CHICKPEA AND COURGETTE CURRY



Chickpea and courgette curry image

This light and delicious chickpea and courgette curry is perfect for making a dent in a glut of courgettes. Suitable for vegans.

Number Of Ingredients 15

1 tablespoon sunflower oil
1 teaspoon cumin seeds
1 teaspoon yellow mustard seeds
1 onion (finely chopped)
2 cloves of garlic (finely chopped)
1 inch piece ginger (peeled and finely chopped)
1 teaspoon turmeric
2 teaspoon ground coriander
1/2 teaspoon chilli powder (optional)
2 medium courgettes (cut in half lengthways and sliced into half moon shapes)
2 medium tomatoes (chopped)
240 g cooked chickpeas (1 standard 400g tin, drained and rinsed)
1 tablespoon garam masala
Small handful fresh coriander (cilantro) (roughly chopped)
Salt and pepper

Steps:

  • Heat 1 tablespoon sunflower oil in a large frying pan or heavy based saucepan.
  • Add 1 teaspoon mustard seeds and 1 teaspoon cumin seeds. Heat until the mustard seeds begin to pop, then add 1 chopped onion.
  • Stir well and fry for around 10 minutes until the onion is cooked. Add 2 chopped cloves of garlic and a 1 inch piece of chopped ginger. Stir well and cook for a minute.
  • Add 1 teaspoon ground turmeric, 2 teaspoon ground coriander and a pinch of chilli powder if desired. Stir to mix.
  • Add the 2 courgettes cut into half moon shapes. Stir well until mixed in the onion and spice mixture and cook over a low heat for around 10-15 minutes until softened and turning golden brown. If they stick you can add a dash more oil or water. Don't be tempted to add too much water as the courgettes will release extra water as they cook.
  • When soft add the 2 chopped tomatoes and cook for a five minutes until broken down.
  • Drain and rinse a tin of chickpeas and stir through the courgette curry. Cook for a further five minutes.
  • Add 1 tablespoon garam masala. Season to taste with salt and pepper and stir well.
  • Serve with freshly chopped coriander, and rice or naan breads.

2 tablespoons safflower oil
1 medium yellow onion, diced
1-inch piece fresh ginger, peeled and minced
2 cloves garlic, minced
1 small jalapeño, diced, or 1/8 teaspoon ground cayenne pepper
1 teaspoon black mustard seeds
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 15-ounce can diced tomatoes and their juices
1 cup (237 ml) canned coconut milk
1 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
1 15.5-ounce (439 gram) can chickpeas, drained and rinsed
5 small to medium zucchini (about 2 pounds/907 grams), diced
Large handful fresh cilantro leaves, roughly chopped

Steps:

  • Heat the oil for a minute over medium heat in 12-inch lidded frying pan or medium pot. Add the onion and cook, stirring occasionally, until translucent, about five minutes.
  • Add the ginger, garlic, jalapeño or cayenne, mustard seed, cumin, turmeric, coriander, and cinnamon and cook, stirring constantly, for one minute.
  • Add the tomatoes, coconut milk, salt, and pepper and stir well. Raise the heat to high to bring to a boil, then reduce to a brisk simmer.
  • Stir in the chickpeas and zucchini and simmer for about 20 minutes, until zucchini is tender but not falling apart.
  • Remove from heat and stir in cilantro. Serve with basmati rice.

Make our pilaf with lemon, courgette and chickpeas for an easy vegetarian midweek meal. Flavour with cinnamon, cumin and coriander if you have them in your storecupboard

Number Of Ingredients 11

4 tbsp vegetable oil sunflower oil or olive oil, plus a splash
1 onion, finely chopped
4 garlic cloves, finely chopped
½ tsp ground cinnamon (optional)
2 tsp ground cumin
300g long-grain rice
1 lemon, zested and juiced
2 medium courgettes (about 300g), cut into 1cm slices
2 x 400g cans chickpeas, drained
small bunch of dill, roughly chopped, or use mint or parsley
pinch of chilli flakes, or to taste (optional)

Steps:

  • Heat 2 tbsp of the oil in a pan over a medium heat and cook the onion for 8-10 mins until softened. Add the garlic and spices, and cook for 2 mins more until fragrant. Tip in the rice and 450ml boiling water from the kettle along with the lemon zest and ½ tsp salt. Cover, reduce the heat to medium-low and cook for 20 mins, or until all the water has been absorbed and the rice is cooked through. This process can also be done in the oven: cook everything in a flameproof casserole and transfer to the oven once the rice and water has been added, covering and cooking for 20-25 mins at 190C/170C fan/gas 5.
  • Heat the rest of the oil in a second pan over a medium-high heat and fry the courgette slices for 4 mins until slightly coloured and the edges are just softened. Stir in the chickpeas and cook for 2 mins more until warmed through. Season well.
  • When the rice is cooked through, add half the lemon juice and fluff up the rice with a fork. Add the chilli flakes, if using, and chopped dill to the courgette and chickpea mixture. Season well. Stir in the remaining lemon juice and a splash more oil. Serve the rice with the courgettes.

1 tbsp olive oil
2 tbsp ginger, very finely chopped
1½ tsp cumin seeds
1-2 red chillies, deseeded and finely chopped
6 garlic cloves, crushed
450g baby potatoes, thickly sliced
2 tsp ground coriander
1 tsp ground turmeric
4 large vine tomatoes, roughly chopped
1 tbsp tomato purée
200ml stock, made with 1 tsp vegetable bouillon powder
1 cinnamon stick
500g medium-sized courgettes, thickly sliced
15g chopped fresh coriander
1 tbsp olive oil
½-1 tsp brown mustard seeds (optional)
240g brown basmati rice
½-1 tsp turmeric
12 curry leaves (optional)
400g can chickpeas, drained
2 tbsp lemon juice

Steps:

  • Heat the oil in a large frying pan and fry the ginger for 3 mins. Stir in the cumin seeds, chillies and garlic and cook briefly, then add the potatoes, ground coriander and turmeric, and stir well. Tip in the tomatoes, tomato purée and stock, then add the cinnamon, cover, and leave to simmer for 5 mins.
  • Stir in the courgettes, then cover and cook for 10-12 mins until the courgettes are tender rather than soft. Stir in the fresh coriander.
  • Meanwhile, heat the oil in a pan and stir in the mustard seeds, if using, and cook until you hear them pop. Stir in the rice, turmeric and curry leaves, if using, then pour in 1 litre boiling water. Simmer, covered, for 15 mins, then add the chickpeas and lemon juice, cover once again, and cook for 10 mins more until the water has been absorbed and the rice is tender.

8 ounces pasta (preferably thin egg noodles or whole wheat spaghetti)
2 tablespoons oil
1/4 cup chopped onion
2 garlic cloves, minced
1 1/2 cups mushrooms, sliced
2 medium zucchini, sliced
1 large tomatoes, chopped
1 (15 ounce) can chickpeas, drained (about 1 1/2 cups)
1 (6 ounce) can tomato paste (about 2/3 cup)
2 teaspoons of your favorite curry powder, to taste
1 cup water
1/4 teaspoon black pepper
scallion, curled (Slice green part very thin lengthwise. Drop into ice water. Curls will form in about 15 minutes)

Steps:

  • Boil a large pot of water; cook pasta until al dente.
  • While pasta is cooking, heat oil in a saucepan.
  • Add onion, garlic, mushrooms, and zucchini and sauté until zucchini is tender but not mushy.
  • Stir in remaining ingredients and cook over medium heat, covered, for about 8 minutes.
  • When pasta is done, drain well.
  • Spoon vegetables over pasta and garnish with scallion curls.
  • Variations: add 1-2 teaspoons finely minced ginger root and sauté with vegetables. The chickpeas and pasta complement each other to form a complete protein.

COURGETTE CURRY

Scoop out the seeds before slicing and frying the courgettes to achieve a firmer texture in this curry. Nothing is wasted - the seeds bulk out the sauce

3 medium courgettes
2-3 tbsp sunflower oil
1 red onion, halved and finely sliced
1-2 red chillies (depending on preference), finely chopped
40g ginger, peeled and finely grated
4 garlic cloves, finely grated
2 tsp garam masala
1 tsp ground cumin
1 tsp ground turmeric
400g can chickpeas, drained
400g can chopped tomatoes
400g can coconut milk
cooked basmati rice, to serve

Steps:

  • Trim the ends of the courgettes, halve them lengthways and, using a teaspoon, scrape out the watery seeds in the centre (it's fine if you don't get all of them). Roughly slice the courgette halves, then roughly chop the seeds and reserve for later.
  • Heat 2 tbsp oil in a large frying pan over a medium heat and fry the sliced courgettes until golden, about 8-10 mins. Remove from the pan, leaving the oil behind, then add the onion and a further tablespoon of oil if necessary, along with a good pinch each of salt and pepper. Fry for 6-8 mins until soft and just starting to turn a light brown, then tip in the chillies, ginger and garlic, and cook for 2 mins until starting to soften. Stir in the spices and cook for another 30 seconds.
  • Scatter in the chickpeas and pour in the tomatoes, coconut milk and reserved courgette seeds. Simmer over a medium-low heat for 10 mins before adding the courgettes back to the pan and cooking for a further 8-10 mins. Serve with basmati rice and sides of your choice.

With golden aubergine, fresh tomatoes and a fragrant coconut sauce, this veggie curry's a surefire summertime winner

2 aubergines
2 tbsp sunflower oil , plus extra to serve, if you like
1 tbsp brown or black mustard seeds
10-12 curry leaves , plus extra to serve, if you like
2 onions , finely chopped
2 dried chillies , chopped
4 tsp garam masala
2 tsp ground coriander
2 tsp turmeric
400ml can coconut milk
6 tomatoes , quartered
400g can chickpeas , rinsed and drained

Steps:

  • Halve the aubergines, then cut each half into wedges. Heat ½ tbsp oil in a large pan, preferably non-stick, and brown half the aubergines for 2-3 mins on each side until golden brown and crisp all over. Scoop onto a plate, repeat with more oil and the remaining aubergines, then set everything aside.
  • Add the remaining oil to the pan with the mustard seeds and curry leaves and fry for 30 secs until fragrant. Stir in the onions and continue cooking until they are softened and beginning to brown. Add the dried chillies and spices with a spoonful of the thick coconut milk from the top of the can, then fry for 1 min more. Add the remaining coconut milk, tomatoes and half a can of water. Simmer for 25-30 mins until thick and saucy.
  • Stir in the chickpeas and aubergines. Continue simmering for 5 mins or so, until everything is hot and the aubergines are tender. Serve with rice or warm naan bread, scattered with a few extra curry leaves sizzled in a splash of oil, if you like.

2 medium tomatoes (chopped)
1 small onion, sliced
2 green chilies (Hari Mirch, or to taste)

1/2 teaspoon red chili powder (Pisi Lal Mirch)
1 teaspoon grounded coriander (Pisa Dhania)

Steps:

  • Heat the oil in a pot and add the onion and cumin seeds. When they start to crackle, add the courgette slices and chickpeas. Stir and sprinkle with the chilli, coriander and turmeric powder(s). Mix well and add the tomatoes. Sprinkle with salt, the green chilli and fresh coriander.
  • Cover and cook for about 10-12 mins or until done.
