- Preparing the soufflé dish: Heat oven to 200C/fan 180C/gas 6 and place a baking sheet on the middle shelf. Butter a 15cm soufflé dish generously, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Tip out any excess breadcrumbs.
- Making a thick white sauce: In a pan, melt the butter over a medium heat; stir in the flour and mustard. Cook, stirring, for 1 min. Take off the heat and gradually stir in the milk, mixing it in thoroughly before adding more. Return to the heat and stir continuously until very thick (around 10 mins). Transfer to a bowl and allow to cool. Crack the eggs, placing the whites into a clean bowl and stirring the yolks into the sauce. Stir in cheddar and season well.
- Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
- Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.

- Be sure to use a dish with high sides because souffle will rise and fall slightly. Baking dish will be full.
- Cut slices of bread into 4 triangles and spoon dab of cheese on each.
- Place triangles evenly in layers in sprayed 9x13 inch baking dish.
- Combine eggs, milk, margarine, and salt and mix well.
- Slowly pour mixture over layers of bread.
- Cover and chill for 8 hours.
- Remove from refridgerator about 20 minutes before baking.
- Bake uncovered at 350 degrees for 1 hour.

- Preheat oven to 375°F.
- Generously butter a 1 1/2-quart souffle dish.
- Separate eggs and set aside whites. With whisk lightly beat yolks.
- Add flour, salt, pepper and nutmeg and whisk until well blended.
- Add sour cream and ham, stir.
- In separate bowl, beat whites until they just form stiff peaks, about 2 minutes.
- Fold about 1/4 whites into yolk mix. Pour remaining whites over top and sprinkle the top with cheese.
- Fold everything together until mix is just combined. Don't overmix!
- Pour into souffle dish and bake 35 minutes.
- Serve immediately.

- Butter and sugar eight 6-ounce soufflé dishes, including the rim of each dish.
- In a medium saucepan over high heat, combine milk and vanilla bean with scrapings.
- Bring to a boil, and remove from heat.
- Cover, and let steep for 1 hour.
- Remove bean from milk, and reserve for another use.
- In a medium bowl, combine flour, 1/3 cup granulated sugar, and salt.
- Add 1/2 cup steeped milk, whisking to combine and form a paste.
- Transfer paste to saucepan with milk, and cook over medium heat while whisking constantly until thickened and smooth, about 5 to 8 minutes.
- If the mixture begins to get lumpy, remove from heat, and whisk until smooth.
- Remove saucepan from heat.
- Prepare an ice-water bath: Fill a large bowl with cold water and ice.
- Add egg yolks and vanilla extract to milk mixture, and whisk to combine.
- Transfer soufflé base mixture to a shallow 1-quart container.
- Cover surface directly with plastic wrap to prevent a skin from forming.
- Set saucepan in the ice-water bath to cool completely.
- Refrigerate until ready to use.
- Remove soufflé base from refrigerator, and bring to room temperature, about 1 hour.
- Preheat the oven to 375° with rack in center.
- In the bowl of an electric mixer fitted with the whisk attachment, whip 5 egg whites on low speed with cream of tartar until foamy.
- Gradually add remaining 1/4 cup sugar while slowly increasing the speed of the mixer until it is on high.
- Whip until egg whites are stiff and shiny.
- Gently fold egg whites into the soufflé base in three additions.
- Divide between prepared dishes, gently tap on each dish on the work surface, and place on a baking sheet.
- Transfer to oven, and bake until dark golden and the sides appear spongelike, 16 to 20 minutes.
- Remove from oven, and dust with confectioners' sugar.
- Serve immediately with vanilla bean ice cream.

- Preheat oven to 350 degrees F.
- Prepare 4 (8-ounce) ramekins or a 1 1/2-quart souffle dish by greasing with softened butter and coating with Parmesan.
- Make a thick bechamel sauce base by melting 3 tablespoons butter over low-medium heat in a thick-bottomed saucepan.
- Just as the foam subsides, add the flour, stirring constantly with a wooden spoon or whisk to prevent lumps.
- Cook for 2 to 3 minutes to coat the flour and remove the starchy taste, do not allow to brown.
- Add the hot milk to the roux and continue to whisk until the mixture is smoothly thickened.
- Remove from heat.
- Beat in the egg yolks one at a time.
- Season with salt, pepper, and mustard.
- Stir in the cheese and incorporated evenly.
- Chill while preparing the egg whites.
- In a separate clean bowl, beat the egg whites and cream of tartar just until they hold soft peaks.
- Fold 1/3 of the beaten whites into the bechamel mixture to lighten it.
- Then gently fold in the rest.
- Pour into the prepared ramekins or souffle dish and place on a cookie sheet.
- Bake on the middle rack for about 25 minutes.
- The souffle is done when it has puffed over the rim, the outside is golden and the center giggles slightly.
- Take care not to over bake.
MACARONI SOUFFLE

- Preheat the oven to 300*F. Bring a pan of lightly salted water to a boil and cook the macaroni until al dente, about 8 minutes.
- Melt the butter in a pan. Use a little of it to coat the inside of a 5 cup souffle dish. Coat evenly with the breadcrumbs, shaking out any excess.
- Heat the remaining butter in the pan and stir in the paprika and flour. Cook for 1 minute, stirring. Gradually add the milk, stirring until the sauce boils and thickens. Add the grated cheeses, stirring until melted, then season well.
- Remove the pan from the heat, let the sauce cool slightly, then beat in the egg yolks. Whisk the egg whites until they form soft peaks and spoon 1/4 into the sauce mixture, beating it gently to loosen it up.
- Using a large metal spoon, carefully fold in the rest of the egg whites. Gently fold in the macaroni. Transfer the mixture to the prepared souffle dish. Bake in the center of the oven for about 40-45 minutes, until the souffle has risen and is golden brown. Make sure you serve this as soon as it is cooked or it will sink dramatically. The middle should wobble very slightly. Enjoy!

Stir in the egg yolks, sherry, Gruyère, sour cream, salt, Dijon mustard, dry mustard, cayenne and the remaining 1/4 cup of Parmigiano.
- Put the 7 egg whites in a large stainless steel bowl. Add the cream of tartar. Using an electric mixer, beat the whites until firm peaks form. Fold one-third of the whites into the soufflé base to lighten it, then fold in the remaining whites until no streaks remain.
- Scrape the mixture into the prepared dish. Run your thumb around the inside rim of the dish to wipe away any crumbs. Bake for about 35 minutes, until the soufflé is golden brown and puffed. Serve right away.
