Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

- Heat a medium pan over medium-high heat. Add olive oil and chicken and season with salt and pepper. Saute a couple of minutes then add onion and chives and cook another 6 minutes until onions are tender and chicken is cooked through. Turn off heat and reserve.
- In a separate pot boil water, add pasta and salt. Cook 5 minutes, then add broccoli and cook 3 minutes more or until pasta is cooked to al dente and the broccoli is just tender.
- Meanwhile, heat a large pot over medium heat. Add butter and melt, then add flour, cayenne and garlic and whisk together over heat until it thickens, then cook a minute more. Whisk in milk, heavy cream and stock and raise heat to bring the sauce to a quick boil. Simmer until the sauce thickens about 5 minutes.
- Drain macaroni and broccoli florets. Add back to the pot and add chicken to the pasta and broccoli.
- Add cheese to milk sauce and stir. Pour sauce over pasta and stir to combine.
- Put pasta in a 9" x 13" glass baking pan. Sprinkle with the shredded cheese and broil for 5 minutes.

- Bring a large pot of salted water to a boil. Add the macaroni and broccoli and cook for 5 minutes; the pasta will only be about halfway cooked. Reserve 1 cup of the cooking water, then drain the pasta and broccoli and return them to the pot.
- Meanwhile, sprinkle the chicken with salt and pepper. Heat 1 tablespoon of the butter in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, 5 to 7 minutes; set aside.
- Put the pot with the pasta and broccoli over low heat. Stir in the milk, flour, mustard, Worcestershire, 1 teaspoon salt and the remaining 1 tablespoon butter. Bring to a simmer and cook, stirring, until the sauce thickens and the pasta is al dente, 3 to 5 minutes. Turn off the heat, add the Cheddar, Pecorino-Romano, Parmesan, cooked chicken and 1/4 cup of the reserved cooking water and stir until the cheese melts. Gradually add the remaining cooking water as needed until the pasta is creamy and saucy. Serve hot.

- Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. - Preheat oven to 350.
- Heat about 1 tbsp olive oil in a large saucepan over Medium/High heat. Add chicken to the pan and saute until done, seasoning with salt and pepper if preferred.
- If broccoli florets are not already cooked and chopped, do this now. You can buy frozen chopped broccoli to save time.
- Add chicken and broccoli to the already cooked macaroni pasta. Toss to make sure it is well mixed.
- In a medium mixing bowl, combine the cheddar cheese soup, evaporated milk, sour cream, milk, Parmesan and seasoned salt. Add the butter after everything else is mixed.
- Cover with plastic wrap and cut a few slits in the top to vent.
- Microwave for 4 minutes to melt butter and heat the rest of the soup mixture. Make sure butter is melted when finished. If not, stir and microwave for another minute or two.
- To assemble the macaroni, layer 1/2 of the macaroni/chicken/broccoli mixture in the bottom of a sprayed 9x13 glass baking dish. Top with half of the cheese soup mixture. Top with half of the shredded cheese.
- Repeat all three layers one more time.
- Bake, uncovered, for 25 minutes or until the edges are bubbly and the cheese on top is melted. If the top is already browned, skip the next step.
- Turn oven to BROIL and allow macaroni to remain in the oven for 5 minutes until the cheese on top is lightly browned. You may even want to keep the oven door open a crack to watch the top and make sure it doesn't burn.
- You can make this a day or two ahead of time, cover with plastic wrap and keep in the fridge until you are ready to bake it. Just remove it from the fridge about 45 minutes before baking so it comes up to room temperature and cooks evenly.
CHICKEN PARMESAN, PASTA AND BROCCOLI

- Sprinkle both sides of chicken breasts with sea salt & fresh ground pepper.
- Cut chicken into strips or cubes, your preference.
- Preheat a large heavy fry pan or electric fry pan to medium high.
- Heat oil in pan, lightly brown meat, remove from pan (I use the lid of my electric fry pan, it's deep enough and less dishes too :D ).
- Saute minced garlic for approximately 2 minutes.
- Add chicken broth to pan (you can substitute milk for a lower fat content) and deglaze chicken bits from bottom of pan.
- Add can of cheddar cheese soup and stir well.
- Stir in chicken pieces and broccoli florets (if using frozen, thaw broccoli and save until last 5 minutes of simmer time).
- Reduce heat, cover pan and simmer for 20 minutes, stirring occasionally (remember to add the thawed broccoli after 15 minutes if using frozen).
- Uncover pan, increase heat to medium, stir in shredded swiss cheese and cook an additional 5 minutes, reducing sauce. You can also add 80- 125 ml (1/3 to 1/2 cup) of half an half at this point for a creamier sauce).
- Serve over noodles or rice.

- In a larger pot, cook finely chopped onion in hot oil until translucent.
- Add sliced chicken breasts and stir until the meat turns pale.
- Season the meat and let it braise on a lower flame for about 20 minutes. During braising, check the meat, stir it occasionally, and, if necessary, add a little water. Then salt the meat to taste.

- Preheat the oven to 350°F. Spray a 9x13 casserole dish with non-stick cooking spray and set aside.
- In a large stockpot or Dutch oven, heat butter over medium until melted.
- Add onion powder, garlic powder, salt, pepper, and bouillon to the butter and saute for 1 to 2 minutes.
- Whisk in water and the half and half cream.
- Dissolve 4 tablespoons cornstarch in 4 tablespoons of water to make a slurry, and then whisk this slurry into the filling mixture in the pot.
- Whisk and cook over medium heat until the mixture comes to a simmer and begins to thicken.
- Stir in broccoli florets and cook 1 to 2 minutes longer.
- Spread cooked noodles and diced chicken evenly in the prepared casserole dish.

- Bake, covered with aluminum foil, for 30 minutes or until broccoli is fork-tender. Remove from the oven.

- Preheat the oven to 425 °F.
- Generously and evenly, season the chicken on both sides with some salt and pepper, ¼ teaspoon of paprika and ½ teaspoon of garlic powder.
- Use a sharp knife to slice through the middle of 3 chicken breasts taking care to not cut all the way through and just creating a pocket to stuff and fill.
- In a microwave safe bowl, combine 1 cup of finely chopped broccoli florets and 2 tablespoons of water. Cover with plastic wrap and cook in the microwave for about 1 minute. Drain excess water.
- Add the ½ cup of finely diced bell pepper, 1 cup of mild Cheddar cheese, 1 tablespoon of mayonnaise, remaining teaspoon garlic powder, and salt and pepper to taste. Mix everything together until well combined.
- Divide the stuffing mixture between the 3 chicken breasts, to fill. If necessary, use toothpick to secure the pocket.
- In a large ovenproof skillet over medium heat, heat 2 tablespoons of olive oil and add the stuffed chicken breasts. Cook for about 3-4 minutes on each side, to sear.
- Cover the skillet with silver aluminum foil and bake in the preheated oven for about 15-17 minutes until the center of the chicken reads 165 °F on a thermometer.
- Allow to rest for about 5 minutes before serving.

- Bring a large pot of water to a boil over high heat. Season the water generously with salt. Cook the pasta for 2 minutes less than the package directions indicate, about 6 minutes. - Place a pot of water on to boil for macaroni.
- To boiling pasta water, add pasta and salt to season the cooking water. Cook 5 minutes,then add broccoli and cook 3 minutes more or until pasta is cooked to al dente and florets are just tender.
- Heat a medium pan over medium high heat. Add extra-virgin olive oil and chicken and season with salt and pepper. Saute a couple of minutes then add onion and cook another 5 to 7 minutes until onions are tender and chicken is cooked through.
- Turn off heat and reserve.
- While pasta cooks,heat a medium sauce pot over medium heat. Add butter and melt,then add flour,cayenne and paprika and whisk together over heat until roux bubbles then cook a minute more. Whisk in milk and stock and raise heat a little to bring sauce to a quick boil. Simmer sauce to thicken about 5 minutes.
- Drain macaroni or pasta and broccoli florets. Add back to pot and add chicken to the pasta and broccoli.
- Add cheese to milk sauce and stir to melt it in,about a minute or so. Stir in mustard and season sauce with salt and pepper. Pour sauce over chicken and broccoli and cooked pasta and stir to combine. Adjust seasonings,transfer to a large serving platter and serve.
