CHICKEN FLORENTINE CREPE (IHOP'S COPYCAT)
I just love this dish! I never knew how yummy spinach can be till I tried this entree in IHOP. It was a limited time only dish and when they took it out, I searched through the internet for the recipe but couldn't find one so I decided to take the matters into my own hands! This recipe is really easy and the ingredients may already be in your fridge! Serve it alone or with garlic bread or steamed veggies on the side. Notes: You can substitute chicken with leftover turkey or chicken rotisserie, lets face it, nobody ever eats those leftover turkey and rotisserie! You can also serve this as an appetizer. Just cook smaller proportions of crepes. And for those on protein diet, substitute the crepe with omelet!

Steps:
- Combine flour, milk, eggs, butter and salt in a bowl. beat until all the flour lumps are gone. the consistency will be like thin pancake batter. set aside.
- Sauté chicken and garlic on butter until golden brown.
- Pour in milk and cream of chicken. simmer. reduce to low to medium heat.
- After simmer, put the spinach and cheese inches keep stirring until the cheese completely melts. salt and pepper to taste. make sure the bottom wont stick. keep simmering until the sauce is reduced.
- While the chicken is simmering, start cooking the crepes. in a lightly greased skillet, pour about 3 tbsp of batter and spread it as thin as possible. do not flip. in about 1 minute, check the bottom side of the crepe if light brown. cook only one side of the crepe or else it will be crunchy.
- By the time you're done with the crepes, chicken should be done too. pour about 3/4 cup of chicken on each crepe on the center. wrap each side. top lightly with parmesan cheese.
CHICKEN BROCCOLI CREPES
When I organized food and nutrition training for our county 4-H'ers, we had cooking demonstrations representing different countries. We chose crepes for France, and everyone really loved them with this chicken broccoli filling.

Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., In a large saucepan, melt butter. Stir in flour until smooth. Gradually stir in broth and Worcestershire sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in 2 cups of cheese. Cook and stir for 10 minutes or until cheese is melted. Remove from the heat; stir in sour cream until smooth., Place four broccoli spears and 1/3 cup of chicken down the center of each crepe; top with 1/3 cup cheese sauce. Roll up and place seam side down in a greased 13x9-in. baking dish. Pour remaining cheese sauce over crepes; sprinkle with remaining cheese. , Bake, uncovered, at 350° for 20 minutes or until heated through.

- For crepe batter, in a small bowl, combine egg and milk. Add flour and salt until well blended. Cover and refrigerate for 1 hour., Heat a lightly greased 6-in. nonstick skillet; pour 2 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. A great way to use up leftover chicken! It's teamed with garlicky sauteed spinach and a rich Gruyere bechamel for the filling of these hearty crepes.

- Preheat oven to 400 degrees with rack in center. Heat oil in a large skillet over medium-high. Add garlic and cook until golden, 1 to 2 minutes. Add spinach and stir until wilted. Transfer to a work surface, chop, and set aside.
- Mix 3/4 cup bechamel with chicken. Working with one at a time, place crepe on a work surface. Arrange 1/4 cup chicken mixture and 1 heaping tablespoon spinach down center of crepe; roll into a cylinder. Transfer, seam-side down, to a 9-by-13-inch baking dish; assemble and arrange more crepes, leaving 1/2 inch in between each. Spoon more bechamel on top and sprinkle with cheese. Bake until bubbly, about 15 minutes. Switch oven to broiler setting and cook until browning in spots, about 5 minutes. Remove from oven and let cool slightly. Sprinkle with parsley.

- Preheat oven to 350 degrees.
- For filling:.
- Heat 1 T. oil in a large skillet or wok.
- Add the garlic and the broccoli and stir fry until broccoli is crisp tender.
- Add the onion powder and salt and pepper to taste.
- Add the baby spinach and continue to stir fry until the spinach all wilts.
- In a large bowl combine the cooked broccoli and spinach with the chicken, gorgonzola, 14/c. of the cheddar.
- Beat one egg and combine with the chicken mixture.
- For crepes:
- Combine flour, milk, eggs, 1 t. vegetable oil, and 1/4 t. of salt.
- Heat a 10 inch skillet and coat with cooking spray.
- Pour in about 1/4 cup batter; lift and tilt skillet to spread thinly and evenly.
- Return to heat and brown lightly on both sides.
- Slide crepe onto plate.
- Repeat with remaining batter.
- Spoon the chicken mixture along the center of crepe and roll, placing the crepes side by side into a 13X9X2 baking dish.
- When all the crepes are in the dish, sprinkle remaining cheddar on top.
- Bake 20 minutes in preheated oven.
- While crepes are baking, in a small saucepan over low heat combine 4 egg yolks, 2/3 cup cream, 1 t. salt, and the juice of one lemon.
- Stir until mixture begins to thicken.
- Remove from the heat and stir in butter.
- When crepes are finished baking, serve immediately with the Hollandaise sauce spooned over top.

- Combine the first 7 ingredients in a blender and process until smooth.
- Refrigerate for 1 hour.
- Heat your crepe pan or a small, non-stick frying pan until very hot.
- Spray with non-stick if needed.
- Pour about 2 tbl.
- of batter into the pan and immediately swirl the pan to coat the bottom with batter.
- Cook just until set, then flip the crepe over to cook on the other side, about 30 seconds, then turn out to cool and make another until all the batter has been used.
- Stack between layers of parchment paper.

SPINACH & ASIAGO CREPES
NB There was a wrong amount for the mace in the recipe - It said 1 tsp. It is now corrected to the correct amount of 1/4 tsp. Easy Tasty appetizer. Can be a "Do ahead" recipe. If you wish you can make this as a side dish for dinner just double the size of the crepes. The crepes as appetizers should be apprx 6" across. The recipe may be cut in half or doubled. Make a large batch of crepes they freeze really well. Just layer them with wax paper between each and wrap well in plastic . Then you will have them on hand for any easy appetizer - Enjoy!

- Beat together the crepe ingredients.(Egg, Flour, Milk & water).
- Pour approx 3 tbsp of batter into a no stick heated pan (medium High heat) swirl around to form a 6" crepe.
- Cook 1 minute flip and cook a further 1/2 minute.
- Remove & place on a plate with a pieces of wax paper covering it. Continue til you have cooked all the crepes.
- Filling:.
- Saute the tomato, onion & mushrooms in a medium size fry pan until the onion is translucent (approx 5 minutes).
- Add Salt & Pepper & Mace.
- Add spinach and stir until the spinach has wilted - (add bacon if using).
- Place 2 1/2 tbsp of filling on edge of each crepe, roll up and place it in an oven proof dish.
- You may now set the ready crepes aside until 10 minutes before serving or continue to the end of the recipe.
- Sprinkle the Asiago over the crepes.
- Bake in 375 oven for 10 minutes. If the asiago isn't golden broil for a minute.
- Serve warm.
