2 tablespoons olive oil
1 pound chicken cutlets (scallopine)
2 shallots, sliced
1 clove garlic, minced
1/2 cup white wine
1 1/2 cups chicken broth
1/4 teaspoon saffron threads
1/2 cup heavy cream
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Warm the olive oil in a large skillet over high heat. Season the chicken
  • cutlets with salt and pepper. Cook the chicken until golden and cooked
  • through, about 2 to 3 minutes per side. Transfer the chicken to serving
  • plate and tent with foil to keep warm. Turn the heat to medium, add the
  • shallot and the garlic and cook until tender, about 2 minutes.
  • Deglaze the pan with the white wine. Using a wooden spoon, scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated.
  • Add the chicken broth and saffron threads, bring to a simmer and reduce for 10 minutes. Add the cream, salt, and pepper. Stir to combine and simmer for 1 minute to blend the flavors. Pour the sauce over the chicken.
  • Sprinkle with parsley and serve immediately.

2 skinless boneless chicken breast halves
1 tablespoon butter
1 tablespoon canola oil
1 large shallot, minced (about 1/4 cup)
1/4 cup Madeira
1/3 cup heavy whipping cream
1/4 cup hazelnuts, toasted , husked, chopped (about 1 1/4 ounces)

Steps:

  • Remove tenderloins from chicken breast halves. Slice each chicken breast half on diagonal into 4 cutlets. Place cutlets and tenderloins between 2 pieces of waxed paper or plastic wrap. Using mallet, pound each piece to about 1/3-inch thickness. Sprinkle pounded chicken with salt and pepper on both sides.
  • Melt butter with oil in heavy large skillet over medium-high heat. Working in batches, add chicken to skillet and sauté until lightly browned and cooked through, about 11/2 minutes per side. Transfer chicken to plate; cover to keep warm. Add shallot to same skillet and sauté until tender, about 3 minutes. Pour in Madeira and bring to boil, stirring to scrape up any browned bits. Add cream; boil until sauce thickens slightly, about 2 minutes. Stir in hazelnuts. Season sauce with salt and pepper. Pour sauce over chicken and serve.

I have been making this recipe for years. It is very easy to make, and the sauce is to die for! I have used chicken in place of the veal on many occasions. Just pound the chicken until fairly thin.

all-purpose flour, for dredging
white pepper
salt
12 ounces veal scallops
4 tablespoons butter
2/3 cup whipping cream
1/4 cup freshly grated horseradish (or more to taste) or 4 teaspoons prepared horseradish
1/2 cup peeled seeded, diced tomato (I have used petite diced canned tomatoes in replacement of the fresh on occasion)
4 teaspoons minced fresh parsley
4 teaspoons minced chives

Steps:

  • Season flour with salt and pepper.
  • Dredge veal in flour; shake off excess.
  • Melt butter in heavy skillet over high heat.
  • Add veal and cook until tender, about 2 minutes per side.
  • Divide veal between plates; tent with foil to keep warm.
  • Wipe out skillet.
  • Add cream and horseradish to same skillet and boil until liquid is reduced by half, about 2 minutes.
  • Taste, add more horseradish if desired.
  • Add tomato, parsley and chives and stir to heat through.
  • Spoon cream sauce over veal.
  • Enjoy!

2 Tbsp. olive oil
6 small boneless skinless chicken breasts (1-1/2 lb.), pounded to 1/4-inch thickness
1/3 cup flour
1 jar (15 oz.) CLASSICO Light Creamy Alfredo Pasta Sauce
2 Tbsp. fresh lemon juice
1/8 tsp. ground nutmeg

Steps:

  • Heat oil in large skillet on medium heat. Meanwhile, dip chicken, 1 breast at a time, into flour, turning to evenly coat both sides of each breast with flour. Gently shake off excess flour.
  • Add chicken, in batches to hot skillet; cook 2 to 3 min. on each side or until done. Remove from skillet, reserving drippings in skillet; cover chicken to keep warm.
  • Stir pasta sauce and lemon juice into reserved drippings; cook 2 min., stirring constantly to scrape browned bits from bottom of skillet. Cook additional 3 to 5 min. or until sauce is heated through, stirring frequently. Stir in nutmeg. Serve over chicken.

1 1/2 lbs boneless skinless chicken breast halves
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup Italian seasoned breadcrumbs
cooking spray
1/2 cup reduced-sodium fat-free chicken broth
1/4 cup dry white wine
4 teaspoons capers
1 tablespoon butter

Steps:

  • Pound each chicken breast half to 1/4-inch thick with meat mallet or rolling pin.
  • (I put them between 2 sheets of plastic wrap first).
  • Brush chicken with juice and sprinkle with salt and pepper.
  • Dredge chicken in breadcrumbs.
  • Heat a large nonstick skillet to medium-high heat and coat with cooking spray.
  • Add chicken and cook for 3 minutes or so on each side until chicken is done.
  • Remove from pan and keep warm.
  • Add broth and wine to pan.
  • Cook 30 seconds, stirring constantly.
  • Remove from heat.
  • Stir in capers and butter.
  • Spoon 1 tablespoon sauce over each chicken breast.

1 lb veal (or boneless chicken breasts)
salt
pepper
2 1/2 tablespoons butter
2 tablespoons olive oil
12 ounces cremini mushrooms, sliced (or button mushrooms)
2 large shallots, finely chopped
3/4 cup dry white wine
1 cup broth (beef or chicken depending on meat)
1/4 teaspoon saffron thread
3/4 cup heavy cream (or half & half)
1/2 cup frozen green pea, thawed
1 lemon, cut into wedges

Steps:

  • Sprinkle the meat with salt and pepper.
  • Melt 1/2 T Butter and 2 tsp of oil in heavy frying pan over high heat.
  • Working in batches, add meat and saute until just cooked through and golden, about 45-60 seconds per side.
  • Transfer to a platter and tent with foil to keep warm. Repeat with more butter and oil as necessary.
  • Melt 1 T butter and add 1 T oil in same pan over high heat. Add the mishrooms and shallots, sprinkle with salt and pepper and saute until mushrooms are golden brown, about 8 minutes.
  • Add wine, broth and saffron and simmer until the liquid is reduced by half, about 5 minutes.
  • Add cream and boil until the sauce thickens slightly, stirring often, about 4 minutes.
  • Add peas and return the sauce to a simmer.
  • Season sauce with salt & pepper to taste.
  • Pour sauce over scaloppini and serve with lemon wedges.

I don't remember where I found this recipe, it has been in my recipe box for about 25 years now. It is wonderful for a special occasion dinner, but can also be made up fairly quickly on a weeknight. You can buy sliced mushrooms to use in this to speed it up a bit. This is going to be the main course for my Valentine's Day Dinner this year. I use chicken broth from a 1 litre carton if I don't have any homemade frozen. While it definitely is not diet food you can lighten it up a bit by using half & half instead of heavy cream, but the sauce will be a bit thinner then. While this takes a bit more work than just cooking some chicken breasts it is well worth the effort. You can serve this with pasta or risotto, and some whole green beans with baby carrots.

  • Serve over chicken.
