¼ cup milk
¼ cup bread crumbs
1 pound skinless, boneless chicken breast halves
3 tablespoons butter
½ cup chicken broth
1 cup heavy whipping cream
1 (4 ounce) jar sliced pimento peppers, drained
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
⅛ teaspoon ground black pepper

Steps:

  • Place milk and breadcrumbs in separate shallow bowls. Dip chicken in the milk, then coat with breadcrumbs. In a skillet over medium heat, fry chicken in butter or margarine, on both sides, until the juices run clear. Remove from skillet and keep warm.
  • Add the broth to the skillet; bring to a boil over medium heat. Stir to loosen browned bits from pan. Stir in the cream and pimentos; boil and stir for one minute. Reduce heat; add the Parmesan cheese, basil and black pepper. Simmer and stir until heated through. To serve, pour the sauce over the chicken.

3 Limes juice and zest (Divided)
3 tablespoon Olive Oil
1/4 Cup Extra Virgin Olive Oil
3 tablespoon Dijon Mustard
3 tablespoon Worcestershire Sauce
3 tablespoon Soy Sauce
6 Green Onions (Chopped, Divided)
4 Cloves Garlic Minced (Divided)
2 tablespoon Basil (Chopped )

Steps:

  • Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 green onions, 2 garlic cloves, salt and pepper to taste.
  • Mix well.
  • Place chicken in a gallon sized baggie.
  • Pour marinade over the chicken and marinate for at least 1 hour to overnight.
  • Remove chicken from bag and place in a 6 quart slow cooker.
  • Discard bag and juices.
  • Slow cook chicken for 2-3 hours on high or 4-5 hours on low.
  • Meanwhile combine juice and zest of one lime with extra virgin olive oil, 3 chopped onions, 2 minced garlic cloves and basil to make a dressing.
  • Plate chicken and pour dressing over top before serving.

2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.

In one bowl beat 2 eggs, while the other bowl should mix the dry ingredients. Dip pieces of chicken in the egg and then cover in flour/cornstarch. Set on an extra plate. Add a thin layer of oil to a frying pan and turn your stove on medium/high heat. Once it sizzles, add half the chicken to the pan then cook the other half so they cook evenly. Steps:

  • In a medium saucepan, bring the chicken stock and butter to a boil, then stir in the rice and return to a boil. Lower the heat, cover and simmer until tender, 16 to 18 minutes. Fluff with a fork.
  • When the rice is about ready, heat a thin layer of oil, about 1 1/2 tbsp., in a large nonstick skillet over high heat. Pat the chicken dry and season with pepper. Add the meat to the pan in a single layer and do not touch for 2 minutes; stir-fry until golden, about 3 minutes more. Transfer to a plate.
  • Add a little more oil to the skillet and heat up, then add the pineapple, bell pepper, chile pepper, ginger and garlic and stir-fry until crisp tender and the pineapple pieces are light golden at the edges, about 3 minutes. Stir in the kecap manis (or tamari and sugar) and fish sauce. Add the chicken and toss to coat.
  • Turn off the heat and add half the basil leaves to wilt. Stir in the lime juice and zest and toss again to combine. Serve with the rice and garnish with the lime wedges and remaining basil.

1 tablespoon olive oil
1/2 tsp EACH paprika, salt
1/4 teaspoon pepper
1 1/2 pounds chicken breasts (chopped into large bite size pieces)
3 cups broccoli (chopped into bite size pieces)
1 small onion (diced)
1 1/2 cups orzo pasta (uncooked)
1/2 cup sun-dried tomatoes (rinsed, chopped, patted dry)
4 garlic cloves (minced)
1/4 teaspoon red pepper flakes (optional)
2 tablespoons cornstarch
3 cups chicken broth
1 12 oz. can evaporated milk
1 15 oz. can corn (drained and rinsed (may sub frozen))
1 teaspoon chicken bouillon
1 teaspoon dried parsley
1/2 teaspoon dried oregano
1/2 cup shredded mozzarella
1/3 cup freshly grated Parmesan
1 cup packed fresh basil leaves (roughly chopped*)

Steps:

  • While chicken is still on the cutting board, pat it dry and season with ½ teaspoon salt, ½ teaspoon paprika and ¼ teaspoon pepper; set aside.
  • Melt butter in olive oil in a Dutch oven over medium high heat until hot. Add onions and cook for 3 minutes. Add chicken and broccoli and cook until most off the chicken is opaque (chicken will not be cooked through). Add orzo, sun-dried tomatoes, garlic and red pepper flakes and cook an additional 1 1/2 minutes.
  • Whisk 1 cup chicken broth with the cornstarch and add to the pot. Add remaining chicken broth and all remaining ingredients up to the "Add Later"/ cheeses.
  • Cover the pot and bring to a simmer. Reduce heat to medium low and simmer for 8-10 minutes, or until orzo is tender, stirring every couple minutes so the orzo doesn't burn on the bottom, and replacing the lid. Add additional broth if the orzo isn't done and most of the liquid is evaporated.
  • Stir in Parmesan cheese until melted followed by mozzarella until melted. Stir in fresh basil. Taste and season with additional salt and pepper (I add ¼ teaspoon more of each). If desired, you can make the dish "saucier" by stirring in additional broth, milk or cream.

  • Preheat the oven to 200°C/Fan 180°C/Gas 6. Mix the spices and salt in a large bowl, add the chicken and rub the spice mix into the chicken strips. Drizzle them with the olive oil, then turn the strips over and spread them out on a baking tray. Bake the chicken for 10 minutes in the preheated oven until lightly browned and cooked through. While the chicken is in the oven, make the sauce. Put the garlic, lime zest and cider vinegar in a small saucepan with a splash of water. Bring the mixture to the boil, then let it simmer for a minute. Remove the pan from the heat and leave it to stand for a couple of minutes. Strain the contents of the saucepan into a bowl and discard the solids. Tip the liquid back into the saucepan, stir in the crème fraiche, then season with salt and pepper. Heat the sauce through until it is fairly liquid. Finely chop the basil and add this along with the lime juice, then whisk the sauce until frothy. Drizzle the sauce over the chicken and serve with some green vegetables or a salad.
