CHINESE GARLIC GREEN BEANS

Chinese Garlic Green Beans image

This quick and easy Chinese garlic green beans recipe uses a few ingredients to achieve maximum flavor and a perfect texture! The green beans are pan fried until blistered and tender, then stir fried with garlic and ginger to lend a great aroma. Serve this as a side dish to complete your dinner or over steamed rice as a light lunch. {Vegan, Gluten-Free adaptable}To make the dish gluten-free, use tamari to replace soy sauce, and use dry sherry or chicken broth to replace Shaoxing wine.

Time 22m

Number Of Ingredients 8

1 lb (450 g) green beans (, tough ends removed)
3 to 4 tablespoons peanut oil ((or vegetable))
6 cloves garlic (, minced)
1 thumb minced ginger
1 tablespoon Shaoxing wine ((or dry sherry, or chicken broth))
1 teaspoon soy sauce
1/2 teaspoon salt
Chinese chili flakes ((for garnish) (Optional))

Steps:

  • Thoroughly pat the green beans dry with paper towels to prevent oil splatter.
  • Heat 3 tablespoons of oil in a large skillet over medium-high heat until hot. Turn to medium heat and add the green beans. Toss to coat well with the oil. Spread out the green beans as much as possible with minimal overlap and sprinkle with the salt. Let cook without touching for 2 to 3 minutes, until the bottom starts to blister and turn golden. Remove any green beans that have blistered and charred on one side and transfer them to a big plate. Keep cooking the rest of the green beans, flipping occasionally and taking out the ones that are blistered. The whole process should take about 6 to 8 minutes.
  • If your pan looks dry, add the remaining 1 tablespoon of oil. Otherwise, directly add the garlic and ginger to the pan. Stir and cook for a few minutes to release fragrance. Add back all the cooked green beans and stir to mix a few times.
  • Pour in the Shaoxing wine and soy sauce and sprinkle with salt. Stir immediately to mix everything well. Taste the green beans. Adjust seasoning by adding more salt or soy sauce, if needed.
  • Transfer everything to a big plate. Sprinkle with chili flakes, if using. Serve hot as a side dish.

'CHINESE BUFFET' GREEN BEANS

'Chinese Buffet' Green Beans image

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

CHINESE DRY-SAUTEED STRING BEANS

Chinese Dry-Sauteed String Beans image

An authentic Chinese dish, that happens to be one of my very favorites. I searched a long time for one that tasted restaurant quality and was easy to make! You can subsitute long beans cut into 3 inch segments for the green beans to make it even more authentic.

Time 20m

Yield 3-4 serving(s)

Number Of Ingredients 11

1 lb green beans, fresh and dry
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 scallions, minced
1/2 teaspoon chili paste with garlic
1/2 teaspoon chili paste, siracha
1 tablespoon soy sauce
1/2 teaspoon sugar
1/4 teaspoon salt
pepper
2 tablespoons peanut oil or 2 tablespoons vegetable oil, divided

  • Drain the green beans in a colander.
  • Heat the other 1 T of oil and add ginger, garlic and scallions, stir fry for a minute. Add chili sauce and siracha and stir fry for a minute. Add beans, soy sauce, sugar, salt and pepper and mix to combine.

Immediately lower the heat to medium low, and sear the green beans for about 20 minutes, stirring occasionally. You want to see small scorch marks on the green beans. • Marinate minced pork with all the seasonings in a small bowl for around 15 minutes just before cooking. Prepare the green beans and drain with paper.
  • Heat up oil in wok (or you can use a small deep pot) until you can see light smoke on the surface over high fire. Add drained green beans to fry for 3 to 5 minutes over low to medium fire. Stir the beans occasionally during the process. They will be well deep-fried when there are obviously withered. Transfer out and filter the extra oil out.
  • Leave around 1 tablespoon of cooking oil in wok and pour out the extra. Be carefully during the process as the oil is extremely hot. Add minced pork and fry until for 1 minute until aroma and then put ginger, garlic, Szechuan pepper, ginger, Ya Cai (if you happen to have some in kitchen) and dried pepper. Fry for another 1 to 2 minute. Return green beans along with salt, sugar and light soy sauce. Fry until everything is well combined. Serve hot!

  • Trim the tough ends off the string beans, and then cut them in half (each piece should be about 3 inches long). Wash them and pat them thoroughly dry with a kitchen towel to get rid of any water.
  • Heat ¼ cup of oil in a wok over medium high heat, and shallow fry the string beans in two batches. They are done once they appear wrinkled and slightly scorched. Use a strainer to remove the string beans from the wok and set aside.
  • Once all the string beans are shallow fried, turn off the heat. Scoop the oil out of the pan, except for 1 tablespoon. Turn the heat down to low, and add in the Sichuan peppercorns, ginger, garlic and dried chilies (if using). Stir-fry for about 1 minute, until fragrant.
  • Next, add in the ground pork, turn up the heat to high, and stir-fry quickly to break up the pork and brown the meat slightly. Add in the fried string beans, Shaoxing wine, light soy sauce, dark soy sauce, and sugar. Toss everything well, and season with salt to taste. Stir-fry everything over high heat until any excess liquid has cooked off, and serve!
