Lebanese Chicken with 7-Spice image

Lebanese Chicken with 7-spice, caramelized onions, almonds, and roasted lemon. A simple flavorful Lebanese-inspired dinner, with only 15 minutes of hands-on time. See notes for grilling!

2 lbs chicken, skin on, bone-in thighs or legs (see notes, for boneless, skinless options )
2 tablespoons olive oil
2 1/2 teaspoons salt (use 1 teaspoon salt per pound of chicken plus an extra 1/2 teaspoon for the onions)
1-2 teaspoons cracked pepper
2 tablespoons Lebanese 7-spice ( see below)
1 extra-large red onion, sliced into 1/2 inch wedges
4 garlic cloves, rough chopped
1 tablespoon preserved lemon, chopped (totally optional)
1 lemon, sliced thinly

1/4 cup Marcona almonds, or slivered almonds or pinenuts
parsley for garnish
1 teaspoon cumin
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon coriander
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/4 teaspoon cardamom

Steps:

  • Preheat oven to 400 F (see notes for grilling)
  • Place the chicken in a bowl and toss with olive oil, salt, and 7-spice mix. Add onion, garlic, preserved lemon and sliced lemon and toss again well. Spread out on a parchment-lined sheet-pan.
  • Bake for 35-45 minutes- or until cooked through. Broil for a few minutes to get the skin crispy and nicely golden, turning if necessary (especially if using skin-on chicken)
  • While the chicken is baking, warm and toast the almonds/pinenuts in a little butter or olive oil. Season with salt and pepper. Set aside.
  • Place the fragrant chicken on a platter, scattering with the onions and lemon slices (which are edible.) Pour any juices from the pan, over top. Garnish with the toasted nuts and sprinkle with a few parsley leaves.

This spiced chicken was made with all the simple ingredients you can find in your kitchen. The newest addition to my spice collection is ground onion. That spice is like a cure to any kitchen meal, it is everything. Also, who says NO to paprika, ginger, rosemary, thyme and garlic? If you know how to combine your spices well, then you will not have any problem with what you use them on.

6-8 Chicken thigh
1 tsp ground onion
2 tsp paprika (substitute with smoky paprika)
1 tsp ginger
1 tsp garlic
Chilli flakes
1 tsp Thyme
Salt
½ tsp rosemary
2 tbsp vegetable oil
2 tbsp butter
Lime to garnish

Steps:

  • Wash and pat chicken dry, set aside
  • Combine all the ingredients listed above except the butter into a bowl, add the oil and mix together to form crumbs
  • Rub the mixed spices on the chicken (give it a good massage)
  • Leave the chicken to marinade for an hour or overnight preferably
  • On the day, preheat the oven at 220C/428°F
  • Place a pan on medium heat, add 2 tbsp of butter and melt (do not let it burn) add the chicken to the melted butter and seal on both sides for about 3 minutes each.
  • Transfer the chicken to a baking tray and roast for 45 minutes or according to the pack or weight of the chicken
  • Alternatively, cook on an open fire. You will thank me later, this spiced chicken is insanely good.

This chicken creates quite an aroma while roasting! You can leave the skin on and just peel it back to rub the spices on the chicken.

1 (2 1/2-3 lb) chicken (whole)
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground turmeric
1/4 teaspoon paprika
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375.
  • Remove chicken skin. Rinse chicken and pat dry. Remove giblets and neck.
  • Lightly spray the inside of a roasting back with nonstick cooking spray. Place chicken, breast side up, in the plastic oven bag in a shallow roasting pan.
  • In a small bowl, stir together remaining ingredients. Rub this mixture evenly over chicken.
  • Tie the oven bag closed.
  • Roast in oven 1 to 1 1/4 hours, or until chicken is tender and no longer pink.

1 tablespoon paprika

1 package lipton cup tomato soup mix

Steps:

  • Place all ingredients in blender and pulse for 3-4 minutes to grind well.
  • Store in an airtight container.
  • Makes about 3/4 cup.
  • To use with flour, add 1 oz mix to 1 cup of flour for coating chicken.

2 tablespoons dry mustard
4 teaspoons paprika

1 teaspoon ground ginger
½ teaspoon dried basil
½ teaspoon dried oregano

Steps:

  • In a medium bowl, stir together the flour, salt, celery salt, pepper, dry mustard, paprika, garlic powder, thyme, savory, ginger, basil and oregano. Keep mixture in an airtight container.
  • To use: Steam chicken until tender, dip pieces in beaten egg then roll in the spice mixture. Deep fry for 3 minutes on each side.

2 eggs
8 chicken drumsticks
8 ½ cups vegetable oil
2 cups flour
2 teaspoons salt
½ tablespoon dried thyme
½ tablespoon dried basil

½ tablespoon black pepper
1 tablespoon mustard powder
2 tablespoons paprika
2 tablespoons garlic salt

Steps:

  • Beat the eggs into the buttermilk.
  • Add the chicken pieces to the buttermilk mixture and chill for an hour.
  • In a large mixing bowl, mix the flour with all the herbs and spices.
  • Coat the soaked chicken pieces in the herbed flour mixture, shaking off any excess.
  • Heat oil in a large sauce pan to 325˚F (170°C), then turn to low heat.
  • Fry the chicken in batches for 15 minutes until the chicken is cooked and the skins turn golden brown.
  • Transfer to a paper towel-lined plate.
