This is a super simple recipe that has a wonderful end result. We really enjoy this one in our family and I love it because it takes me no time in the kitchen to prepare. I serve it over couscous with some sliced red pepper and snow peas for a healthy light meal.

3 -4 chicken breasts (I make the sauce below for three of us but it would stretch to 4 we like things more saucy)
lemon pepper seasoning
olive oil
1 teaspoon fresh ginger, grated
2 red chilies, finely chopped (add as few or as many seeds as you like.)
1 teaspoon finely grated lemon rind
1/2 cup water
1/2 cup dry white wine
100 ml lemon juice
2 teaspoons instant chicken bouillon granules
2 tablespoons honey
1 -2 tablespoon brown sugar (depending on personal taste)
1 teaspoon soy sauce
2 -3 teaspoons cornflour

Steps:

  • Heat some olive oil in a pan, sprinkle both sides of chicken breasts with lemon pepper seasoning, add to pan, cook both sides until browned and cooked through, approx 20-25 Min's.
  • Sauce.
  • While chicken is cooking make sauce.
  • Heat some olive oil in a saucepan, add ginger, chilies and rind, saute for 1 minute.
  • Add water, wine, lemon juice, stock granules, honey and sugar, stir until sugar dissolves.
  • Add soy, mix a little water with the cornflour add to sauce, stir until mixture boils and thickens.
  • To Serve: Slice chicken breasts and serve over rice or couscous or with veg and pour sauce over.

2 tablespoons Italian parsley, finely chopped
2 tablespoons fresh oregano, chopped
1/4 cup dry white wine
1/4 cup olive oil
1 lemon, juice and zest of
2 garlic cloves, finely chopped
1 tablespoon black olives, finely chopped
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 1/4 lbs boneless skinless chicken breasts (4 )
1 cup plain yogurt
1/4 cup sour cream
2 tablespoons fresh parsley, finely chopped
1 garlic clove, finely chopped
salt and pepper

Steps:

  • In a glass dish not too deep, mix all ingredients, except the chicken breasts and yogurt and garlic sauce. Add chicken breasts and flip to coat well. Cover the dish with a plastic wrap and let marinate in the fridge for 2 hours.
  • Set the barbecue to medium-high heat. Put chicken breasts on a greased grill (keep the marinade), close the cover of barbecue and cook for about 7 minutes (baste the chicken breasts with the marinade a few times). Flip the chicken breasts and keep cooking for about 5 minutes or until the chicken is golden and not pink inside. Serve with yogurt and garlic sauce.
  • Yogurt and Garlic Sauce : In a bowl, mix yogurt with sour cream, parsley, garlic. Add salt and pepper. Cover and put in fridge for at least 4 hours.

My husband and I learned to make this lemony chicken entree on a cooking vacation in Italy. The recipe is very quick and easy, yet bursting with flavor and tenderness. The sauce is made by whisking a beaten egg into the reduced liquids. We love it served over a side of pasta to soak up all the lemon-wine sauce.

4 boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
2 tablespoons flour
1 tablespoon butter
1 tablespoon olive oil
1/2 cup white wine
1/2 cup chicken broth (or water and bullion cube)
1/4 cup fresh parsley, chopped
1 large egg, well beaten
1/4 cup fresh lemon juice, freshly squeezed

Steps:

  • Flatten each chicken breast by pounding gently with a flat meat mallet (Hint - pound chicken inside a Ziploc bag - no mess!). Sprinkle flattened breasts with salt and pepper. Then dredge chicken in flour; shake off excess.
  • Heat butter and oil over HIGH heat; just before butter starts to brown, add the chicken pieces and saute quickly to brown, about 3 minutes. Flip and brown other side (3 more minutes). It doesn't need to be totally cooked through because it will cook more in the sauce later.
  • Remove chicken to platter but leave all browned bits in the skillet.
  • Add wine to browned bits in skillet and boil to reduce wine by almost half (about 3 minutes). Add chicken broth and bring to a boil.
  • In a small bowl, whisk together egg and lemon juice. Stir egg/lemon mixture into simmering wine and broth, whisking constantly until sauce is smooth and a little thickened (about 2 minutes). It will thicken more when you put in the chicken breasts which have a flour coating.
  • Add chicken and any juices back into the sauce; allow to simmer about 5 minutes until chicken is cooked through, turning chicken once. Add chopped parsley.
  • Place chicken on platter and pour sauce over top; garnish with lemon slices and additional parsley sprigs.
  • HINT: Please use FRESH lemons and parsley; it has a big impact on the flavor of the dish, and besides, no aspiring Italian chef would consider using otherwise!

I like lots of flavor to my chicken, and as with many other chefs, a high temp to start is the key for a crispy crust. I have a very simple olive oil, butter, parsley, salt and pepper rub and then lots of fruit and onions in the cavity which I feel really helps with the flavor. Rather than a rack, just use a couple of thick onion slices or a couple of celery ribs or carrots. It makes a natural rack and add tons of flavor to the drippings. Take advantage of what you have in your fridge. You can always use a traditional roasting rack if you want. But I think it is key to have it raised off the bottom of the pan.

4 lbs chicken, washed inside and out and patted dry
1 orange, cut in quarters
1 lemon, cut in quarters
1 medium onion, cut in quarters
3 garlic cloves (smashed but not cut)
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon kosher salt (1 half for the skin, 1 half for the cavity)
1 teaspoon ground black pepper (1 half for the skin, 1 half for the cavity)
1 teaspoon dried parsley
1/4 teaspoon cayenne
1 cup chicken broth (optional, to add to the bottom of the pan) or 1 cup water (optional, to add to the bottom of the pan)
1 cup white wine
2 cups chicken broth
1 teaspoon butter
1 teaspoon fresh parsley
1 teaspoon cornstarch (mix with one teaspoon water, will make a slurry to thicken the drippings)

Steps:

  • Prepare -- Clean the chicken, rinse and pat dry. Add 1/2 the salt and pepper into the cavity along with the orange, lemon, onion and garlic.
  • Mix the olive oil, butter, remaining salt and pepper along with the parsley and cayenne pepper. Brush this all over the chicken.
  • I tuck the wings under the chicken and set in a roasting pan on my cut thick onion slices, or celery, or even carrots. If you don't want to use a natural vegetable rack you can use just of baking rack but I just love the flavor the vegetables give the gravy. I do not like to truss or tie my legs together. To me they get done more evenly when not tied.
  • Time to bake -- Now I like to add 1 cup chicken broth or you can just use water in the bottom of the pan. It gives a little moisture along with the dripping from the chicken. Heat the oven to 450 degrees and cook the chicken uncovered for about 20 minutes. Reduce to 375 and cook for another 40-60 minutes depending on the size of your chicken. I always remove when the internal temperature reaches 170-175 and the juices will run clear when you stick a knife or fork in the thigh.
  • Resting -- Make sure you remove from the pan to a plate and cover with foil. Let rest at least 15 minutes. Temperature will rise to 180 easily.
  • Gravy -- First remove most of the grease from the drippings, just use a tablespoon, there shouldn't be too much. Then put the pan on the stove top and on medium heat, deglaze the pan with white wine about 1 cup and scrape up all the drippings. At this point, I still keep all the vegetables I used as the rack still in the pan. Then I add 2 cups of chicken broth and let it reduce 5 or so minutes as the chicken continues to rest.
  • I finish by adding a teaspoon of butter and then thickening just a bit with corn starch mixed with just a little water (a slurry) just lightly, I don't want it too thick, and then strain the gravy. I then add a little parsley right at the end (optional). And drizzle over the cut up roasted chicken. It is perfection.

  • Drain excess fat.
  • Pour chicken marinade (aka. white wine worcestershire sauce over all. Cook 15 minutes more, basting occasionally, until chicken and vegetables are tender.
  • Stir in yogurt or cream and warm through.

8 chicken thighs, skinless and boneless
2 tablespoons olive oil
1/4 cup white wine vinegar
2 tablespoons dry white wine
2 tablespoons lemon juice
1 tablespoon garlic, minced
1 teaspoon Dijon mustard (heaping)
1/2 tablespoon lemon pepper
1/2 teaspoon salt
1/2 teaspoon tarragon
1/2 teaspoon oregano
1/2 teaspoon sweet basil
1/4 teaspoon sugar

Steps:

  • Combine the ingredients in a zip lock bag and add the chicken. Remove all the air and flatten the chicken. Put it on a cookie sheet to keep the chicken flat and freeze.
  • To thaw: Place the chicken in a sink with tempid water and let it sit for 20 - 30 minutes. Once thawed (or almost thawed) remove from the water and place in the fridge. You do not want the chicken to come to room temperature for fear of bacteria setting in.
  • Preheat barbecue.
  • Place the chicken on the barbecue and cook for 12 - 15 minutes or until done.
