2 sheets puff pastry (thawed)

Easy and super tasty chicken filo parcels.

1 Tbsp olive oil
1 onion, sliced
6 cloves garlic, crushed
1 bag of baby spinach (130g)
500g cooked chicken breast, chopped
150g feta
2 eggs
12 sheets of filo pastry
2 Tbsp sesame seeds

Steps:

  • Preheat oven to 190.C fanbake.
  • Heat a large frypan over medium heat, add olive oil and sauté sliced onion for 5 minutes until softened. Stir in crushed garlic then add baby spinach.
  • Keep stirring until the spinach has wilted then add the chicken.
  • Turn off the heat and crumble in the feta and then crack in the eggs.
  • Season well with salt and pepper then stir everything to combine.
  • Set aside to cool slightly before wrapping in the filo.
  • Place one sheet of filo onto a board and spray with oil. Layer over another sheet of filo and spray again.
  • Place 1/2 cup of chicken mixture in a line 5cm from one end, fold in the sides and then roll up the filo, spraying oil in between each fold. Roll up the remaining filo parcels. Spray the top with oil and sprinkle over sesame seeds.
  • Bake for 30 minutes until golden and cooked through.
  • Serve hot with a fresh garden salad.

225g fresh spinach , washed
1 tbsp groundnut oil
1 large shallot , finely diced
25g walnuts or pine nut , roughly chopped
75g vegetarian cheddar , grated
pinch freshly grated nutmeg
2 tbsp double cream
1 tsp walnut oil
25g butter , melted
12 squares filo pastry , each measuring 16cm x 16cm

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place spinach in a pan and stir over a high heat until wilted. Strain, squeeze out as much liquid as possible, then roughly chop.
  • Heat oil in a frying pan, sauté shallot until softened. Add walnuts, then fry for 2-3 mins. Remove from heat, stir in spinach, cheese, nutmeg, cream and seasoning.
  • Mix walnut oil with butter. Brush a thin coating on a piece of pastry. Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece. Place a spoonful of spinach mix in the centre, bring up corners of pastry and pinch in the middle to form a parcel. Repeat to make remaining parcels, then transfer to a greased baking tray. Brush parcels with remaining butter and oil. Bake for 20 mins until golden.

2 chicken breast fillets, halved horizontally
2 teaspoons coarse grain mustard
125 g camembert cheese, sliced
1/4 cup basil leaves
4 slices prosciutto, thin slices (can be substituted with bacon)
8 sheets phyllo pastry
cooking spray or 60 g butter, melted
2 tablespoons sesame seeds
baby spinach leaves, to serve

Steps:

  • Preheat oven to 200oC. Lightly grease a baking tray.
  • Spread each piece of chicken with mustard. Top with camembert and basil.
  • Wrap 1 prosciutto slice around each piece.
  • Lay 2 sheets of filo flat and spray with oil or brush with butter. Fold in half.
  • Top with 1 piece of chicken. Wrap as a parcel.
  • Place on prepared baking tray and spray with oil.
  • Continue with remaining pastry and chicken. Sprinkle parcels with sesame seeds.
  • Bake parcels for 20-25 minutes, until gold and crips.
  • Serve with baby spinach leaves.

Steps:

  • Preheat oven to 200C
  • Make an incision lenghways across the chicken, making an envelope. Do not cut all the way through.
  • In the incision, spread the chicken with a layer of the pesto.
  • Slice the cheese and place into the incisions on top of the pesto
  • Wrap the chicken with slices of parma ham, ensuring the whole chicken breast is covered. Season the chicken breasts
  • Bake for around 30 minutes, ensuring the chicken in cooked through. Excellent served with cubed potatoes with rosemary and green beans.

40g butter
1 leek, white stem finely sliced
1 ½ teaspoon minced garlic
600 grams chicken breast fillets
3 Tablespoon cornflour
1 ½ cups chicken stock
½ cup cream
4 sheets puff pastry
1 egg, lightly beaten

Steps:

  • In a large frying pan add butter & melt over high heat. Add leek & garlic & cook for 3 mins or until leek softens. Roughly dice chicken (into pieces approx 1cm) and add to pan. Cook over high heat until chicken is browned. Mix cornflour & stock together and add to chicken mixture. Add cream. Reduce heat to medium & stir for a few minutes or until sauce thickens. Set aside to allow mixture to cool. To speed up the process, refrigerate mixture or spread out onto a tray. Preheat oven to 200ºC. Cut each sheet of pastry in half (giving you 2 large rectangles). Spoon some mixture onto one half of each piece. Fold the pastry over to enclose the filling and pinch edges to seal. I usually fold over the edges to stop mixture from running out. Cut a slit in the top of each one. Place pastry squares onto lined oven trays and brush the top with beaten egg. Bake in preheated oven for 15 mins or until golden.

This is a really unusual way of cooking, the parcels are rolled up in cling film and baked, they keep a perfect shape and all the juices are kept in. The result is a moist and delicately flavoured delight. Serve these at a dinner party and your guests will be very impressed.

4 chicken breasts, with fat removed
1 cup dry white wine
2 tablespoons soy sauce
1/2 teaspoon dried thyme
10 large fresh basil leaves
4 ounces dried apricots
4 ounces shiitake mushrooms
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons butter
450 g spinach
1 teaspoon honey
1 teaspoon lemon juice
1 teaspoon cornstarch (cornflour)
1 teaspoon melted butter (for basting)

Steps:

  • Put chicken breasts between 2 sheets of cling film and flatten with a meat mallet or rolling pin until double the size and about 1/4 inch thick
  • Place them in a large dish
  • Make marinade with white wine, soy sauce and thyme
  • Pour over chicken and leave for 1/2 hour, turning over half way through
  • Finely chop basil,apricots and mushroom together, season with salt and pepper, then blend in butter to form a smooth stuffing
  • Remove chicken when ready and pat dry
  • Lay the chicken breasts on a flat surface, put a single layer of spinach leaves on each breast,then 1/4 of stuffing on each one and spread evenly
  • Roll them up into a sausage shape to form a parcel
  • Cut 4x12inch squares of cling film,lay each chiken parcel on the cling film and wrap turning edges in,half way up
  • Place them in a baking tray and put into a preheated oven gas mark 4 electric 350 and bake for 30 minutes
  • Remove from oven and let cool for 5 minutes
  • Pierce each parcel to release juices and save, then carefully remove cling film from chicken
  • Brown chicken under the grill basting with melted butter
  • When golden set aside and keep warm
  • Mix the chicken juices with honey, lemon and cornstarch bring to boil, stir until thickend simmer 2 minutes
  • Put spinach in a ziplock bag seal and pierce a few times
  • Microwave on full power for 2 1/2 to 3 minutes
  • Drain spinach place chicken on top and drizzle with sauce
  • Serve with new potatoes and baby carrots
