CHICKEN STROGANOFF

- Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.
CHICKEN STROGANOFF - QUICK AND EASY
Saw Mr Food make this on a morning show and tried it. It is quick, easy and tasty. Even my picky DS liked it. I used fresh mushrooms (8 oz, I think), Lawry's seasoned salt, 9 oz pre-cooked chicken and lite sour cream. I cooked the pasta while the chicken mixture was cooking.

- Add chicken and bring to a boil.

- Add onion, garlic and mushrooms and fry, stirring constantly for 5 minutes.
- Add the stock and cook, stirring occasionally for 6-8 minutes, until vegetables are tender and liquid has evaporated.

Valentine's Day is special for us because it is our wedding anniversary as well! Though this isn't a standard 'romantic' recipe, every time I prepare this dish the love flows freely! It is a way to show my husband I love him -- it is his favorite, but not mine. - In a large, heavy skillet, brown ground beef with Worcestershire sauce, seasoning salt, and garlic. Drain well, set aside.
- Cook noodles in a large pot of boiling water until done. Drain.

- In large non-stick fry pan, melt butter over high heat.
- Place flour in a pie pan; add chicken and turn to coat well.
- Place chicken in fry pan and cook, turning about 5 minutes to brown well on both sides.
- Stir in onions, mushrooms, and any unused flour.
- Reduce heat to medium and cook, stirring, until onion is golden brown, about 5 minutes.
- In small bowl, whisk together chicken broth and mustard.
- Pour mixture into fry pan and stir.
- Bring to boil, reduce heat to simmer and cook about 5 minutes.
- Stir in sour cream and parsley and simmer for 2 additional minutes.

- Put a tablespoon of olive oil in a large frying pan and heat for 1 minute, add the diced chicken and cook over a high heat for 5 minutes, stirring frequently to ensure it is nicely browned all over. Tip the chicken and all the juices onto a plate.
- Turn the heat down then add the butter to the same pan and allow to melt, then add the onions and mushrooms and cook for about 3 minutes until lightly browned.
- When the onions and mushrooms are cooked, add the garlic, paprika, salt and pepper, plus the chicken and all the juices and cook over a low heat for a further 3 minutes, or until the chicken is cooked all the way through.
- Add the sour cream and heat gently until it just starts to bubble (don’t boil!). Turn the heat off and stir in the chopped parsley.
