2 tablespoons vegetable oil
2 2/3 cups fideos (broken in 1-inch pieces) or 2 2/3 cups vermicelli (broken in 1-inch pieces)
1 cup onion, coarsely chopped
2 garlic cloves, minced
1 cup green chili, diced
1/2 cup fresh tomato, coarsely chopped
3 cups chicken broth
1 1/2 cups chicken, cooked and diced
salt & freshly ground black pepper, to taste
fresh cilantro leaves, minced (optional)
monterey jack cheese, grated (optional)

Steps:

  • In large skillet, heat oil over medium heat.
  • Add fideo and onion.
  • Cook, stirring and turning constantly until the fideo is golden brown and toasted.
  • Add garlic, chiles and tomatoes to fideo mixture.
  • Sauté for 2 minutes.
  • Add broth, chicken and salt and pepper.
  • Heat to boiling; reduce heat to low and cook covered for about 5-7 minutes or until fideo are tender.
  • Remove cover and continue cooking for a few minutes until all liquid is absorbed.
  • Sprinkle with minced cilantro/grated cheese, if desired.

A vibrant chili with 3 types of peppers. Especially good with heirloom beans cooked from dry (Cannellini, Flor de Durazno, Ayocote Blanco). Can be a little spicy depending on your peppers, so decrease the jalapeños if your family likes a milder chili. This can also be made with chicken thighs, but you will need to cook the chicken 20 minutes longer until the thighs reach 175°. Serve with tortilla chips, lime wedges, and sour cream. Adapted from Cooks Illustrated's white chicken chili.

3 lbs bone-in skin-on chicken breasts
1 tablespoon vegetable oil
3 jalapeno chiles, stemmed, seeded, minced, divided
3 poblano chiles, stemmed, seeded, and cut into large pieces
3 anaheim chilies, stemmed, seeded, and cut into large pieces (OR padron, bell, hatch, or other mild-medium chili to equal 1/2 cup)
2 medium onions, cut into large pieces
8 medium garlic cloves, pressed
4 teaspoons ground cumin
1 1/2 teaspoons ground coriander
4 cups cooked cannellini beans
3 cups low sodium chicken broth
3 tablespoons lime juice
1/4 cup minced fresh cilantro leaves
4 scallions, white and green parts sliced thin
salt and pepper

Steps:

  • Season chicken with salt and pepper. Heat oil in large Dutch oven over medium-high heat until just smoking. Add chicken, skin side down, and cook without moving until skin is golden brown, about 4 minutes. Turn chicken and lightly brown on other sides, about 2 minutes each. Transfer chicken to plate; remove and discard skin.
  • While chicken is browning, in food processor, process half of poblano chiles, Anaheim chiles, and onions until consistency of chunky salsa, ten 1-second pulses, scraping down sides of workbowl halfway through. Transfer mixture to medium bowl. Repeat with remaining poblano chiles, Anaheim chiles, and onions; combine with first batch (do not wash food processor blade or workbowl).
  • Pour off all but 1 tablespoon fat from Dutch oven (adding additional vegetable oil if necessary) and reduce heat to medium. Add 2/3 minced jalapeños, chile-onion mixture, garlic, cumin, coriander, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until vegetables soften, about 10 minutes. Remove pot from heat.
  • Transfer 1 cup cooked vegetable mixture to now-empty food processor workbowl. Add 1 cup beans and 1 cup broth and process until smooth, about 20 seconds. Add vegetable-bean mixture, remaining 2 cups broth, and chicken breasts to Dutch oven and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, covered, stirring occasionally, until chicken registers 160 degrees, about 20 minutes.
  • Transfer chicken to large plate. Stir in remaining beans and continue to simmer, uncovered, until beans are heated through and chili has thickened slightly, about 10 minutes.
  • When cool enough to handle, shred chicken into bite-sized pieces, discarding bones. Stir shredded chicken, lime juice, cilantro, scallions, and remaining minced jalapeño into chili and return to simmer. Adjust seasonings with salt and pepper and serve.

Mexican spicy but not too hot with chicken instead of pork. My mother makes this receipe with pork I had to make it with chicken because my husbands does not eat pork. I usually serve this with refried beans and flour tortillas.

10 chicken thighs (bone in or skinless)
10 -12 tomatillos (husks removed & cut in half)
8 garlic cloves
2 jalapenos (without stems)
1 large onion (diced)
1/2 bunch cilantro
2 cups chicken broth
3 1/2 cups water
2 tablespoons cumin
2 tablespoons salt
2 tablespoons pepper
1 tablespoon cayenne pepper
3 tablespoons oil

Steps:

  • Start off by seasoning your chicken on both sides with half of the salt and pepper. If your using bone in chicken cut off skin before seasoning your chicken. Fill a pot with the water and start to boil.
  • Pour Oil into a frying pan and start browning chicken on both sides about 4 minute on each side. You might want to fry only 4 or 5 at a time for an even color. Remember you not cooking the chicken all the way just browning.
  • The pot of water should be boiling at this time, put the tomatillos and jalapenos into the boiling water and boil 12-15 minutes.
  • While the tomatillos and jalapenos are boiling finish browning all of the chicken.
  • Once the tomatillos and jalapenos are ready drain the water and put the tomatillos, jalapenos, cilantro, garlic, and the chicken broth into a blender and start pulsing until all the ingredients are all mixed and then blend for 30-40 seconds. Once blended leave in blender until needed.
  • Pour the remaining oil in a pot (pot should be a good size one you would use for soups) and start frying the onion on med-high heat. After about two minutes put the rest of the salt, pepper, cumin, and cayenne pepper and fry for an additional 5 minutes, add the browned chicken and pour the tomatillo mixture and simmer for 20 minutes.
  • Take out the chicken with tongs and put in to a bowl and start shredding. Once chicken is shredded place back into pot and simmer for another 20 minutes.
  • Note: You do not need to do the last step if you are using boneless chicken just simmer until chicken in fork tender and stir it and the chicken should fall apart. I like to use bone in chicken because I feel it has more falvor than boneless chicken.

During culinary school I worked at a Mexican restaurant in Saranac Lake, NY, called Casa Del Sol. My favorite dish was the Chile Verde. In this version I simmer large chunks of chicken slowly in an exotic green sauce of tomatillos and chilies.

1 whole chicken, cut into 6 pieces
salt and freshly ground black pepper
1 tablespoon vegetable oil
8 tomatillos, husked and quartered
2 fresh jalapeno peppers, chopped
6 cloves garlic
½ bunch cilantro
3 cups chicken stock
1 tablespoon vegetable oil
1 onion, diced
2 tablespoons ground cumin
2 teaspoons dried oregano
1 bay leaf
1 ½ pounds potatoes, peeled and cubed
salt and freshly ground black pepper to taste
½ cup sour cream, for garnish

Steps:

  • Season chicken pieces with salt and black pepper on all sides.
  • Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Cook chicken, 2 to 3 pieces at a time, until browned on all sides, about 15 minutes total. Set aside.
  • Place tomatillos, jalepeno peppers, garlic, cilantro, and chicken stock in a blender and puree until smooth. Set aside.
  • Heat 1 tablespoon vegetable oil over medium-low heat in a Dutch oven. Stir in onion, cook and stir until onion is soft and translucent, about 10 minutes. Stir in cumin, oregano, and bay leaf; cook 1 minute.
  • Place chicken over onion mixture in the Dutch oven. Pour in tomatillo mixture. Bring to a boil, decrease heat to low and simmer, covered, until the meat is tender and falling off the bone, about 1 hour 15 minutes.
  • Stir in potatoes and cook, uncovered, until they are easily pierced with a fork, about 35 minutes.
  • Season with salt and pepper to taste; serve garnished with sour cream.

1 teaspoon ground cumin or chili powder
1 can (15 to 16 ounces) black beans, rinsed and drained
1 can (14 1/2 ounces) diced tomatoes with green chilies, drained
1 can (10 3/4 ounces) condensed cream of chicken soup
1 package (9 ounces) frozen cooked Southwest-seasoned chicken breast strips, thawed and cut in half
1 can (4.5 ounces) Old El Paso™ chopped green chiles, drained
2 1/4 cups Original Bisquick™ mix
2/3 cup milk
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Heat oven to 400°. Mix sour cream, cumin, beans, tomatoes, soup, chicken and chiles. Pour into ungreased square pan, 9x9x2 inches. Bake uncovered 15 minutes.
  • Stir Bisquick mix, milk and cheese until soft dough forms. Drop dough by 12 spoonfuls onto hot chicken mixture.
  • Bake uncovered 18 to 20 minutes or until biscuits are golden brown.

1 whole chicken
2 onions (1 halved, 1 chopped)
1 red pepper, finely chopped
3 -4 cloves garlic
1 tablespoon cumin seed
1 bunch cilantro (about 3/4 cup chopped)
2 cans green chilies
salt and pepper
1 quart water (about)
1 cup canned or jarred tomatillo salsa

Steps:

  • In a fairly shallow soup pot, place chicken, water, 1 onion, halved, 2 cloves garlic, halved, and salt and pepper.
  • Bring to a boil and simmer 1-2 hours until chicken is very tender and falling off bones.
  • Remove chicken, and allow to cool enough to handle.
  • Strain stock, and discard veggies, reserving the stock in the same pot.
  • When chicken is cool enough to handle, shred chicken, by pulling it apart, discarding skin and bones.
  • Add meat to soup pot.
  • Add remaining ingredients and simmer, uncovered, 1 hour, or until desired thickness of sauce is achieved.
  • Serve in burritos with rice, beans, cheese, sour cream and guacamole.

An adaptation of Rachael Ray's Chicken Chili Verde from the Rachael Ray Magazine. I can't find the original on her website any longer. (Or in my recipe collection!) This is a delicious and different version of your standard chili, using salsa verde as its base flavor instead of tomato sauce. We like to eat it with tortilla chips like a hearty dip.

1 1/2 lbs boneless skinless chicken breasts or 1 1/2 lbs boneless skinless chicken thighs
1 (15 ounce) can white beans (cannellini)
1 (8 ounce) can salsa verde
4 cups chicken stock
1 vidalia onions or 1 sweet onion, chopped
1 jalapeno pepper, chopped
1 green bell pepper, chopped
4 garlic cloves, minced
1 teaspoon cumin
2 teaspoons adobo seasoning
1 dash salt (to taste)
1 dash pepper (to taste)
3 sprigs cilantro, chopped
2 tablespoons extra virgin olive oil, EVOO
2 cups tortilla chips (a couple handfuls, reserve the rest of the bag)
1 dash sour cream (optional)
1 dash shredded cheddar cheese (optional)

Steps:

  • Chop all vegetables.
  • Add chicken and stock to a large dutch oven/soup pot. Bring to a boil and poach until chicken is cooked through, about ten minutes. Remove chicken and set aside to cool. Divide stock in half.
  • Meanwhile, in a small sauce pan, add EVOO, onion, jalapeno and bell pepper, cook until softened, five to eight minutes.
  • Once peppers and onions are cooked, add garlic, cumin, adobo, salsa verde and white beans and two cups of the reserved stock. Bring to a simmer.
  • In a food processor, pulse tortilla chips dry until well ground. Use a high speed setting, you want the chips as finely ground as possible. Once ground, add the remaining 2 cups of stock. Combine thoroughly.
  • Transfer vegetable and stock mixture from sauce pan to the soup pot.
  • Shred cooled chicken by hand directly into soup pot. Aim for 1/2 inches to 1 inches sized pieces. Slowly add tortilla chip/stock mixture while stirring. Add Salt, pepper and cilantro.
  • Allow chili to cook down for at least 30 minutes. The longer it cooks, the better the flavors meld and the better it tastes, so this is a great meal to prepare early and leave on the stove. Tastes even better the next day too, if you manage to hold on to your leftovers!
  • Serve in bowls topped with your favorite chili toppings with extra tortilla chips alongside for dipping.
