4 chicken breast halves with skin and bones (about 2 1/2 pounds total)
1/4 pound chilled Gorgonzola dolce, sliced
1 tablespoon vegetable oil
1/3 cup water
2 1/2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Pat chicken dry, then cut a deep 3-inch-long pocket horizontally in long curved side of each chicken breast half. Fill each pocket with one quarter of cheese. Season chicken all over with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat oil in an ovenproof 12-inch heavy skillet over medium-high heat until it shimmers. Place chicken, skin side down, in skillet and cook, undisturbed, until golden brown, about 4 minutes. Turn breasts over, then place skillet in oven and bake until just cooked through, 20 to 25 minutes. Transfer chicken to a platter.
  • Return skillet to burner (handle will be very hot) and add water and vinegar. Boil, stirring and scraping up any brown bits and melted cheese, until sauce thickens slightly, about 3 minutes. Strain through a fine-mesh sieve into a heatproof measuring cup, then skim off excess fat. Season with salt and pepper. Serve chicken with sauce.

1/2 teaspoon freshly ground black pepper
3 large cloves garlic, minced
Chicken:
One 6 1/4-pound chicken, rinsed and patted dry
Kosher salt and freshly ground black pepper
1 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
6 baby red potatoes, halved
4 medium carrots, peeled and halved lengthwise
2 large parsnips, peeled and quartered lengthwise
2 large shallots (about 8 ounces), peeled and halved
1 clove garlic, peeled
1/2 cup low-salt chicken broth
5 sprigs fresh rosemary
5 sprigs fresh thyme
1 lemon, quartered
Vegetables:
3 tablespoons extra-virgin olive oil
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme

Steps:

  • Position an oven rack just below the center of the oven. Preheat the oven to 400 degrees F.
  • For the butter: In a small bowl, combine the butter, rosemary, thyme, lemon juice, salt, pepper and garlic until smooth.
  • For the chicken: Tuck the wings under the chicken. Sprinkle the cavity of the chicken with salt and pepper. Spoon 2 tablespoons of the butter mixture into the cavity. Place the rosemary, thyme and lemon quarters in the cavity. Tie the legs together loosely with kitchen string. Place the chicken in a large roasting pan.
  • Starting at the neck end of the chicken, loosen the skin over the entire chicken breast. Smear the remaining butter mixture over the outside and under the skin of the chicken, being careful not to tear the skin.
  • For the vegetables: In a large bowl, toss together the oil, rosemary, thyme, salt, pepper, potatoes, carrots, parsnips, shallots and garlic.
  • Arrange the vegetables around the chicken in a single layer. Add the broth and roast until the vegetables are tender and an instant-read thermometer inserted into the thickest part of the chicken thigh registers 160 to 165 degrees F, about 1 1/2 hours. Let the chicken rest for 20 minutes.
  • Transfer the chicken to a platter. Arrange the vegetables around the chicken. Scrape the contents of the roaster into a 4-cup measuring cup. Spoon off the layer of fat that rises to the top. Season the pan juices with salt and pepper, if needed. Serve the chicken with the pan juices.

1 (1.8-ounce) packet white sauce mix
2 1/4 cups milk
6 roasted garlic cloves, minced or pressed
6 ounces Gorgonzola crumbles
1 store-bought roasted chicken (approximately 2 pounds), shredded
2 tablespoons chopped fresh parsley leaves

Steps:

  • To a large pot of boiling salted water, add gnocchi and cook for 3 to 4 minutes or until they float to the surface. Drain and return to pot; cover to keep warm.

1 tablespoon olive oil
3 tablespoons unsalted butter
3 shallots, minced
16 ounces farfalle pasta, fusilli or 16 ounces penne pasta
1/2 cup chicken stock
8 ounces gorgonzola, rind removed, cut into small pieces
3/4 cup heavy cream
1 lemon, zest of, grated
salt & freshly ground black pepper
6 fresh sage leaves, coarsely chopped

Steps:

  • Bring a large pot of water to a boil. Generously salt the boiling water, add the pasta and cook until al dente, 9-11 minutes; drain.
  • In the meantime, season cubed chicken with salt and pepper. In a large frying pan, heat olive oil. Saute chicken breasts until cooked through. Set aside.
  • In the same pan used for chicken breasts, melt the butter. Add the shallots and saute until soft, about 4 minutes.
  • Reduce the heat under the frying pan to low and add the stock, cheese, cream and lemon zest. Season with salt and pepper to taste and stir until all the ingredients are smooth and melted, about 4 minutes.
  • Add the pasta to the frying pan. Remove from the heat. Add the chicken and sage; toss briefly until the pasta is well coated with the sauce. If the sauce seems too thick, add a bit more chicken stock or a splash of hot water. Pour into a large, shallow bowl. Serve immediately.

1 boneless skinless chicken breast
2 garlic cloves, rough chopped
1 1/2 cups chicken broth
1 cup water
0.5 (16 ounce) package of dry rigatoni pasta
2 quarts water
1/2 tablespoon olive oil (or so)
3 tablespoons chopped onions (or more if you like)
1/2 cup diced red bell peppers or 1/2 cup other vegetables
1/2 cup fresh sliced mushrooms
6 tablespoons prepared pesto sauce
3 tablespoons gorgonzola (or to taste)
salt and pepper

Steps:

  • Bring the broth and water to a simmer along with the garlic pieces.
  • Heat the oven to 350 degrees.
  • Add the chicken breast to the broth combo and simmer for 15 minutes.
  • Pull the chicken out and let it cool enough to handle. Reserve the broth/water mixture to use later.
  • Heat the water and cook the pasta according to package directions. Drain and place in a 2 quart casserole that has been oiled.
  • Saute the onion, bell peppers till soft and add the mushrooms and cook till they loose their moisture. Add salt and pepper to taste.
  • Spoon the vegetables over the pasta.
  • Pull the chicken into small bits and lay on top of the pasta and veg. Sprinkle the gorgonzola over the chicken mix.
  • Spoon the pesto sauce over the chicken and pasta.
  • Toss to combine.
  • Spoon a few tablespoons of reserved chicken/water broth over all so that there will be a little moisture in the bottom of the dish.
  • Place in the oven covered for 15 - 20 minutes just to warm though and melt the cheese.

4 red potatoes, cut into large cubes
1 (16 ounce) package carrots, cut diagonally into bite-size pieces

flour (for dredging)
2 eggs, beaten with
1 tablespoon parmesan cheese
1 cup seasoned bread crumbs
4 ounces gorgonzola, cheese--shredded
2 tablespoons mayonnaise
vegetable oil (for frying)

Steps:

  • Salt and pepper each side of chicken.
  • dredge seasoned chicken in flour.
  • dip floured chicken into egg mixture shaking off excess.
  • coat with breadcrumbs.
  • Fry each piece of chicken in oil until cooked and golden brown--about 5 minutes each side depending on thickness.
  • Combine cheese and mayo.
  • Spread each piece of chicken with cheese mixture leaving a 1/8" border all around.
  • Place chicken on cookie sheet and run under broiler until cheese is bubbly about one minute.

  • Pound chicken breasts until they are 1/2 inch thick season with salt and pepper. Sear chicken in a hot skillet with two tablespoons of oil over medium-high heat.
  • Cook on each side for about 4 to 5 minutes or until completely cooked. Remove chicken breasts from heat, and let rest for several minutes before slicing. You may need to add an additional tablespoon of butter or two to the saucepan to saute the mushrooms.
  • Saute the mushrooms on medium-high heat until they are browned. While mushrooms are browning sprinkle with about 1/2 teaspoon of salt. Cook pasta according to instructions on the package. Johnny Carino's typically uses penne pasta, but I like to use a fettuccine pasta because I think it holds the sauce better.
  • Prepare sauce by combining half and half and Gorgonzola in a saucepan heating through. The sauce should thicken slightly. Slice chicken into 1/4 inch slices. Add sauteed mushrooms to the sauce, and stir to combine well. Plate pasta by adding 1/4 of the pasta, 1/4 of the chicken slices.
