BALSAMIC CHICKEN SKILLET WITH MIXED BERRY SAUCE
Sweet, savory, with a little kick. This marinade and sauce goes great with both chicken or pork, on the stove, in the oven, or on the grill.

Steps:
- Combine berries, vinegar, whiskey, mustard, lemon juice, honey, brown sugar, ginger, shallot, and cayenne pepper in a blender; blend until smooth.
- Place chicken in a resealable plastic bag. Add 1/2 of the berry marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 4 hours to overnight. Reserve the remaining berry sauce.
- Remove chicken from the refrigerator. Heat oil in a large skillet over medium-high heat. Place chicken in the hot skillet and brown on both sides, basting occasionally with the extra marinade. Cook until chicken is no longer pink and juices run clear, about 15 minutes; discard any remaining marinade. Remove from the heat, and let rest for 3 minutes.
- Meanwhile, pour the reserved berry sauce in a small saucepan and bring to a simmer over medium-low heat.
- Slice chicken into 1/2-inch thick slices and spoon warmed berry sauce over top.

Steps:
- Place chicken in caserole dish.
- Put sliced mushrooms over chicken.
- To make sauce: Mix soup, sour cream, sherry, salt and pepper in a bowl until smooth.
- Pour souce over the chicken and mushrooms.
- Sprinkle the top with the almonds and paprika.
- Bake uncovered at 325 degrees for 1 1/2 hours or until done.

Steps:
- In a large saute pan brown chicken breasts in a 1/4 Cup butter, continue saueting until cooked through- about 10- 12 minutes.
- Season with salt, pepper and nutmeg- set aside on a large platter keeping warm Saute ham slices in pan juices, set aside with chicken.
- Using same saute pan heat 1/4 butter saute mushrooms till shiny, sprinkle with lemon juice, slowly cook for about 2 minutes- set aside with chicken and ham Heat remaining 1/4 Cup butter in saute pan, add onion cooking until tender.
- Blend into sauteed onions 2 Cups of broth, wine and perserves.
- stirring well and cooking 5 minutes.
- reseason with any additional salt, pepper or nutmeg to your taste.
- Blend cornstarch into remaining cold broth.
- Add to sauce, cook and stir until thickened.
- On a bed of cooked rice top with a chiken breast, ham slice and mushrooms.
- Top with sauce.
- Garnish with parsley.

- Preheat oven to 350°. Sprinkle chicken with salt and pepper. In a large cast-iron or other ovenproof skillet, heat 2 tablespoons butter over medium-high heat. Brown chicken on both sides. Bake until a thermometer reads 165°, 12-15 minutes., Meanwhile, in a small saucepan, combine wine and sugar. Bring to a boil; cook, uncovered, until liquid is reduced by half, 4-5 minutes. Reduce heat to low; whisk in remaining butter, 1 tablespoon at a time, until blended. Stir in cherries; serve with chicken.

- Season chicken with salt and pepper. Heat large skillet or large heavy-bottomed saucepan over medium-high heat. Add oil, swirl to coat, and, once shimmering, place chicken in pan. Cook until browned on bottom side, flip and sear until browned on the other side, about 4 minutes total.
- Remove chicken from pan and set aside. Add shallot, garlic, and mustard seeds (if using) to pan; heat for 1 minute, stirring often. Place broth in skillet and scrape up any brown bits from bottom of pan. Add berries, thyme, vinegar, cayenne, and cinnamon to pan.
