SIMPLE SPICY CHICKEN PASTA



Simple Spicy Chicken Pasta image

An easy one-pot dish. Delicious juicy chicken in a tomato sauce with a nice kick. Perfect with pasta and some garlic bread.

Number Of Ingredients 13

4 chicken breasts, cut into bite-size pieces
1 large onion, finely diced
2 cloves of garlic, crushed
2 red peppers, cut into bite-size pieces
2 x 400g tinned chopped tomatoes
2 tbsp Worcestershire Sauce
1/2 a lemon
1 tsp chilli flakes, alter depending on heat preference
1/2 chilli powder
250g cheddar cheese, grated
olive oil
salt
black pepper

Steps:

  • Heat a few lugs of the olive oil in a large pan on a med-high heat then add the onions, garlic, peppers and chilli powder. Fry for about 5 minutes, or until onions are softened and pale (not golden).
  • Add the chicken, with a pinch of salt and pepper, to the pan and cook until all the chicken is sealed, but not browning.
  • Keep on the heat and add the tomatoes, worcestershire sauce, juice of 1/2 a lemon, the chilli flakes and a good pinch of salt and pepper. Give a good stir and turn the heat up high. Let the sauce reach a boil and then reduce the heat to a med-low setting. Cover the pot and allow to simmer for 45 minutes, stirring occasionally.
  • With about 15 minutes left to cook, put on some pasta . I recommend a tagliatelle, fusilli, conchiglie or penne.
  • Once the sauce has been on for a good 45 minutes and has reduced slightly, remove from the heat and add the cheese. Stir to make sure it has melted through the sauce. Then drain off the pasta and add the the pot with the sauce, give a good stir to mix the pasta. Serve in a bowl, or high-edged plate, with some garlic bread on the side.

4 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
¼ tsp chilli flakes
2 x 400g cans chopped tomatoes
1 tsp caster sugar
6 tbsp mascarpone
4 skinless chicken breasts, sliced into strips
300g penne
70g mature cheddar , grated
50g grated mozzarella
½ small bunch of parsley , finely chopped

Steps:

  • Heat 2 tbsp of the oil in a pan over a medium heat and fry the onion gently for 10-12 mins. Add the garlic and chilli flakes and cook for 1 min. Tip in the tomatoes and sugar and season to taste. Simmer uncovered for 20 mins or until thickened, then stir through the mascarpone.
  • Heat 1 tbsp of oil in a non-stick frying pan. Season the chicken and fry for 5-7 mins or until the chicken is cooked through.
  • Heat the oven to 220C/200C fan/gas 7. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce. Top with the cheddar, mozzarella and parsley. Bake for 20 mins or until golden brown and bubbling.

My brother made this for my kids one day when they were visiting him. It has become my DD favourite meal. The sausage adds enough spicy flavour to this pasta dish.

12 ounces farfalle pasta
2 -3 chorizo sausages (spicy pork sausage)
24 ounces boneless skinless chicken breast halves
2 small fresh red chilies, seeded and chopped
6 green onions, sliced
2/3 cup sun-dried tomato pesto
1 1/4 cups whipping cream
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta in a large saucepan of boiling water according to the package instructions.
  • Drain.
  • Meanwhile, cut the chorizo into 3/4 in slices and cut the chicken breasts into strips.
  • Heat a large skillet.
  • Add the chorizo and cook, stirring, over high heat for 2 minutes.
  • Add the chicken strips, chiles and green onions and cook, stirring, for 5 minutes, or until the chicken is lightly browned.
  • Stir in the pesto and cream and simmer for 5 minutes, or until the chicken is tender.
  • Remove from the heat and stir in the Parmesan.
  • Toss with the pasta and serve at once.

CHICKEN CHILLI CON CARNE

2 tbsp olive oil
1 onion, sliced
2 mixed peppers, sliced (use red, yellow or orange peppers)
2 large garlic cloves, crushed
1 small bunch of coriander, stalks finely chopped and leaves roughly chopped
½ tbsp ground coriander
1 tbsp ground cumin
1-2 tsp chipotle paste
400g can chopped tomatoes
1 tbsp tomato purée
300ml chicken stock
1 small cinnamon stick
4 chicken thighs, bone-in
400g can black beans
400g can kidney beans, drained
1 tbsp red wine vinegar
20g dark chocolate (at least 70% cocoa solids)
cooked rice or tortilla chips
guacamole and soured cream (optional)

Steps:

  • Heat the oil in a casserole dish over a medium heat, and fry the onion and peppers for 10-12 mins, or until softened. Add the garlic, coriander stalks, ground coriander, cumin and chipotle paste, and fry for 2 mins more. Tip in the tomatoes, tomato pureé and stock, then add the cinnamon stick. Nestle the chicken thighs into the mixture, then reduce the heat to low and simmer, covered, for 45 mins or until the chicken is tender. Remove the chicken from the casserole and transfer to a chopping board, then shred the meat off the bone using two forks.
  • Return the shredded chicken to the pan, then tip in the black beans along with the liquid from the can, the drained kidney beans, vinegar and chocolate. Stir well to combine all of the ingredients and melt the chocolate, then turn the heat up to medium and simmer, uncovered, for 10-15 mins, or until the mixture has thickened slightly.
  • Remove the cinnamon stick, season to taste and stir though most, or all of the coriander leaves (you can reserve a few leaves to scatter over at the end, if you like). Serve the chilli with rice or tortilla chips, topped with guacamole and soured cream, if using, and scatter over any remaining coriander.

Steps:

  • Prepare and dice the vegetables and put the pasta on to boil.
  • Add the Diced onion to a pan on a medium heat and cook to soften.
  • Add in the grated garlic and chilli and coat the onions before adding the chopped chicken breasts.
  • Next add the diced courgettes, peppers, spring onion and the tomato halves to the pan and cook for a further 5 minutes.
  • Drain the pasta.
  • Add pasta to pan. Add Philadelphia cheese (optional) Add sweet chilli sauce.
  • Serve piping hot and scatter over the basil leaves.

500 g chicken breasts, cubed
200 g sun-dried tomato pesto
1/2 bunch spring onion
250 g bow tie pasta, cooked
175 g manufactured sausage
250 ml cream
1 onion, chopped
1 teaspoon chopped chili (or to taste)
1 tablespoon oil
1 cup grated cheese

Steps:

  • Heat oil in a pan and sautee the onion until clear, add the chilli and fry for one min,add the chicken breast and fry until half cooked.
  • Add the spring onions, cabanossi, pesto and cream and continue to cook until chicken is cooked through.
  • Toss through pasta and cheese.
  • Serve with crusty bread and a salad.
  • (i've written manufactured sausage in the ingredients list because thats all i could think of that was recognised i use cabanossi in mine).
