Skirt steak is the perfect steak for fajitas and is also delicious on its own or coated with a spice rub. Thinly slice it on the diagonal before serving.

4 teaspoons chili powder
2 teaspoons ground coriander
2 teaspoons light-brown sugar
1 teaspoon dried oregano
Coarse salt and ground pepper
2 1/2 to 3 pound beef skirt steak, cut into 8 even pieces
1 tablespoon olive oil

Steps:

  • Heat broiler with rack 4 inches from heat. In a small bowl, combine chili powder, coriander, sugar, oregano, 1 tablespoon coarse salt, and 1/2 teaspoon pepper. Coat steaks evenly on both sides with oil, then spice mixture, patting to adhere.
  • Place half the steaks on a rimmed baking sheet or broiler pan. Broil, without turning, until medium-rare, 5 to 8 minutes, depending on thickness. Transfer to a large platter, and cover with aluminum foil; let rest 10 minutes. Meanwhile, broil remaining steaks; transfer to a large plate, let cool to room temperature, then cover and refrigerate to use later for Steak Sandwich with Peppers.
  • Remove foil and divide steaks among four serving plates. Drizzle with any accumulated juices, and serve with Romaine-Heart Salad.

1 1/2 pounds skirt steak
2 teaspoons olive oil, plus more for grates

Steps:

  • In a small bowl, combine chili powder, cumin, oregano, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Sprinkle mixture over steak; drizzle with oil. Let stand, turning to coat evenly with oil halfway through, about 10 minutes.
  • Heat grill to high; lightly oil grates. Place steak on grill (fold thin end over so steak is an even thickness); cover. Cook, turning once, until meat is desired doneness, 4 to 6 minutes for medium-rare.

We like to prepare these steaks in the broiler throughout the winter months, but you can also prepare them any time on an outdoor grill or in a grill pan.

1/4 cup reduced-fat sour cream
2 tablespoons light mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon chili powder
Coarse salt and fresh ground pepper
2 heads romaine lettuce
1/4 cup chopped scallions

Steps:

  • Heat the broiler with the rack 4 inches from the heat. In a small bowl, combine the chili powder, coriander, sugar, oregano, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Coat the steaks evenly on both sides with the oil, then the spice mixture, patting to help the mixture adhere.
  • Place the steaks on a rimmed baking sheet or broiler pan. Broil the steaks, without turning, until medium-rare, 5 to 8 minutes, depending on the thickness. Transfer the steaks to a large platter and cover with aluminum foil; let rest for 10 minutes.
  • Remove foil and divide steaks among 4 serving plates. Drizzle with any accumulated juices from the platter.
  • In a medium bowl, place the sour cream, mayonnaise, lemon juice, and chili powder; season with salt and pepper. Whisk to combine. Remove the dark outer leaves from each head of romaine, leaving the heart; place leaves in a plastic bag lined with a paper towel and refrigerate for another use. Slice the hearts in half lengthwise. Place one half on each plate; top with the dressing. Sprinkle with the scallions and serve.

1 tablespoon chili powder
2 cloves garlic, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
A pinch cayenne pepper
1 1/4 pound top sirloin steaks cut 1-inch thick
12 small corn tortillas (5 to 6 inches in diameter)
3 cups shredded red cabbage
1/2 cup chopped cilantro leaves
1 lime, cut into wedges
2 cups Avocado Lime Salsa, recipe follows
1 large cucumber peeled, seeded and cut into chunks (about 2 cups)
2 avocados, cut into chunks
1/2 red onion, diced
2 limes, juiced (about 1/4 cup)
Salt
1/4 cup chopped cilantro leaves
2 jalapeno chiles, chopped, plus more to taste

Steps:

  • In a small bowl stir together chili powder, garlic, cinnamon, salt and cayenne pepper. Rub spice mixture on both sides of steaks.
  • Grill or broil steaks for 5 to 6 minutes on each side for medium rare, turning once. Remove from grill and let meat sit for 10 to 15 minutes. Carve into thin slices.
  • Warm tortillas by placing them on the grill, for about 30 seconds, turning once. Or place 6 tortillas at a time between 2 moist paper towels and microwave for 45 seconds. Wrap in cloth napkin or place in a tortilla warmer to keep warm. Place the carved steak, warm tortillas, cabbage, cilantro, lime and Avocado Lime Salsa in serving dishes and let diners make their own tacos at the table.
  • Place cucumber, avocado and onion in a large bowl and add lime juice and salt. Add cilantro and chiles and toss gently.

a 3/4- to 1-pound skirt steak, trimmed
1 tablespoon chili powder
1 teaspoon ground cumin
1 large garlic clove, minced and mashed to a paste with 1 teaspoon coarse salt
2 teaspoons Worcestershire sauce
1 teaspoon sugar
3/4 teaspoon freshly ground black pepper
1/4 teaspoon allspice
1 tablespoon vegetable oil
flour tortillas, warmed, as an accompaniment

Steps:

  • Prepare grill if using.
  • Cut steak into large pieces to fit on a grill or in a ridged grill pan.
  • In a small bowl stir together chili powder, cumin, garlic paste, Worcestershire sauce, sugar, pepper, allspice, and oil and rub all over meat. Marinate meat in a resealable plastic bag, chilled, 20 minutes.
  • Grill steak on a well-oiled rack set about 4 inches over glowing coals or in hot well-seasoned ridged grill pan over moderately high heat 3 to 5 minutes on each side, or until just springy to touch, for medium-rare meat. Let steak stand on a cutting board 5 minutes and cut across grain on the diagonal into thin slices.
  • Serve steak with tortillas.

2 cloves garlic
1 tablespoon plus 1/2 teaspoon coarse salt
2 tablespoons mild chile powder
2 tablespoons light-brown sugar
2 teaspoons smoked or sweet paprika
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
1/2 teaspoon instant espresso powder or very finely ground coffee beans
1 1/2 pounds skirt steak
Eight 6-inch corn or flour tortillas
Tomatillo-Avocado Salsa
Fresh cilantro sprigs, for serving
Grated jack cheese, for serving
Sour cream, for serving
Shredded iceberg lettuce, for serving
Lime wedges, for serving

Steps:

  • On a work surface, crush garlic cloves using the flat side of a large knife; sprinkle with 1/2 teaspoon salt. Place the flat side of the knife blade on top of the garlic and salt; press firmly, pulling knife toward you. Repeat until a paste forms; transfer to a small bowl. Add chile powder, brown sugar, paprika, cumin, pepper, espresso, and remaining tablespoon salt; stir to combine.
  • Rub mixture all over skirt steak, and place in a large freezer bag to marinate for 30 minutes.
  • Preheat oven to 350 degrees. Wrap tortillas in parchment-paper-lined aluminum foil; while grilling steak, bake tortillas until warmed through, 10 to 15 minutes.
  • Preheat grill pan over high heat, or use an outdoor grill. Place steak on grill, and cook for 3 minutes per side for medium-rare. Let rest for 5 minutes before slicing. Serve thinly sliced steak in warmed tortillas; top with salsa, cilantro, cheese, sour cream, lettuce, and lime wedges, if desired.

This was conceived out of necessity! We had this on the menu but not all the ingredients we had ordered had arrived. So we combined a few different recipes and a wonderful feeding fest was had by all. Going to the grocery store to pick up the items is not an option, unless you want to shop for approximately 100 people retail. Am posting the salad with which we served the sandwiches.

1 -2 teaspoon chili powder
2 teaspoons ground coriander
2 teaspoons light brown sugar
3 -4 minced garlic cloves
1 teaspoon oregano
1 tablespoon coarse salt
1/2 teaspoon fresh ground black pepper
1 -2 pinch crushed red pepper flakes
2 1/2-3 lbs skirt steaks, cut into 4-6 equal pieces
1 -2 tablespoon olive oil
1 tablespoon olive oil
1 medium onion, halved and sliced into 1/4-inch slices
1 red bell pepper, thinly sliced lengthwise (ribs and seeds removed)
1 green bell pepper, thinly sliced lengthwise (ribs and seeds removed)
coarse salt, to taste
fresh ground black pepper, to taste
2 tablespoons red wine vinegar
4 italian hoagie rolls, split in half horizontally. (insides torn out to form a hollow)
6 ounces thinly sliced monterey jack pepper cheese

Steps:

  • SKIRT STEAK:.
  • Heat broiler with rack 6" from heat. (Or if you choose, grill them.).
  • In a small bowl, combine chili powder, coriander, sugar, minced garlic, oregano, salt, black pepper and crushed red pepper flakes.
  • Coat steaks evenly on both sides with oil, then spice mixture, patting to adhere.
  • Place half the steaks on a rimmed baking sheet or broiler pan. Broil without turning, until medium-rare, 5-8 minutes, depending on thickness.
  • Transfer to a large platter, and cover with aluminum foil; let rest 10 minutes.
  • Meanwhile, broil remaining steaks; transfer to large platter, let cool to room temperature.
  • Remember to slice across the grain when getting ready to make the sandwiches.
  • SALAD AND THE FIXINGS:.
  • Make dressing: In a medium bowl, place sour cream, mayonnaise, lemon juice, poppy seeds and chili powder; season with salt and pepper. Whisk to combine. (Use a tight fitting-lid jar and combine all ingredients by shaking vigorously - WITH TOP ON! Then keep cool in refrigerator).
  • Remove dark outer leaves from each head of romaine, leaving the heart; place leaves in plastic bag lined with paper towels, and refrigerate for future use.
  • Slice hearts in half lengthwise. When ready, place one half on each plate; top with dressing. Sprinkle with scallions and serve with sandwiches.
  • STEAK SANDWICHES WITH PEPPERS:.

  • Broil until cheese has melted, about 2 minutes.
  • Remove from oven; transfer to a cutting board.
  • Assemble the salad and serve with sandwiches sliced in half.

1 med. onion, chopped fine
1 small green pepper, chopped fine
1 tsp fresh minced garlic
3 cans red beans
2 tbsp good quality chili powder
1 tsp salt
1/2 tsp ground chipotle pepper
1/4 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp ground cumin
1/2 tsp Tabasco sauce (opt)

  • In a heavy pot, sautee the onion and pepper over high heat until the onion starts to brown. Add the seasonings. continue to cook until onion is well browned. Add the meat and garlic. 2 tablespoons chili powder
2 pounds skirt steak

12 homemade or store-bought Homemade Corn Tortillas
Chunky Guacamole with Serrano Peppers

Steps:

  • Lightly oil a grill pan and preheat over medium-high heat.
  • Rub chili powder on both sides of steak and season generously with salt. Place steak on grill pan and cook, turning once, about 5 minutes per side for medium rare. Transfer steak to a cutting board and let stand for 5 minutes.
  • Heat a comal or cast-iron griddle over medium heat. Heat tortillas on comal, 1 or 2 at a time. Transfer to a plate and cover with a clean kitchen towel to keep warm while you warm remaining tortillas.
  • Holding a sharp knife at a 45-degree angle, cut steak across the grain into thin strips. Place a warmed tortilla on work surface; top with 2 or 3 strips of steak and a generous spoonful of guacamole. Repeat process with remaining steak, tortillas, and guacamole; serve.
