3 chicken breast (chopped into cubes (approx 2cm))
2 tbsp sunflower oil
1/2 tsp salt
1/2 tsp pepper
Juice of 1 lime
1 tbsp honey
2 tbsp fajita spice
1 large clove garlic (peeled and minced)
3 tbsp finely chopped coriander ((cilantro))
1 red bell pepper (chopped into 2cm squares)
1 green bell pepper (chopped into 2cm squares)
1 yellow bell pepper, (chopped into 2cm squares)
1 large red onion (peeled and chopped into 2cm squares)
400 g tin chopped tomatoes
10 ripe cherry (grape) tomatoes
1 medium onion (peeled and roughly chopped)
large bunch coriander (roughly torn, stems removed)
1 or 2 red chillies - such as Fresno Serenade or Thai
Juice of 1 lime
1 tsp light brown soft sugar
2 cloves garlic (peeled and roughly chopped)
1/2 tsp salt
¼ tsp white pepper
Boiled rice
Roughly chopped coriander ((cilantro))
Fresh lime slices

Steps:

  • Place the chicken in a bowl with 1 tbsp of the oil, salt, pepper, lime juice, honey, fajita spice, garlic and coriander. Mix together and allow to marinate for 10 minutes.
  • Preheat the barbecue, or if cooking on a griddle pan, preheat it and brush with oil.
  • Thread pieces of the marinated chicken onto 8 skewers (if using wooden skewers, soak in water for 30 minutes first, to prevent the sticks burning) along with the peppers and red onion.
  • Place the skewers on the barbecue (or griddle, or under the grill/broiler) and grill for 8-10 minutes, turning every few minutes until lightly charred. Check that the chicken is cooked by cutting into a large piece and making sure it's no longer pink in the middle.
  • Whilst the chicken skewers are cooking, place all of the picante ingredients in a food processor. Blend until well combined, but still with a little bit of texture, then turn of the blender and transfer to a bowl.
  • Serve the skewers (two per person) on top of boiled rice that has been mixed with chopped coriander. Drizzle on some picante, and serving with lime slices and extra picante.

This is such fun - we cook wrapped, stuffed chicken thighs across two skewers so they get crisp and gnarly on the outside, then we slice between them to reveal the tender white meat inside. The potatoes are the real star - they suck up the chicken juices as they cook, becoming wonderfully stodgy and melt-in-your-mouth.

60 g blanched almonds
6 cloves of garlic
1 tablespoon balsamic vinegar
1 tablespoon baby capers in brine
6 anchovy fillets in oil, from sustainable sources
1 bunch of fresh flat-leaf parsley, (30g)
10 skinless, boneless free-range chicken thighs
10 slices of higher-welfare prosciutto
1.2 kg potatoes
300 g ripe cherry tomatoes
olive oil
1 bunch of fresh thyme, (30g)
extra virgin olive oil

Steps:

  • Preheat the oven to 200ºC/400ºF/gas 6. Put the almonds into a food processor and pulse to rough crumbs. Peel and add the garlic, add the balsamic and capers, the anchovies and a splash of their oil, then tear in the top leafy half of the parsley and pulse until fairly fine. Open the chicken thighs out on to a board, smooth side down, and pound with your fist or a rolling pin until flattened and tenderized. Divide the stuffing between them and roll up, wrapping each thigh in a slice of prosciutto. Double skewer 5 thighs across two long metal skewers, then repeat.
  • Peel the potatoes and slice 1cm thick, then parboil in a large pan of boiling salted water for 6 minutes. Prick each tomato with the tip of a sharp knife and add to the pan for the last 40 seconds, then drain it all. Once cool enough to handle, pinch the skins off the tomatoes. Layer the potatoes in a large, sturdy baking dish, seasoning with sea salt and black pepper, and drizzling lightly with olive oil as you go, then scatter over the tomatoes. Nestle the skewers on top so that all the tasty juices drip down over the potatoes as they cook. Roast for 30 minutes. Dip the bunch of thyme in olive oil, then use it as a brush to baste the chicken and potatoes with the pan juices. Sprinkle the thyme sprigs over the dish and return to the oven for a final glorious 10 minutes. Slice between the skewers, then drizzle with extra virgin olive oil, to serve. If you like your potatoes super-crisp, pop them back into the oven for an extra 10 minutes at the end.

  • Make Chicken Skewers: Heat outdoor grill. Mix ingredients in a plastic food bag and seal. Marinate 15 minutes. Have ready 8 skewers.

4 skinless chicken breasts
1 lemon
2 tsp oregano
1 garlic clove
1 small yellow pepper
1 small red pepper
wholemeal tortilla wraps, to serve
baby spinach leaves, to serve
few sprigs flat-leaf parsley , to serve
½ cucumber
¼ garlic clove
4 tbsp Greek yogurt
1 tbsp extra virgin olive oil
eight bamboo skewers undefined

Steps:

  • Soak eight bamboo skewers in water. Using sharp kitchen scissors, chop the chicken into small pieces. Pop into a plastic box with a lid. Pare strips of lemon zest from the lemon using a vegetable peeler, then juice the lemon as well. Add both the peel and the juice to the chicken in the box along with the oregano and the garlic, crushed in. Season generously, mix and put in the fridge for 15 mins with the lid on. Deseed and chop the peppers into similar-sized pieces to those of the chicken.
  • Heat a griddle pan to high while you get the chicken out. Discard the lemon zest and thread the chicken onto the skewers, alternating every few bits of chicken with a piece of red pepper followed by a piece of yellow pepper. Griddle for 10 mins, turning halfway.
  • While the skewers are cooking, make the tzatziki. Get a box grater and a bowl. Cut the cucumber into long lengths, discarding the watery seedy core. Grate into the bowl, then grate the ¼ garlic clove. Season generously and stir in the Greek yogurt. Drizzle with a little extra virgin olive oil.
  • Serve the skewers hot off the griddle with the dip, or take the chicken and peppers off the skewers, leave to cool and pack into wholemeal wraps spread with a little tzatziki and rolled up with baby spinach and a few picked leaves of parsley.

1/2 cup smooth peanut butter
1/4 cup soy sauce
1/4 cup honey
1 tablespoon minced ginger
1 teaspoon crushed red pepper flakes
1/2 teaspoon hot chili oil
Juice of 2 limes
1/4 cup very hot water, plus more if needed
Neutral oil, for the grill
2 pounds chicken tenders
1/2 cup minced fresh cilantro
Good-quality barbecue sauce, for serving

Steps:

  • Preheat a grill or grill pan to medium heat.
  • To make the peanut sauce, put the peanut butter in a blender with the soy sauce, honey, ginger, red pepper flakes, chili oil and lime juice. Add 1/4 cup very hot water as you blend the mixture. Check the consistency and add a little more hot water if needed to make it very smooth. Transfer the sauce to a small dish, cover it with plastic wrap and set aside.
  • Brush the grill with oil. Thread the chicken onto the skewers and grill on both sides until the chicken is done in the middle, 2 to 3 minutes per side. Remove to a serving platter and sprinkle on the cilantro.
  • Serve the skewers with dishes of the peanut sauce and a good-quality barbecue sauce for dipping.

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
