ROSEMARY CHICKEN AND SPINACH SOUP

1 teaspoon(s) garlic powder
1 teaspoon(s) onion powder
1 tablespoon(s) rosemary
3 tablespoon(s) butter
1 large onion diced
2 large celery stalks diced
2 large russet potatoes peeled and diced (small bite size pieces)
2 large carrots diced
4 clove(s) garlic finely diced
1 - bag fresh baby spinach
1 box(es) 32oz chicken stock
3 tablespoon(s) olive oil
- salt and pepper

Steps:

  • the morning you want your soup for dinner put roaster chicken (remove inards from cavity and pat dry) in crockpot and add 3 cups water. Spread 3 tablespoons of butter on top of chicken and sprinkle with garlic powder, onion powder salt pepper and rosemary cover and set on low for at least 8 hours
  • Put chicken on plate and let cool then shread chicken from bone and skin. reserve all liquid in crock pot. In a large soup pot put 2 to 3 tablespoons of olive oil once heated put carrots, celery, onion in pot and saute until onions are soft. Add baby spinach and garlic and saute further until spinach is wilted. Add potatoes, shredded chicken all reserved broth from crock pot and 1 box of chicken broth, salt and pepper to taste Bring to a boil then simmer on med low for 30 min. Serve.

2 teaspoons dried rosemary, crushed

1 package (6 ounces) fresh baby spinach
2 garlic cloves, minced
1 can (15 ounces) cannellini beans, rinsed and drained

Steps:

  • Drain tomatoes, reserving juice; coarsely chop tomatoes. Pound chicken with a meat mallet to 1/4-in. thickness. Rub with rosemary, salt and pepper. In a large skillet, heat 2 teaspoons oil over medium heat. Add chicken; cook 5-6 minutes on each side or until no longer pink. Remove and keep warm., In same pan, heat remaining oil over medium-high heat. Add spinach and garlic; cook and stir 2-3 minutes or until spinach is wilted. Stir in beans, tomatoes and reserved juice; heat through. Serve with chicken.

120 g butter
8 chicken breast fillets
4 onions, chopped
8 cloves garlic, crushed

  • Heat butter and oil in a pan and sauté the chicken fillets until well browned.
  • Remove and keep aside.

  • Remove and keep aside.
  • Return the chicken into the pan.
  • Add diluted grape juice and bring to boil.
  • Lower the heat and simmer until chicken becomes tender.
  • Remove and set aside.
  • Add the onion mixture to the remaining juice in the pan and bring to boil.
  • Lower heat and simmer uncovered until the mixture dries.
  • Pour the onion mixture over the chicken.
  • Top with spinach.

This tender and juicy chicken breast recipe is made in a creamy garlic spinach sauce thats so flavorful and nutritious.

1 1/2 lb boneless skinless chicken breasts
1 tbsp olive oil
Kosher salt and ground pepper (to taste)
1/2 tsp smoked or sweet paprika
1/2 tsp garlic powder
1/2 tsp dried basil
1/2 tsp dried rosemary
2 tbsp parsley (chopped)
1 cup almond milk
1 tbsp gluten-free flour
1 tbsp olive oil
1 yellow onion (diced)
3 garlic cloves (minced)
3/4 cups low sodium chicken broth
10 oz baby spinach (roughly chopped)
1/2 cup parmesan cheese (finely grated)
2 tbsp fresh parsley (chopped)

Steps:

  • In a small bowl, mix all the herbs and spices. Rub the chicken on all sides with the seasoning mixture
  • Heat the oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes, on each side, or until golden brown. Set aside on a plate.
  • Meanwhile, in a small bowl whisk the flour and almond milk until well combined. Set aside.
  • Add 1 tablespoon of olive oil to the preheated pan. Add the onion and saute for 3-4 minutes. Add the garlic and continue to cook for no more than 1 minute. Pour the chicken broth and scrape the bottom of the pan to deglaze. Add the almond milk mixture and whisk to combine.
  • Reduce the heat and allow the sauce to simmer for about 3-5 minutes, or until it thickens. Stir in the baby spinach and cook for 2 minutes, just until wilted. Stir in the parmesan cheese and allow the sauce to simmer until the cheese is melted.
  • Return the chicken to the pan and continue to cook into the sauce until fully cooked through, around 8-10 minutes more.
  • Garnish with chopped parsley and enjoy!

The ease and deliciousness of this recipe, from the chef Nancy Silverton's cookbook "Mozza at Home," deserves to be emphasized. Though you need several hours of refrigeration to allow the chicken skin to dry out, which makes it crisp, you can be flexible about it; do what's convenient. No matter what, just be sure to pat the skin dry with paper towels. You may also find the final run under the broiler unnecessary. Use your judgment. And also consider swirling in a good splash of white wine or chicken stock to the juices in the baking dish before spooning them on the chicken.

12 chicken thighs, bone in and skin on
1 medium onion, peeled, quartered vertically and sliced 1/4-inch thick vertically
1 cup peeled garlic cloves (about 40)
1 lemon cut in 1/4-inch-thick slices, seeded
15 fresh thyme sprigs
4 (3-inch) rosemary sprigs
2 tablespoons kosher salt, or to taste
2 teaspoons ground black pepper

Steps:

  • Pat chicken thighs dry and place, skin side up, in a single layer on a baking sheet. Place in refrigerator, uncovered, for 8 hours or overnight to dry skin. Remove chicken from refrigerator at least 45 minutes before cooking.
  • Heat oven to 500 degrees. Spread onion slices and garlic cloves in a baking dish that can hold the chicken snugly in a single layer. Scatter lemon on the onion-garlic mixture and strew with thyme and rosemary sprigs.
  • Remove chicken from baking sheet and place on several layers of paper towels, skin side down. Sprinkle with half the salt and pepper. Turn thighs over and season with remaining salt and pepper. Transfer to the baking dish skin side up. Use your hands to arrange the bed of onions and garlic so they're completely under the chicken.
  • Bake for 40 to 50 minutes, until juices run clear when chicken is pierced with a knife point. If skin is not a deep golden brown and crispy, turn on broiler and broil chicken close to heat a few minutes to crisp and brown it.
  • To serve, move chicken off the bed of onions, garlic, lemon and herbs. Discard lemon and spoon the rest of the ingredients, along with pan juices, onto a serving platter. Place chicken on top and serve.

2 boneless skinless chicken breasts (most weigh 8 to 10 ounces)
2 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
2 garlic cloves, minced or pureed
1 teaspoon chopped fresh rosemary
1 generous bunch spinach, stemmed and washed well in 2 changes water, or 2 6-ounce bags baby spinach, washed
2 allspice berries, lightly toasted and ground
1/2 teaspoon coriander seeds or cumin seeds, lightly toasted and ground
1/4 teaspoon ground cinnamon
Salt to taste
Freshly ground pepper
2 tablespoons all-purpose flour or a gluten-free flour such as rice flour or corn flour
2 tablespoons grapeseed, sunflower or canola oil

Steps:

  • Stir together the olive oil, lemon juice, garlic, rosemary, and salt and pepper in a large bowl. Cut each chicken breast into 2 equal pieces (3 if they are 12 ounces or more) and place in the bowl. Stir together and refrigerate 15 to 30 minutes.
  • Combine ground allspice, coriander or cumin, and cinnamon in a small bowl or ramekin and set aside.
  • Remove chicken from the marinade and pat dry (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don't pound too hard or you'll tear the meat. If that happens it won't be the end of the world, you'll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.
  • Season pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you won't use all of it).
  • Turn oven on low. Heat a wide, heavy skillet over high heat and add the oil. When oil is hot, place one or two pieces of chicken in the pan - however many will fit without crowding the pan. Cook for for 1 1/2 minutes until bottom is browned in spots. Turn over and brown on other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some (but not all) of it off into a jar or bowl.
  • Turn burner heat down to medium. Add ground spices to the pan and when they begin to sizzle add spinach and salt and pepper to taste. Cook, stirring with a wooden spoon and deglazing the bottom of the pan with the liquid that comes off the spinach, until spinach wilts, 2 to 3 minutes. Remove to a platter or to plates and serve with the chicken.
