COWBOY MEATLOAF AND POTATO CASSEROLE

Steps:
- 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
- 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
- 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
- 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.
CREAMY CHEESY CHILI POTATO CASSEROLE
After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling.

- Layer sliced potatoes, chili, cubed cream cheese, cream of mushroom soup, and cheddar cheese in a greased casserole dish.
- Repeat layers (like lasagna).
- Bake covered in a 350 degree oven for 1 1/2 hours.
- Top with additional cheddar cheese and bake uncovered for 10 minutes.
- Allow casserole to set for 20 minutes and serve.

- Mix meat, yellow onions, bread crumbs, barbecue sauce, egg and chili powder just until blended; press onto bottom of 9-inch square baking dish sprayed with cooking spray.
- Bake 20 to 25 min. or until done (160ºF).
- Meanwhile, microwave potatoes as directed on package; place in medium bowl. Add butter, milk, parsley and garlic powder; mix well. Gently stir in bacon and French fried onions.
- Remove baking dish from oven. Heat broiler. Spread potato mixture over meat mixture; top with cheese. Broil, 4 inches from heat, 3 to 5 min. or until cheese is melted.

- In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly; gently press into bottom of 9-inch square baking pan.
- Bake 20 to 25 minutes or until center is no longer pink.
- Carefully pour off drippings.
- Meanwhile in medium bowl, combine all topping ingredients except cheese.
- Spread over meatloaf to edges of pan; sprinkle with cheese.
- Broil 3 to 4 inches from heat for 3 to 5 minutes or until top is lightly browned.
- Cut into 6 rectangular servings.

This recipe has been handed down from my mother-in-law. What makes it so unique, is that it has potatoes in it. This chili recipe has always been a hit with my family.

- In a large saucepan over medium high heat, saute the ground beef and the onions about 5 minutes, or until the onions are almost tender. Drain the fat. Add the pureed tomatoes, kidney beans, potatoes, chili powder, salt and water.
- Reduce heat to low and simmer about 30 minutes, or until potatoes are tender. Add another cup of water if a thinner chili is desired.

Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor.
