With the creamy tang of yogurt and the spicy fragrance of curry powder, this balanced chickpea dip is sure to be a hit at your next dinner party.

4 tablespoons olive oil
1 medium sweet onion, such as Vidalia, diced small
2 cloves garlic, sliced
2 tablespoons curry powder
2 cans (15.5 ounces each) chickpeas, rinsed and drained
1 cup nonfat plain Greek yogurt
1/4 cup lime juice (from 2 limes)
Salt and pepper
Sliced cucumbers and yogurt, for serving

Steps:

  • In a large skillet, heat 2 tablespoons olive oil over medium-high. Add onion and saute until translucent, 6 to 7 minutes. Add garlic and curry powder and cook until fragrant, 1 minute. Add 1/4 cup water, scraping up browned bits with a wooden spoon.
  • Transfer mixture to a food processor; add chickpeas, yogurt, lime juice, and 2 tablespoons oil. Season with salt and pepper and puree. Serve with a dollop of yogurt and sliced cucumbers.

1 teaspoon coriander seed
6 cardamom pods
2 bay leaves
2 (3 inch) cinnamon sticks

4 garlic cloves, minced
2 teaspoons garam masala
1 cup water
1/2 cup chopped plum tomato (about 1 large)
1/2 teaspoon salt
2 (15 1/2 ounce) cans chickpeas, rinsed and drained (garbanzo beans)
1 cup plain yogurt
1/2 cup chopped fresh cilantro

Steps:

  • Heat oil in a large nonstick skillet over medium heat.
  • Add cumin, coriander, cardamom, bay leaves, and cinnamon sticks; cook 30 seconds or until fragrant, stirring constantly.
  • Add onion, and cook for 2 minutes, stirring frequently.
  • Add ginger and garlic; cook 30 seconds, stirring constantly.
  • Stir in garam masala, and cook 10 seconds, stirring constantly.
  • Stir in 1 cup water, tomato, salt, and chickpeas; bring to a simmer.
  • Cook 5 minutes, stirring occasionally.
  • Remove from heat; discard cinnamon sticks and bay leaves.
  • Stir in yogurt and cilantro.

I made this tasty recipe for lunch today. I really liked it. DH did not care for it as much. I used a hot curry powder, which really gave the dish a nice kick. From the October 2011 issue of "Real Simple." I had to simmer somewhat longer than specified in the recipe to get the consistency that I liked.

2 tablespoons vegetable oil
1 large onion, chopped
4 garlic cloves, chopped
1 tablespoon chopped fresh ginger
2 tablespoons curry powder
2 (15 1/2 ounce) cans chickpeas, rinsed
1 (10 ounce) package frozen chopped spinach, thawed
kosher salt and black pepper
1 cup plain low-fat Greek yogurt
1 cucumber, peeled, seeded, chopped
1/4 cup fresh cilantro, chopped
naan bread, for serving

Steps:

  • Heat the oil in a large saucepan over med-high heat. Add the onion, garlic, and ginger and cook, stirring often, until softened, 5 to 7 minutes. Add the curry powder and cook, stirring, for 1 minute.
  • Add the chickpeas, spinach, 2 cups water, 3/4 tsp salt and 1/4 tsp pepper to the saucepan. Bring to a simmer and cook, stirring occasionally, until the mixture is slightly thickened, 10 to 12 minutes.
  • Meanwhile, in a small bowl, stir together the yogurt, cucumber, cilantro, and 1/4 tsp each salt and pepper. Serve the chickpea mixture with the yogurt sauce and naan.

2 chicken breasts
200ml 0% fat Greek yogurt
2 tsp mild curry powder
juice ½ lemon
small handful mint leaves, most chopped
400g can chickpea , drained and rinsed
100g cherry tomato , quartered
1 small red onion , chopped
1 tbsp peanut , crushed

Steps:

  • Bring a pan of water to the boil. Add the chicken breasts and some salt, then put on the lid. Turn off the heat and leave for 15 mins until cooked through. Drain, then shred the chicken.
  • In a small bowl, mix the yogurt, curry powder, lemon juice, chopped mint and some seasoning.
  • Toss the chicken and chickpeas with half the dressing, and season. Arrange on 2 plates and scatter over the tomatoes, onion, remaining mint and peanuts. Drizzle any extra dressing over the top.

A low-fat curry that's packed with full, fragrant flavour - you can make it in one pot, too

2 onions , quartered
3 fat garlic cloves
3cm/¼in piece fresh root ginger , peeled and roughly chopped
2 tbsp moglai (medium) curry powder
½ tsp turmeric
2 tsp paprika
1 fresh red chilli , seeded and roughly chopped
20g packet fresh coriander
1 chicken stock cube
425ml/¾ pint boiling water
4 skinless boneless chicken fillets (about 500g/1lb 2oz total weight), cubed
410g can chickpea , drained and rinsed
natural low-fat yogurt , basmati rice, naan bread or grilled poppadums, to serve

Steps:

  • Tip the onions, garlic, ginger, ground spices, chilli and half the coriander into a food processor. Add 1 teaspoon salt and blend to a purée. Tip the mixture into a medium saucepan and cook over a low heat for 10 minutes, stirring frequently.
  • Crumble in the stock cube, add the boiling water and return to the boil. Add the chicken, stir, then lower the heat and simmer for 20 minutes until the chicken is tender.
  • Chop the remaining coriander, reserve 2 tablespoons, then stir the remainder into the curry with the chickpeas. Heat through and divide between four bowls. Sprinkle with the reserved coriander and spoon over the yogurt, then serve with basmati rice, naan bread or poppadums.

1 1/2 tablespoons cooking oil or 1 1/2 tablespoons ghee
2 lbs skinless chicken thighs
1 onion, medium diced
3 garlic cloves, crushed
1/2 cup fresh coriander
1 teaspoon grated fresh ginger
1 teaspoon turmeric, ground
1 1/2 teaspoons garam masala, ground
3/4-1 teaspoon chili powder
1/2 teaspoon salt
1/2 cup low-fat yogurt
2 tomatoes, ripe skinned and chopped

Steps:

  • Place onion, ginger, crushed garlic and fresh coriander in blender. Blend as smooth as possible adding a small amount of water if necessary.
  • Heat oil in large pan and fry the blended mixture on low heat for 2-3 minutes. Add turmeric, Garam Masala, salt and chili, fry for a further minute.
  • Stir in yoghurt and tomato; simmer for 5 minutes. Add chicken, turning to coat. Simmer gently for 40 minutes. Thicken if necessary.
  • Serve with rice, and accompaniments.

2 tablespoons butter
3 medium yellow onions, chopped
3 garlic cloves, minced
1/2 teaspoon ground ginger (or 1 inch grated gingerroot)
6 whole cloves
6 whole cardamom pods or 1/2 teaspoon ground cardamom
2 cinnamon sticks or 1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cayenne pepper (optional)
1 teaspoon salt
3 lbs skinless chicken thighs
1 cup nonfat yogurt
2 teaspoons turmeric
1 cup coconut milk
2 tablespoons raisins (optional)

Steps:

  • In a heavy pan, sauté butter, onions and garlic until soft and lightly brown.
  • Add spices, and fry 2-3 minutes, stirring constantly.
  • Add chicken, and brown on all sides.
  • Mix yogurt turmeric, and coconut milk together and add to chicken. Cover with a tight fitting lid and simmer 35-45 minutes until chicken is tender. Remove cinnamon sticks and cardamom pods. Serve hot with rice.
  • Optional: substitute 2 1/2 tsp curry powder for coriander, cumin and cayenne pepper.

This is my personal curry recipe that I've ended up developing over the years. It's very versatile - feel free to add any veggies or meats. All the ingredients can be adjusted to fit your preference. Serve over rice or just eat with naan.

1 tablespoon butter
1 onion, chopped
3 cloves garlic, minced
3 teaspoons curry powder
2 teaspoons garam masala

½ teaspoon white sugar

¼ teaspoon ground turmeric
¼ teaspoon salt
¼ teaspoon pepper
1 (15 ounce) can garbanzo beans, drained
2 potatoes, chopped
1 (14 ounce) can coconut milk
1 tomato, chopped
⅓ cup milk
2 tablespoons ketchup
2 tablespoons sour cream
2 cubes chicken bouillon
¼ cup ground almonds, or as needed

Steps:

  • Melt the butter over medium heat in a large saucepan. Cook and stir the onion and garlic in the melted butter for about 5 minutes, until onion is translucent. Sprinkle in curry powder, garam masala, paprika, sugar, ginger, turmeric, salt, and pepper. Continue to cook and stir 3 to 4 more minutes, until spices are lightly toasted.
  • Mix in the garbanzo beans, potatoes, coconut milk, tomato, milk, ketchup, sour cream, and bouillon cubes. Simmer the curry over medium-low heat for about 25 minutes, until the potatoes are tender. Stir in ground almonds to thicken.

  • Place the onion, garlic, ginger and chillies into a food processor with a little water and blitz to a smooth paste.
  • In a large frying pan gently heat the sunflower oil over a medium heat. Add the paste to the frying pan and gently saute the vegetables for 5 minutes taking care to soften but not colour the paste.
  • Next add in all the dry spices to the vegetable paste and stir thoroughly to combine. Cook out for a minute so that the dry spices begin to release their aroma, but again take care not to burn the spices.
  • Add the creamy Greek yogurt to the spice mix and stir through to form a thick smooth curry paste. next add the tinned tomatoes, the vegetable stock cubs and the drained chickpeas and give everything a good stir. Cook for 10 minutes and if it's looking a little dry add a splash of water to loosen the curry sauce.
