1/4 cup chili crisp
4 large eggs
Kosher salt and freshly ground black pepper
1/4 cup rice vinegar
3 cups cooked brown rice
3 cups baby kale
1 tablespoons chopped chives, for garnish

Steps:

  • Heat a large nonstick skillet over medium heat. Add 2 tablespoons of the chili crisp to the skillet and swirl until it is all hot and coating the skillet.
  • Working with one egg at a time, crack the eggs into a small bowl and then into the skillet. Season the eggs with 1/4 teaspoon salt and pepper to taste. Cook the eggs sunny-side up until the whites are fully cooked but the yolks are still runny, 3 to 5 minutes.
  • Add the remaining 2 tablespoons chili crisp to a large bowl. Whisk in the rice vinegar and 1/2 teaspoon salt. Add the rice and baby kale and toss until everything is coated. Divide among 4 bowls. Top each rice bowl with a fried egg and sprinkle with chives. Serve immediately.

This soul-warming weeknight chili is made in a skillet because the shorter sides of the pan allow the liquid to evaporate more freely, encouraging it to thicken faster than it would in a traditional pot. Eggs are nestled right into the chili, so the whites cook and the yolks stay molten, in a preparation similar to a shakshuka, another popular eggs-for-dinner dish. Shower the chili with Cheddar, simmer for a few minutes and there you have it: a hearty vegetarian meal. Serve with any toppings you like and something starchy like tortillas to mop everything up.

2 tablespoons unsalted butter
1 large yellow onion, coarsely chopped
Kosher salt and black pepper
4 garlic cloves, coarsely chopped
1 tablespoon ground cumin
4 teaspoons chili powder
1/4 cup tomato paste
1 (28-ounce) can crushed or diced fire-roasted tomatoes
2 (14-ounce) cans of beans, such as pinto, black or any bean you like in chili, with their liquid
1 teaspoon apple cider vinegar
4 large eggs
1 cup grated extra-sharp Cheddar
Cilantro sprigs, for serving (optional)
Warm tortillas, tortilla chips or tostadas, for serving

Steps:

  • In a large (preferably cast-iron) skillet, melt the butter over medium-high. Add the onion, season with salt and pepper, and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, cumin and chili powder, stir to combine, and cook until fragrant, about 1 minute. Add the tomato paste and cook, stirring occasionally, until it begins to stick to the bottom of the pan and turns the color of rust, about 2 minutes.
  • Stir in the tomatoes and both cans of beans with their liquid. Bring to a boil, then reduce to a simmer, smashing the beans lightly and stirring occasionally, until thickened, about 20 minutes. Stir in the vinegar, then season to taste with salt.
  • Reduce the heat to low. If your chili is thick enough, make four divots evenly spaced in the chili and crack an egg into each divot. (If the chili is not thick enough to hold the divots, don't worry, just crack the eggs on top.) Using a fork or spoon, gently cover the whites with chili. (This helps the whites cook faster and more evenly). Season the eggs with salt and pepper, then sprinkle the chili with Cheddar. Cover and cook until the whites are set and the yolks are still runny, 5 to 7 minutes. Garnish, if desired, with cilantro sprigs. Serve with tortillas, tortilla chips or tostadas alongside.

1 tsp vegetable oil
2 heads pak choi, each halved through the core
2 tsp Chinese black vinegar
1 tbsp soy sauce
1 tsp sesame oil
pinch of sugar
200g cooked noodles (I use straight-to-wok noodles, egg, udon or ramen noodles)
2 large eggs
4 small shallots, halved and thinly sliced
1 head of garlic (about 8-10 cloves) thinly sliced
1 x 10cm cinnamon stick
4 star anise
500ml vegetable oil
2 tbsp sesame seeds
2 tsp cumin seeds
1 tsp Szechuan peppercorns
1 thumb-sized piece ginger, peeled, finely chopped
30g crushed red chilli flakes
2 tbsp soy sauce
1 tbsp caster sugar

Steps:

  • To make the chilli oil, tip the shallots, garlic, cinnamon stick, star anise and oil into a wide pan (a deep frying pan is good), then bring to a gentle sizzle. Cook for 15-20 mins over a low-medium heat, stirring now and again, until the shallots and garlic are crisp and golden brown. They will burn easily if the heat is too high, so watch the pan.
  • Meanwhile, toast the sesame seeds in a dry pan until golden, then tip into a bowl and set aside. Put the cumin seeds and Szechuan peppercorns in the pan and toast for 1-2 mins until aromatic. Tip into a pestle and mortar or spice grinder, and grind to a powder. Mix with the toasted sesame seeds.
  • Add the ginger, chilli flakes, soy and sugar to the bowl with the toasted, ground spices. When the shallots and garlic are crisp, strain the oil over the bowl using a sieve. Leave the crispy bits of garlic and shallot in the sieve to cool and become even more crisp. Discard the cinnamon and star anise.
  • Stir the cooled shallots and garlic through the spiced oil mixture. Will keep chilled for up to two weeks in an airtight, sterilised jar.
  • When ready to make the noodles, heat the veg oil in a wok. Add the pak choi and stir-fry for a minute with a splash of water and a pinch of salt. Cover with a lid (or a baking tray if you don't have one). Steam for a minute, then lift the veg from the wok, letting any liquid drip off. Set aside on a plate. Put the vinegar, soy sauce, sesame oil and sugar in the pan along with 2 tsp of the crispy chilli oil. Bring to a bubble, then add the noodles and toss for a few minutes over a high heat until the sauce is clinging to the noodles and they're soft and slippery. Divide the noodles between two bowls and put the pak choi on top.
  • Wipe out the pan. Add another drizzle of the crispy chilli oil along with about 2 tsp of sediment from the jar. When sizzling, crack in the eggs and fry until crispy around the edge, spooning over the oil as they cook. Slide the fried eggs over the noodles, adding more crispy bits from the jar, if you like.

1/2 medium onion, diced
oil
1/2 teaspoon ground cumin
dark chili powder, to taste (I use about 1/2 Tbsp. for my non-heat-liking husband)
1 (15 ounce) can chili beans, preferably the more juicy kind (like, not thickened, I use Ranch Style brand beans)
1 (14 1/2 ounce) can diced tomatoes, undrained
2 eggs
shredded Mexican blend cheese or cheddar cheese
sour cream
finely chopped green onions or cilantro

Steps:

  • Heat a saucepan over medium to medium-high heat. Add oil to cover the bottom of the pan scantily.
  • Sauté garlic and onions in hot oil until they begin to be done; onions should be becoming clear and soft (about 5 minutes).
  • Add can of beans and its liquid, can of tomatoes and its liquid, and spices. Stir.
  • Cover and heat through until not quite boiling.
  • While heating, break the eggs into a bowl and, with a fork, break the yolks and lightly beat until the yolks and eggs are thoroughly mixed. The eggs should be just slightly frothy.
  • When chili is hot, remove from heat and reduce the heat to low. While off the heat, slowly pour in eggs, stirring as you pour. (Get a good centrifugal motion going before you add the eggs to get this step right.) Egg should cook instantly, giving the soup a creamy look and texture.
  • Return to low heat and heat through, perhaps another 2-3 minutes.
  • Serve topped with any or all garnishes you choose. Or without, your choice.

2 cups peanut oil, or other neutral, high-heat oil, such as safflower
1 cup Sichuan red chile flakes
1 ½ teaspoons Chinese five-spice powder
1 ½ teaspoons kosher salt
4 tablespoons chili oil
4 large eggs
kosher salt, to taste
2 tablespoons fresh dill fronds, roughly chopped
2 tablespoons scallions, thinly sliced
flaky sea salt, to taste
toasted bread, for serving

Steps:

  • Make the chili oil: Add the shallot, garlic, Sichuan peppercorns, bay leaves, cinnamon sticks, and peanut oil to a small saucepan. Cook over medium-low heat until the temperature reaches 215-225°F (101-107°C). Simmer for 30 minutes, until the aromatics are golden brown, but not burnt. The oil should be gently simmering, with tiny bubbles rising to the surface. If the oil gets too hot or the aromatics start to brown too quickly, reduce the heat to low.
  • Add the Sichuan red chili flakes and Chinese five-spice powder to a medium, heatproof bowl. Place a fine-mesh strainer over the bowl. Carefully pour the hot oil through the strainer over the chili flakes and discard the aromatics left behind. Stir in the salt until dissolved. Let the chili oil cool completely before transferring to an airtight container. The chili oil will keep in the refrigerator for up to 6 months.
  • Make the egg skillet: In a 10-inch cast iron skillet, heat 4 tablespoons of chili oil over medium heat until sizzling. Crack the eggs into the skillet and season with kosher salt. Cook for 2-3 minutes, depending on your preferred yolk doneness. Carefully tilt the skillet to distribute the chili oil around the eggs and use a spoon to baste the eggs with the oil.
  • Remove the skillet from heat and top the eggs with the dill, scallions, and flaky sea salt. Serve with toasted bread.
