STIR-FRIED GREEN BEANS WITH PORK



Stir-fried Green Beans with Pork image

This Chinese green bean stir-fry may seem simple, but it's truly delicious! We wok sear the green beans for flavor and stir-fry with crispy ground pork.

8 ounces ground pork ((225g, can substitute ground chicken or beef))
1 tablespoon Shaoxing wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
2 tablespoons water
2 tablespoons ginger ((minced))
1/2 teaspoon sugar
1 teaspoon cornstarch
3 tablespoons oil ((divided))
1 pound green beans ((450g, chopped to ½-inch pieces))
2 tablespoons garlic ((minced))
1/2 red bell pepper ((diced finely))
4 red chilies ((chopped, optional))
1/4 teaspoon sugar
1 teaspoon sesame oil
1 tablespoon light soy sauce
1/4 teaspoon ground white pepper
1/8 teaspoon salt ((a pinch, or to taste))
2 tablespoons water

Steps:

  • Combine the ground meat with all the marinade ingredients. Stir until any standing liquid has been absorbed by the meat. Marinate for 15-20 minutes.
  • Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped green beans. Stir and spread the beans into a single layer. Cook for 30 seconds. Then stir and repeat the spreading step several times until the green beans are slightly charred, wilted, and cooked through. Turn the heat lower if needed to avoid burning. It takes about 5-8 minutes to cook the green beans this way. (To speed up the cooking, add a few drops of water each you stir, to create some steam.) Transfer the cooked green beans to a dish and set aside.
  • Now add 1 tablespoon oil to the wok, with the heat turned up to high. Add the ground meat and brown it. Don't stir too much; give the meat a chance to brown and crisp. Once the meat has browned, reduce the heat to medium.
  • Next, add the garlic, bell pepper and chilies. Stir-fry for 1 minute. Add in the cooked green beans, ¼ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon light soy sauce, ¼ teaspoon ground white pepper, a pinch of salt (to taste), and 2 tablespoons water. With the heat all the way up on high, stir-fry for a final 10-15 seconds and serve.

1 pound green beans (trimmed)
2 tablespoons canola oil
2 teaspoons chili garlic paste
2 green onions (thinly sliced - white parts only)
1 tablespoon garlic (thinly sliced)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1/4 cup water
1/2 teaspoon crushed red pepper flakes

Steps:

  • To a wok add the canola oil and heat on medium-high heat.
  • Add the green beans and stir fry them for 3-5 minutes or until they start to shrivel up a bit.
  • Add in the garlic, green onions, chili-garlic paste and stir to combine.
  • Cook the garlic mixture for 30 seconds to a minute then add in the soy sauce, rice vinegar, sugar, water and chili flakes.
  • Cook for an additional 1-2 minutes or until most of the liquids are completely cooked off.
  • Garnish with sesame seeds if desired.

Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 lb string bean
1 tablespoon garlic
1 teaspoon ginger
3 scallions, chopped
4 oz shiitake mushrooms
½ lb ground pork
4 dried red chilies
1 tablespoon chili paste
2 tablespoons soy sauce
1 tablespoon rice wine
white pepper, dash

Steps:

  • In a large pan or wok, heat the oil over high. Fry the string beans until they start blistering. Remove the string beans.
  • In the same pan or wok, add the garlic, ginger, and scallions. Fry until fragrant.
  • Add the mushrooms and ground pork. Fry until the pork is mostly done. Stir in the the dried red chilies and chili paste.
  • Add the string beans back the pan/wok. Toss to combine everything. Add the soy sauce, rice wine, and a dash of white pepper. Serve!

I love to cook with chile crisp, a fiery hot-pepper condiment born in the Sichuan Province of China that generally relies on fried shallots and garlic for texture, and on any number of umami-rich special ingredients for distinction and oomph. It's magical: a boon to noodle soups and kitchen-sink stir-fries, to eggs and cucumbers, to plain steamed fish. Here, I use it as the base of a marinade and topping for baked tofu and green beans, with black vinegar, a little sesame oil, a wisp of honey, minced garlic and ginger, along with scallions and cilantro. But you could use the mixture on a mitten and have a very nice meal.

3 tablespoons chile-crisp condiment, plus more for serving
3 tablespoons soy sauce
1 1/2 tablespoons Chinese black vinegar

Steps:

  • Heat oven to 450 degrees. In a baking dish or casserole, whisk together the chile crisp, soy sauce, vinegar, sesame oil, honey, garlic, ginger, scallions and cilantro.
  • Add the tofu slices to the dish, and coat them with the sauce, then allow to marinate for as long as it takes to heat the oven and trim the green beans.
  • Add the green beans to a large sheet pan, then drizzle the neutral oil on top and toss to coat. Slide the green beans to the sides of the pan, and arrange the slices of tofu in an even layer in the center of the pan. Pour remaining marinade over the tofu, and place in oven.
  • Roast until the green beans start to blister, 20 to 25 minutes. Serve immediately with rice and extra chile crisp on the side.

1 lb pork tenderloin, frozen for 30 minutes, then thinly shaved with your sharpest knife
3 tablespoons soy sauce
2 tablespoons rice wine
1 teaspoon szechuan peppercorns or 1/4 teaspoon fresh ground black pepper
1/4 cup chicken stock
1 tablespoon spicy bean sauce
1 tablespoon hoisin sauce
1 1/2 teaspoons chili-garlic sauce

1 teaspoon sesame oil
2 teaspoons cornstarch
1/4 cup peanut oil or 1/4 cup vegetable oil
1 lb green beans, trimmed and snapped in half
3 garlic cloves, minced (1 tablespoon)

4 green onions, thinly sliced
1/4 cup toasted white sesame seeds

Steps:

  • In a small bowl, toss the pork with 2 tablespoons of soy sauce, 1 tablespoon of rice wine, and the peppercorns. Marinate at room temperature while assembling the rest of the ingredients.
  • In a separate bowl, combine the remaining tablespoon of soy sauce, the remaining tablespoon of rice wine, the stock, spicy bean sauce, hoisin, chili garlic sauce, sugar, sesame oil, and cornstarch. Set aside.
  • heat a wok or large frying pan over medium-high heat and add the oil.
  • When the oil is hot, add the beans and stir-fry them for 10 minutes, or until they begin to brown and blister. Remove the beans from the pan using a slotted spoon and pour off all but 2 tablespoons of the oil. Return the pan to the heat, and add the pork, garlic, and ginger. Stir-fry for about 3 minutes, or until there is no longer any pink color to the pork. Add the green onions and cook 1 minute. Add the reserved sauce and green beans and mix well. The sauce will begin to thicken and glaze the pork and beans.
  • To serve, sprinkle with sesame seeds.
  • Variation: Feel free to substitute chicken, beef or shrimp, or tofu for the pork.
