Four 6-ounce boneless, skinless chicken breasts, trimmed
1/4 teaspoon kosher salt
All-purpose flour, for dredging
7 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 small eggplants (about 12 ounces total), cut lengthwise into 8 slices
1 cup dry white wine
4 slices ham (about 2 ounces total)
1 cup marinara sauce (see page 108)
6 ounces low-moisture mozzarella, thinly sliced
1/4 cup grated Grana Padano or Parmigiano-Reggiano

Steps:

  • Preheat oven to 400 degrees F.
  • Slice open the chicken breasts crosswise to butterfly and use a meat mallet to pound them to an even thickness of about 1/2 inch. Season the chicken with the salt. Spread the flour on a plate. Lightly dredge the chicken in flour, tapping off the excess.
  • Add 4 tablespoons of the butter and the olive oil to a large skillet over medium-low heat. When the butter has melted, add the chicken and lightly brown on both sides, about 2 minutes per side. Remove the chicken to a plate. Increase the heat to medium, and add the eggplant slices to skillet. Brown on both sides, about 3 minutes per side. Remove the slices to a plate lined with paper towels to drain.
  • Discard the oil in skillet, and set it over medium-high heat. Add the remaining 3 tablespoons butter. When the butter is melted, pour in the white wine and bring to a boil. Adjust the heat so the wine is simmering rapidly, then lay the chicken breasts back in, in one layer. Lay a slice of ham over each chicken breast. Dollop about 2 tablespoons marinara on top of each piece of ham. Drop the remaining marinara in the spaces between the chicken breasts to make the sauce. Layer the sliced cheese on top of the sauce. Sprinkle the grated cheese over top. Bake until chicken is cooked through and cheese is browned and bubbly, about 20 to 25 minutes.

2 small fryer chickens (about 2 1/2 pounds each, preferably free-range)
Salt
Freshly ground black pepper
1/4 cup olive oil, or as needed
1/2 pound sweet Italian sausage (preferably without fennel seeds), cut into 1-inch pieces
10 cloves garlic, peeled and chopped fine
4 pickled cherry peppers, cut in half and stemmed
1/4 cup red-wine vinegar
1/2 cup dry white wine
1 cup Chicken Stock or canned reduced-sodium chicken broth
1/4 cup chopped fresh Italian parsley

Steps:

  • Cut each chicken into twelve pieces as described in preceding recipe. Wash and pat the chicken pieces dry, then season them generously with salt and pepper. Preheat oven to 475 Fahrenheit. Heat 2 tablespoons of the olive oil in a large skillet. Add to the skillet as many pieces of chicken-skin side down, and starting with the leg, thigh and wing pieces-as fit without touching. Cook the chicken, turning as necessary, until golden brown on all sides, about 8 minutes. Remove the chicken pieces as they brown, and drain them briefly on paper towels. Place the drained chicken pieces in a roasting pan large enough to hold all of them in a single layer. Repeat with remaining chicken, adding more oil to the pan as necessary and adjusting the heat to prevent the bits that stick to the pan from over browning. As room becomes available in the skillet after all the chicken has been added, tuck in pieces of sausage and cook, turning until browned on all sides. Remove all chicken and sausage from the pan, add the garlic, and cook until golden, being careful not to burn it. Scatter the cherry peppers in the skillet, season with salt and pepper, and stir for a minute. Pour in the vinegar and bring to a boil, scraping into the liquid the browned bits that stick to the skillet, and cook until the vinegar is reduced by half, about 3 minutes. Pour in the stock and bring to a boil. Pour the sauce over the chicken in the roasting pan and stir to coat. Place the chicken in the oven and roast, stirring occasionally, until the sauce is thick and sticky, like molasses, about 10 minutes. If the sauce is still too thin, place the roasting pan directly over medium-high heat on the stovetop and cook, stirring, until it is reduced, about a minute or two. Once the sauce is thickened, toss in parsley and serve.

Classic Italian dish... this is a pretty easy recipe for Chicken Sorrentino. This goes great served over Linguini or Angel Hair along with a nice salad and semolina bread. ** I use the same pan to saute' individual ingredients then set aside on paper plates while I am preparing next ingredient in saute' pan. ** Also, I use the thin boneless chicken breasts for faster saute' if you use larger, you should butterfly or pound to flatten.

1 -2 lb chicken breast
6 tablespoons olive oil
2 -4 slices eggplants, fresh
2 -3 ounces prosciutto (about 3 slices, or smoked ham)
1 cup marinara sauce
1 1/2 cups mozzarella cheese, shredded (in a pinch provolone works too)
parmesan cheese, grated
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Saute' chicken breast in olive oil. Add salt and pepper to taste. Set aside on a plate.
  • Then saute' eggplant (you can leave skin on or remove based on your preference) until tender. Set aside on another plate.
  • Next, saute' prosciutto for just a few minutes then add to plate.
  • In large baking dish brushed with olive oil, arrange starting with layer of chicken with a layer of eggplant on top, then layer ham, and cheese.
  • Bake for 15 minutes. Serve with grated Parmesan cheese over pasta if desired.

Saw Lidia preparing this dish but didn't listen to the amounts in the recipe. So, I placed a request in the Recipes Forum and 1Steve was kind enough to send me this link. It was posted in Flavor Junkie's October 4, 2006 blog.

6 boneless skinless chicken breasts, pounded
2 medium eggplants
oil (for frying)
2 tablespoons butter
2 cups tomato sauce (preferably homemade)
1/2 cup grated romano cheese
12 leaves fresh basil (we used parsley, we don't do basil)
italian seasoning, to taste
1/2 cup white wine
2 tablespoons butter

Steps:

  • Preheat oven to 400ºF degrees.
  • Trim the eggplants, and peel if you prefer. Lidia stripes them,
  • Slice on an angle, so that you have 12 good slices in all.
  • Dredge the eggplant in flour that has been seasoned with salt, pepper & Italian seasoning.
  • Heat a large skillet (preferably with a lid), add enough oil to coat the bottom, and fry the eggplant on medium-high heat until caramelized on both sides.
  • Set aside on paper towels to drain while you make the chicken.
  • Lightly pound the chicken breasts and dredge in the seasoned flour.
  • Reheat the same skillet on medium heat, add two tablespoons of oil and tablespoons of butter, swirling to mix.
  • Cook the chicken until caramelized on the one side.
  • You want the chicken to brown--but do not try to hasten the process by cooking it on high heat.
  • You want to do it over gentle heat so as not to toughen the meat.
  • Turn them over to caramelize on the other side, and top each breast with two slices of eggplant, then a spoonful of sauce, two basil leaves, and a good sprinkling of cheese, and as much Italian seasoning as you want.
  • Let cook for about two minutes, turn up the heat to medium-high, add the wine to the pan, then the remaining tomato sauce.
  • Shake the pan a bit to mix, add in the last two tablespoons of butter and shake again to mix.
  • Put the lid on the pan (if your pan does not have a lid, cover with foil that has been sprayed with cooking spray) and finish cooking in the oven--approx 20 minutes.
  • Remove from oven and serve with a flourish.
  • Try to use homemade tomato sauce, this is one of those dishes where you will be greatly rewarded for using the homemade sauce.
  • To cut down on the fat/calories, you can grill or roast the eggplant instead.
  • It is this final oven cooking that makes the chicken meltingly tender and the wine, tomato sauce and butter transform themselves into an incredible sauce.

1 1/2 teaspoon kosher salt
All-purpose for dredging
2 tablespoons extra virgin olive oil
4 plum tomatoes, seeded and diced
8 ounce jar roasted red peppers, drained and sliced
1 teaspoon oregano
1 cup provola cheese, shredded
2 tabelspoons unsalted butter
2 tablespoons fresh basil, shredded

Steps:

  • Cut each chicken breast on a bias with a sharp chef's knife, making two slices out of each breast. Season chicken all over with 1/2 teaspoon salt. Spread flour on a rimmed plate, then dredge chicken in flour and tap off excess. Melt the butter and the oil in a large skillet over medium heat. When the butter is melted, add the chicken and cook until browned on one side, about 2 minutes. Flip the pieces, and brown the other side, about 2 minutes more. When the chicken is browned, pour the tomatoes, roasted peppers, oregano, and remaining 1 teaspoon salt into skillet. Bring to a simmer, and cook until the separate ingredients come together as a sauce, about 5 minutes. Sprinkle the dish with the provola and shredded basil. Cover the skillet, and simmer just until the cheese melts and the chicken is cooked through, about 2 minutes more.
