12 boneless, skinless chicken thighs
4 tbsp olive oil
2 tsp dried oregano
1 tsp dried mint
1 tsp ground cumin
1 tsp coriander
1 tsp sweet paprika
½ tsp ground cinnamon
zest and juice 1 lemon, plus 1 lemon cut into wedges to serve
4 garlic cloves, crushed
250g strong white bread flour
7g sachet fast-action dried yeast
1 tsp golden caster sugar
2 tsp olive oil, plus a little for greasing
½ cucumber
200g Greek yogurt
small bunch mint, finely chopped
1 small garlic clove, crushed
juice ½ lemon
1 butter or round lettuce
4 large tomatoes, seeds removed, chopped
1 red onion, halved and thinly sliced
4 long metal skewers

Steps:

  • Tip the chicken into a large bowl and add the marinade ingredients, along with 1 tsp salt and plenty of black pepper. Mix well, ensuring each thigh is well coated. Cover and chill for at least 3 hrs, or up to 48 hrs if you have time.
  • A few hours before you want to eat, make the pitta. In a bowl, mix the flour, yeast, sugar and 1/ 2 tsp salt with your fingertips. Add 150ml lukewarm water and 2 tsp olive oil, and combine to a dough. Tip onto a work surface and knead for 8-10 mins (or use a tabletop mixer for 5 mins). Clean, then lightly oil your bowl, return the dough and cover loosely with cling film. Leave to rise for 1 hr or until nearly doubled in size.
  • Divide the dough into four equal pieces. Roll out to circles, as thin as you can. Cover with sheets of oiled cling film and leave to rise for 15-20 mins.
  • To make the tzatziki, halve the cucumber lengthways and scoop out the seeds. Finely chop, then combine with the remaining ingredients, along with a pinch of salt. Chill until ready to serve.
  • Heat the grill to its highest setting. Line a roasting tin with foil and find 4 metal skewers long enough to sit across the top with a little space underneath. Remove the chicken from the fridge, take one thigh and thread it over 2 skewers, so it has a skewer through either side. Thread another piece of chicken on top, leaving a slight gap between each piece; you should fit 6 thighs on each pair of skewers. Position the skewers on top of the roasting tin and set aside while you finish the pittas.
  • Heat a large frying pan (or two if you have them) over a medium-high heat and brush the breads with oil. Gently lift one into the pan. It should sizzle, and bubbles should appear on the surface after 1-2 mins. When the underside is golden, flip it and cook for another 2-3 mins. Continue until all the breads are cooked, wrapping them in foil as you go. Keep the bread warm in the bottom of the oven while you cook the chicken. Alternatively, cook on the barbecue for 5-8 mins, turning occasionally.
  • Put the chicken under the hot grill and cook for 15-20 mins, brushing with oil and any juices from the bottom of the tin regularly, and turning halfway through cooking. Once cooked, remove from the oven and rest for 5 mins.
  • Cut through each pair of skewers to make four kebabs and serve in the warm bread, with lettuce, tomato, red onion, lemon wedges and tzatziki.

¾ cup balsamic vinaigrette salad dressing
3 tablespoons lemon juice
1 tablespoon dried oregano
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
½ cup seeded, shredded cucumber
1 teaspoon kosher salt
1 cup plain yogurt
¼ cup sour cream
1 tablespoon lemon juice
½ tablespoon rice vinegar
1 teaspoon olive oil
1 clove garlic, minced
1 tablespoon chopped fresh dill
½ teaspoon Greek seasoning
kosher salt to taste
freshly ground black pepper to taste
4 large pita bread rounds
1 heart of romaine lettuce, cut into 1/4 inch slices
1 red onion, thinly sliced
1 tomato, halved and sliced
½ cup kalamata olives
½ cup pepperoncini
1 cup crumbled feta cheese

Steps:

  • In a small bowl, mix the balsamic vinaigrette, juice from 1/2 lemon, oregano, and 1/2 teaspoon black pepper. Place chicken in a large resealable plastic bag. Pour marinade over the chicken, seal, and refrigerate for at least 1 hour.
  • Preheat an outdoor grill for high heat.
  • Toss the shredded cucumber with 1 teaspoon kosher salt, and allow to sit at least 5 minutes. In a medium bowl, mix the yogurt, sour cream, 1 tablespoon lemon juice, rice vinegar, and olive oil. Season with garlic, fresh dill, and Greek seasoning. Squeeze the cucumber to remove any excess water; stir into sauce. Season to taste with kosher salt and pepper. Refrigerate until ready to use.
  • Remove chicken from marinade and place on prepared grill. Discard remaining marinade. Cook chicken until juices run clear, about 8 minutes on each side. Remove chicken from heat, and allow to sit about 10 minutes before slicing into thin strips.
  • Place pita rounds on the grill, and cook for about 2 minutes, until warm, turning frequently to avoid burning. Arrange warmed pita, sliced chicken, lettuce, onion, tomato, olives, and pepperoncini on a serving platter. Serve tzatziki sauce and feta cheese in separate bowls on the side. Stuff pita pockets with chicken and toppings to serve.

Steps:

  • Place the chicken in a bowl and add oregano, garlic powder, seasoning salt and pepper.
  • Toss to coat.
  • Marinate in fridge for at least 30 minutes -the longer the better.
  • In the meantime, if you are going to use wooden skewers, soak them for 30 minutes. This prevents them from burning on the BBQ.
  • Squeeze the lemon and then add an equal amount of vegetable oil.
  • Skewer chicken onto wooden or metal skewers.
  • BBQ chicken skewers until done.
  • Mix the oil and lemon mixture until "creamy" and drizzle over the hot chicken - do this as soon as they come off the grill.

This simple Greek souvlaki is the perfect dish for outdoor grilling and entertaining. Souvlaki are marinated and grilled skewers of meat often served in pita. They can also be paired with rice pilaff and a salad.

1 lb boneless, skinless chicken thighs
1 tbsp olive oil
1 tbsp red wine vinegar
2 cloves garlic, minced
½ tsp black pepper, freshly ground
¼ tsp salt
1 tsp oregano, dry
1 cup English cucumber, diced
1 cup Romaine lettuce, shredded
1 cup cherry tomatoes, halved
4 whole wheat pita
½ cup plain yogurt, 2-4% MF
½ cup sour cream, 14 % MF
1 cup English cucumber, grated
2 cloves garlic, minced
2 tsp lemon juice, fresh
1 tsp lemon zest
¼ tsp dill, dry
or
1 tsp dill, fresh, chopped

Steps:

  • Add yogurt and sour cream to a fine mesh sieve and place over bowl and leave to drain in the refrigerator for four or more hours.
  • Grate the cucumber and add to another sieve and leave to drain for an hour or so. Press down to remove more water from the cucumber. If the grated strands of cucumber are long use a sharp knife to mince smaller.
  • Mix drained yogurt and cucumbers with garlic, fresh lemon juice, lemon zest and dill. Combine and refrigerate for flavours to develop. Taste and adjust seasoning - you can add more lemon juice or zest if you wish. Refrigerate until ready to use.
  • Cut chicken thighs into 1 inch (2.5 cm) cubes. Add to a plastic bag along with olive oil, red wine vinegar, garlic, pepper, salt and oregano. Seal bag and use your hands to work marinade through chicken. Place in refrigerator to marinate 1 hour or preferably overnight.
  • Thread chicken pieces onto four skewers. If you don't have metal skewers, soak bamboo skewers in water 20 minutes so they don't burn on the grill.
  • Heat grill to medium-high heat. Grill skewers for 20 minutes or until chicken reaches internal temperature of 165°F (74°C). Turn so the chicken browns evenly and doesn't burn.
  • Shred romaine and add with cucumber to salad bowl. Meanwhile, cut cherry tomatoes in half. Refrigerate until ready to serve.
  • Warm pitas on the grill or in the oven five minutes before serving.
  • To serve, spread inside of pocket pita with Tzatziki sauce, followed by salad and warm grilled chicken pieces. Serve remaining Tzatziki on the side.

4 tablespoons olive oil
4 garlic cloves, minced

1 lbs butterflied boneless porkloin chops (sliced in 1/2 inch strips)
½ onion (thinly sliced)
2-3 Fresh herb sprigs (like rosemary, thyme or oregano.)
2 garlic cloves
1/2 cup of olive oil
1 tablespoon honey
2/3 cup white wine vinegar
sea salt
freshly ground pepper
2 ripe tomatoes
1/2 cup Greek feta cheese (cut in small cubes or crumbled)
1/2 onion (sliced thinly)
2 tablespoons extra virgin olive oil
1 teaspoon white wine vinegar
dried oregano
sea salt
½ cup tzatziki sauce

Steps:

  • In a bowl mix fresh herbs, onion slices, olive oil, vinegar, honey, and a pinch or two of salt and pepper. Place meat in a large pan and add the marinade. I like to massage the meat a little with the marinade mixture. Cover with aluminum foil and let it marinate from 3-4 hours to overnight in the fridge.
  • Take it out of the refrigerator 1/2 hour ahead of cooking so it can get to room temperature.
  • Cut the tomatoes into thin slices, add them to a medium bowl. Add the sliced onion, and the crumbled feta cheese. Season with sea salt to taste. Sprinkle some dried oregano. Drizzle olive oil and a tsp or so of red wine vinegar.
  • Mix well but gently and let it sit for at least half an hour ahead of the souvlaki assembly.
  • Add 2-3 tbs of olive oil to a cast-iron grilling pan or the pan of your choice. Let it heat up almost to the point of smoke. add the meat 2-3 slices at a time. You don't want to add more because the temperature will go down and the meat will boil instead of the grill.
  • Cook meat for 2-3 minutes for each side. I always do a test drive; cooking time changes depending on how thin my meat slices are.
  • On the same pan, you cooked your meat, clean it lightly with a paper towel, drizzle a little olive oil and grill the pitas to warm them up. This will allow them to get some of that charred, smoked flavor.
  • Take a pita bread, add two-three slices of meat, 2-3 full tablespoons of tomato & onion filling, and 2 tbs of tzatziki. Wrap it up in parchment paper just like they do in Greece and enjoy!

1 tablespoon chopped garlic
2 teaspoons Italian seasoning
1 tablespoon lemon juice

2 1/2 pounds split chicken breast, bone and skin removed, sliced into 1-inch pieces
1 small cucumber, diced

1 (1-pound bag) refrigerator pizza dough, at room temperature

Steps:

  • Chicken:
  • In large bowl whisk together all the souvlaki ingredients, except the chicken. Reserve 1 1/2 tablespoons for Round 2 Recipe Greek Flat Bread. Add the chicken and toss to coat. Cover and let marinate for at least 30 minutes or up to overnight in the refrigerator.
  • Heat a large skillet over medium-high heat. Remove the chicken from the marinade and add to the pan. Cook until the chicken is cooked through, about 10 to 12 minutes.
  • In a medium bowl combine all the tzatziki sauce ingredients and set aside.
  • Divide the dough into 4 equal portions. On a floured work surface, roll out each portion into 6 to 7 inches in diameter and about 1/8-inch thick.
  • Preheat a grill pan or grill over medium heat.
  • Grill the dough for 2 to 3 minutes per side. The pitas should be cooked through but still pliable and not too crispy.
  • To Assemble:
  • Put a grilled pita onto a plate, top with some cooked chicken, lettuce, tomato, onion and some tzatziki sauce. Repeat with remaining ingredients and arrange on a serving platter.

1/4 cup fresh lemon juice
1 teaspoon ground cumin
1 teaspoon dried oregano

2 cloves garlic, finely grated
1 pound boneless, skinless chicken breast, cut into 1-inch pieces
1 pound pork tenderloin, cut into 1-inch pieces
2 red onions, each sliced into 3 thick slices
2 lemons, sliced in half
Olive oil, for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • For the chicken and pork: In a mixing bowl, whisk together the olive oil, yogurt, lemon juice, cumin, oregano, salt, Aleppo pepper, black pepper and garlic.
  • Place the chicken and pork into 2 separate mixing bowls. Pour half of the marinade over the chicken and the other half over the pork. Marinate, refrigerated, at least 1 hour and up to overnight.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Remove the chicken and pork from the marinade, allowing excess to drain off. Keeping the chicken and pork on separate skewers, thread 4 pieces of meat onto each skewer towards the top and covering the tip of the skewer.
  • Place the skewers on the direct-heat side of the grill to char on all sides, about 2 minutes per side. Then move to the indirect-heat side of the grill, cover with the lid and cook until the chicken and pork are cooked through, about 10 minutes, or until the internal temperature of the chicken reaches 160 degrees F and the pork reaches 145 degrees F. Stack the skewers on a platter.
  • For the onions and lemons: Drizzle the onions and lemons with olive oil and season with salt and pepper. Place on the direct-heat side of the grill. Cook the lemons until charred, about 3 minutes. Cook the onions until tender, about 3 minutes per side.
  • Add the onions and lemons to the platter with the souvlaki. Serve with romaine, pita and tzatziki.

  • To make pita, mix water, yeast and sugar in a bowl and leave in a warm spot for 20 minutes until mixture foams. In the bowl of an electric mixer with a dough hook, mix flour and salt. Add olive oil and yeast mix and combine; mix until dough is smooth. Turn out on to a lightly floured bench, knead a few times then shape into a ball. Replace in bowl, cover with a tea towel and leave to prove for about 15 to 20 minutes.
  • To marinate chicken, combine lemon juice, oregano, oil, salt, garlic and chicken in a shallow bowl. Cover with cling wrap and place in refrigerator for 30 minutes.
  • For tzatziki sauce, put yoghurt and feta in a bowl and blitz with a stick blender until smooth. Add lemon juice, garlic and blitz again to mix. Add cucumber and stir through. Season with salt and pepper if required.
  • Preheat barbecue or grill plate to medium heat. Divide dough into 12 pieces and roll out into flat, thin discs about 16 centimetres across. Brush with olive oil and place on grill. Gently brush a little oil on top. Cook for 20 seconds or until bread puffs up, then turn over and cook for 20 seconds. Do not cook for too long or they will dry out and become crisp. When cooked, stack them on top of each other and wrap tightly in a clean tea towel to keep warm.
