ziploc bag.
  • Combine all remaining ingredients in medium-sized bowl and pour into Ziploc bag with the pork.
  • Press out all the air from the bag, seal tightly, and refrigerate.
  • Marinade 4+ hours or overnight (the longer the better).
  • Remove pork from fridge about 20 minutes before cooking to allow pork to reach close to room temperature. Drain marinade choose cooking method below:

I got this recipe from Cooking Class Chinese Cookbook. This recipe tastes exactly like the pork in Chinese restaurants. My family loved it. I used it in my recipe for Recipe#186806. The meat was so tender and juicy. I baked mine for 45 minutes and didn't baste it at all, I was busy cooking other Chinese food.

1/4 cup soy sauce
2 tablespoons dry red wine
1 tablespoon brown sugar, Packed
1 tablespoon honey
2 teaspoons red food coloring
1/4 teaspoon ground cinnamon
1 garlic clove, Minced
2 (12 ounce) whole pork tenderloin

Steps:

  • Preheat Oven To 350.
  • Combine soy sauce, wine, sugar, honey, food coloring, cinnamon and garlic in a large bowl.
  • Add meat to marinade making sure it is coated with marinade.
  • Cover and refrigerate for at least an hour, overnight is better turning meat occasionally.
  • Place meat on a wire rack over a baking pan along with marinade.
  • Bake 45 minutes turning and basting frequently with marinade.
  • Let meat rest for 15 minutes before slicing.

1 tsp active dry yeast powder
1/4 cup / 65 ml warm water
1 tbsp white sugar
1/2 cup /125 ml warm water
4 tbsp /70g white sugar
2 cups / 300g plain flour ((all purpose))
1 cup / 155g cornflour / cornstarch
1/4 cup / 65 ml vegetable oil
2 1/2 tsp baking powder
1 tbsp vegetable oil
1/3 cup finely chopped escalot or white onion ((Note 1))
1 tbsp sugar
1 1/2 tbsp soy sauce (, regular or light (not dark))
1 1/2 tbsp oyster sauce ((can sub Hoisin))
1 tbsp sesame oil
1/2 cup water
1 tbsp cornflour dissolved in 1 tbsp water
1 1/2 cups Chinese Barbecue Pork (, diced (Note 2))

Steps:

  • Yeast Activation: Place yeast, sugar and water in a small bowl. Mix, then set aside for 10 minutes until it becomes foamy.
  • Place flour, cornflour and sugar in a stand mixer bowl fitted with a dough hook. Mix briefly to combine.
  • Add yeast mixture, oil and water. Mix on low speed for 3 minutes until a smooth ball of dough forms. It should be soft and elastic, not so sticky it gets stuck all over your hands. Adjust with a touch of flour/water if required to get the dough consistency right.
  • Cover with cling wrap and place in a warm dry place for 2 hours until it doubles in volume. (Note 3). Meanwhile, make Filling.
  • Remove cling wrap, scatter over baking powder. Return to stand mixer and mix on low for 2 minutes.
  • Turn dough out onto work surface, sprinkle with flour. Knead lightly to form a smooth round disc.
  • Cut dough into 4 pieces. Take one piece, roll into an even log, cut into 3 pieces (so 12 pieces in total).
  • Take one piece of dough, cover remaining with cling wrap or tea towel.
  • Roll into round 4.5" / 11 cm in diameter, making the edges thinner.
  • Place dough in hand, put 1 1/2 tbsp of Filling in the centre.
  • Pinch 8 pleats around the edges. Then gather the pleats together one by one to seal the bun. Pinch the top the twist.
  • Repeat with remaining dough - make 12 in total.
  • Cover buns loosely with cling wrap and leave in a warm place for 15 minutes.
  • Line a large bamboo steamer (or other steamer) with parchment paper punctured with holes (Note 4).
  • Place 6 to 8 buns on paper, cover with steamer lid.
  • Pour about 4 cm / 1 1/2 inches in a wok / pot (steamer should not touch water) and bring to rapid simmer over medium high.
  • Place steamer in wok, then cook for 12 minutes. Check water halfway through, top up if required.
  • Buns are ready when they spring back when touched, and the buns have formed a smooth skin.
  • Remove steamer from wok, serve warm!
  • Heat oil in a saucepan over medium heat. Add eschalots and cook for 2 minutes.
  • Add sugar, soy sauce, oyster sauce, sesame oil and water. Mix.
  • While stirring, slowly pour cornflour mixture in. Mix until smooth.
  • Stir in pork. Cook until sauce is thickened, 1 - 1 1/2 minutes (see video for consistency). Set aside to cool (thickens when cools).

750 g pork belly
10g salt
15g sugar
1/2 tsp ground white pepper
1 tsp Chinese five-spice powder
1 tbsp Shaoxing wine
1 tsp hoisin sauce (optional)
1 tbsp white vinegar
1/2 tsp baking soda
2 tsp oil

Steps:

  • Bring a pot of shallow water to a boil. Blanch the pork belly in water for 10 minutes, skin side down. After blanching, remove the pork and let it cools.
  • Scrape the skin with a knife to remove any dirt and remaining hairs.
  • Prick multiples small hole on the skin with a small fork.
  • Make a few shallow cuts on the flesh side of the pork, halfway through the meat.
  • Mix all the marinade ingredients. Combine the seasoning in a small bowl, then massage it all over the meat, particularly between the cuts.
  • Keep the skin clean from the marinade.
  • Mix one tablespoons of white vinegar with a half teaspoon of baking soda in a small bowl. Apply a thin layer of the mixture on the skin.
  • Keep the pork in the fridge overnight.
  • Remove the pork belly from the refrigerator at least one hour before roasting so that the pork returns to room temperature.
  • Sprinkle half a teaspoon of salt on the skin just before it goes in the oven. Wipe off the excess moisture.
  • Apply a thin layer of oil on the skin. Roast the pork on a medium rack for 1.5 hours at 150°C.
  • Now place the pork on the top rack. Change the oven setting to 230°C, top heat only for thirty minutes, or until the skin has turned to golden brown with multiple blisters.

12 oz wide lo mein noodles, cooked following package directions

Steps:

  • 1. Whisk soy sauce,honey,hoisin,garlic, ginger, five-spice powder and red pepper flakes together in a small bowl.Place in a resealable plastic bag and add pork. Seal. Turn and shake to coat meat. Refrigerate overnight. Coat slow cooker bowl with nonstick cooking spray. Place pork in bowl and pour marinade over top. Cover and cook on HIGH for 4 hours or LOW for 6 hours.

2 tablespoons vegetable oil
1 teaspoon sesame oil
2 tablespoons light brown sugar
3 tablespoons runny honey
3 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1/2 tablespoon dark soy sauce
1 teaspoon Chinese five spice powder
2 cloves of garlic, finely grated
1 inch (2 cm) knob of ginger, peeled and finely grated
2 tablespoons runny honey (extra for the glaze)
2 pieces of pork tenderloin, approx 1 lb (500 g) each

Steps:

  • Place all of the ingredients for the marinade into a bowl and whisk to combine.
  • Place the pork into a large ziplock freezer bag and pour the marinade inside. Make sure the pork is well-coated in the marinade.
  • Place the bag into the fridge and leave it to marinate for at least 2-3 hours, or overnight.
  • When you are ready to roast the pork, take it out of the fridge and let it come to room temperature in the marinade (this will take about 30 minutes).
  • Preheat the oven to 350°F (180°C) (without fan).
  • Place a wire rack over a large roasting tray and half fill the tray with boiling water. The rack needs to be high enough so that, when the meat is sitting on top of the rack, the meat should not touch the water. The water helps to create a steam in the oven to cook the pork and to keep it moist.
  • Place the pork on the wire rack.
  • discard the marinade in the freezer bag.
  • Roast the pork for about 30 minutes, basting every 10 minutes or so (see next step).
  • Meanwhile, pour the reserved marinade into a small saucepan and add the extra 2 tablespoons of honey. Bring the sauce to a boil and simmer gently for a few minutes until the sauce is thick and syrupy. Use this sauce to baste the pork.
  • After 30 minutes, turn the oven to grill (or broil) mode on high heat. If possible, place the tray as high as possible in the oven under the grill. Baste the pork generously every 3-5 minutes, making sure that it is browning nicely and doesn't burn. Once the pork has caramelised nicely, remove the tray from the oven.
  • Let the pork rest for about 10 minutes before slicing.
