Chili-Orange Shrimp with Broccoli Couscous Recipe - (4/5) image

Number Of Ingredients 12

6 ounces broccoli crowns, cut into florets
1 cup couscous
Kosher salt to taste
black pepper to taste
1 large navel orange
1 (1-inch) piece ginger, peeled
1 tablespoon olive oil
20 large shrimp about 16 to 20 count in size
2 cloves garlic, thinly sliced
2 teaspoons chili garlic sauce
1/2 cup roasted cashews, plus more for serving
2 scallions, sliced

Steps:

  • In a food processor, finely chop the broccoli. Transfer to a medium bowl, add the couscous and 1/4 teaspoon each salt and pepper and toss to combine. Pour 1 1/4 cups boiling water over the top, cover and let sit for 10 minutes. Meanwhile, cut away the peel and white pith from the orange. Quarter the orange lengthwise, then slice crosswise. Thinly slice the ginger, stack the slices up, then thinly slice those to create small matchsticks. Heat the oil in a large nonstick skillet over medium heat. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon pepper, place in the skillet and cook for 3 minutes. Turn the shrimp, scatter the garlic and ginger over the top and continue cooking for 1 minute. Add the chili garlic sauce and toss to coat. Add the orange and cashews and cook for 1 more minute. Fluff the broccoli couscous with a fork. Serve the shrimp and cashews over the broccoli couscous and sprinkle with scallions and additional cashews, if desired.

1/2 cup KRAFT Zesty Italian Dressing
1 cup Israeli couscous, uncooked
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 lb. frozen cooked cleaned medium shrimp, thawed
1 cup small broccoli florets
1/2 cup chopped red peppers
1/4 cup chopped red onions
2 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise

Steps:

  • Heat dressing in large skillet on medium heat. Add couscous; cook 3 min. or until lightly toasted, stirring occasionally.
  • Stir in broth. Bring to boil; cover. Simmer on medium-low heat 10 min. or until most the broth is absorbed and couscous is tender.
  • Add shrimp and vegetables; mix well. Cook, covered, 2 min. Remove from heat. Stir in mayo.

2 teaspoons olive oil
1/2 cup onion, chopped
1 green bell pepper, seeded and coarsely chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded and minced
1 tablespoon dried oregano
1 bay leaf
2 tablespoons chili powder
2 teaspoons salt
1 (28 ounce) can diced tomatoes
2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans water
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
1/4 cup uncooked whole wheat couscous

Steps:

  • Heat oil in an large stockpot over medium heat. Add onion, green pepper, garlic and jalapeno and saute 2 minutes.
  • Add herbs and spices and salt.
  • Stir well to coat vegetables.
  • Add tomatoes, broth and beans and bring mixture to a boil.
  • Reduce heat and simmer, uncovered, for 3 minutes.
  • Add couscous and simmer, uncovered, 5 minutes.
  • Discard bay leaf.
  • Ladle chili into boals and top with your favorite toppings.

I originally got this recipe from the food section of the Houston chronicle. We like it because it's quick and easy to make, is fairly low calorie and low fat and VERY tasty!

2 tablespoons olive oil, divided
1 1/2 lbs shrimp, shelled and deveined
coarse salt, to taste
ground black pepper, to taste
1 teaspoon mustard seeds
2 leeks, washed well and cut into 1/2 inch wide strips
2 carrots, peeled and shredded
5 cloves garlic, peeled and thinly sliced
1 cup dry couscous
1 cup frozen baby peas, thawed
2 cups boiling water

Steps:

  • In a large skillet heat 1 T of oil over medium heat.
  • Add the shrimp, season with salt and pepper to taste.
  • Saute', tossing, until just cooked through, about three minutes.
  • Remove from pan with a slotted spoon.
  • Add remaining 1 T oil to the pan along with the mustard seeds and cook until the seeds begin to pop, about 30 seconds.
  • Add the leeks, carrots, and garlic.
  • Cook, stirring often, until the leeks are tender, about 5 minutes.
  • Stir in the couscous, peas, and water.
  • Season lightly with salt and pepper.
  • Remove from the heat and cover.
  • Let stand 5 minutes or until all the liquid has been absorbed and the couscous is tender.
  • Add the shrimp and stir gently.
  • Serve immediately.

2 tablespoons minced seeded jalapeno peppers (about 2 peppers)
2 tablespoons dry sherry
1 1/2 teaspoons paprika
1/2 teaspoon ground red pepper
4 garlic cloves, crushed
1/3 cup water
1/4 cup chili sauce (like Heinz)
2 teaspoons cornstarch
2 teaspoons sugar
1/2 teaspoon salt
1 tablespoon oil
3 cups broccoli florets
4 cups cooked soba noodles (about 8 oz. uncooked buckwheat noodles) or 4 cups vermicelli

Steps:

  • combine the first 6 ingredients in a medium bowl, cover and chill for 1 hour combine water and next 5 ingredients (water through salt) in a bowl, set aside heat oil in a stir fry pan or wok over medium-high heat.
  • add broccoli, stir fry 2 minutes.
  • add shrimp mixture, stir fry 5 minutes or until shrimp are done.
  • add cornstarch mixture, and bring to a boil.
  • cook 1 minute or until sauce thickens.
  • serve over soba noodles.
  • serving size is 1 cup stir fry and 1 cup noodles.

1/2 cup fresh cilantro
1 tablespoon red chili paste
1/4 cup extra virgin olive oil
2 garlic cloves
3 scallions, green parts only, cut into 1-inch pieces
1 chipotle chile in adobo
1/2 teaspoon salt
2 lbs extra-large shrimp, deveined (16 to 20-count size)

Steps:

  • Put the orange juice, cilantro, chili paste, olive oil, garlic, scallion, chipotle, and salt in a blender or food processor fitted with the metal blade and blend until smooth. Should be a thick consistency.
  • Place the shrimp in a resealable freezer bag and pour the orange juice mixture over the shrimp.
  • Chill in a refrigerator for 2 to 3 hours but no longer.
  • Remove the shrimp from the marinade and discard the marinade.
  • Grill the shrimp over medium-high heat until they are opaque in the centers, 3 to 4 minutes per side.

  • Cut the peel and pith off the orange by cutting around the orange and slightly into the flesh. You should only be able to see fruit when you are done. Then cut between the segments of the orange so that you have just the fruit segments and not the white membrane. Set aside. An "easy button" option would be to use a small can of drained Mandarin oranges. But be very gentle when you toss these into the pan because they break down easily.
  • Bring chicken broth to boil. Reduce heat, add couscous, broccoli and salt & pepper to taste. Cover and simmer for 10 minutes, or until done. Check and stir every few minutes to make sure it's not simmering too hard or sticking to the bottom of the pan. Note - if you decide to use instant rice, I would recommend putting the broccoli in the pan with the water and then bringing it to a boil. Since instant rice isn't simmered like regular rice or couscous, this would give the broccoli a little cook time. I haven't tried the rice option. Just making a stab at this variation.
