1 lb chicken sausage
3 cups raw spinach
1 onion, chopped
2 garlic cloves, minced
2 cups white mushrooms, sliced
1 pint cherry tomatoes

Steps:

  • Slice sausage and saute until browned. (Note: I used precooked sausage with roasted garlic and mozzarella filling).
  • Remove sausage from the pan, add drizzle of olive oil and saute garlic and onion until translucent.
  • Add mushrooms and cook until they release their liquid.
  • Add cherry tomatoes and cook for 5 minutes, or until they start to burst. Mash with potato masher.
  • Return sausage slices to the pan, and bring to a boil.
  • Reduce heat and simmer for 10 minutes, or until sauce starts to thicken.
  • Add spinach, and cook until they wilt.
  • Serve over pasta, rice or polenta.

1/3 cup HEINZ Apple Cider Vinegar
1 Tbsp. sugar
1 tsp. chipotle hot pepper sauce
4 slices OSCAR MAYER Fully Cooked Bacon, cut into 1/2-inch pieces
1 red bell pepper, cut into thin strips
1 small red onion, thinly sliced
1 pkg. (5 oz.) baby spinach leaves

Steps:

  • Heat sausage as directed on package. Mix vinegar, sugar and pepper sauce until blended.
  • Cook and stir bacon in large skillet on medium heat 2 min. or until heated through. Remove from skillet; set aside. Add peppers and onions to same skillet; cook and stir 2 to 3 min. or until crisp-tender. Remove from heat; stir in vinegar mixture.
  • Slice sausage. Place spinach on 4 serving plates. Top with sliced sausage and vegetable mixture. Sprinkle with bacon.

8 tablespoons (1 stick) unsalted butter
1 cup finely chopped yellow onion
3 tablespoons minced garlic
1/2 cup all-purpose flour
7 cups milk
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
2 (10 oz.) boxes or bags frozen chopped organic spinach, defrosted and wrung dry
3 cups grated Parmesan
2 tablespoons olive oil, plus more for coating baking dish
1 1/2 lbs. chicken sausage
2 (14-ounce) cans quartered artichoke hearts, drained and chopped
1 pound oven-ready Lasagna sheets
1 tablespoon butter, cut into 8 pieces

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the onions and garlic to the pan and saute until soft and translucent, 3 to 4 minutes. Add the flour and cook, stirring with a wooden spoon, to make a light roux, about 2 minutes. Whisking constantly, slowly add the milk and continue to cook, stirring occasionally until thickened, 5 minutes. Add the salt, pepper, nutmeg, spinach and 1 1/2 cups of the Parmesan and cook, stirring, until thickened, about 2 minutes.
  • Remove from the heat. Place a piece of plastic wrap directly on the surface of the creamy sauce until ready to assemble the lasagna.
  • Set a large, 12-inch saute pan over medium heat and add the olive oil. Brown the sausage until golden brown and cooked through, about 4 to 5 minutes. Stir in artichokes. Transfer to a plate to cool and set aside.
  • Preheat the oven to 375 degrees F.
  • Coat a 9-by-13 inch baking dish with olive oil, and spread about 1/2 cup of the bechamel sauce on the bottom of the dish. Lay 3 sheets of pasta across the bottom of the dish and spread 3/4 cup of the bechamel sauce over the pasta. Sprinkle 1/4 of the chicken and artichoke mixture over the bechamel sauce, then sprinkle with 1/4 cup of the remaining Parmesan. Lay another 3 sheets of pasta over the chicken and artichokes. Repeat 2 additional times with the remaining bechamel sauce, chicken and artichokes, Parmesan, and pasta, ending with a layer of pasta covered with bechamel sauce. Sprinkle the remaining 1/2 cup of Parmesan over the bechamel sauce and scatter the butter pieces over the top. Place the casserole on a lined baking sheet and bake, uncovered, until bubbly and beginning to brown, about 45 minutes.
  • Remove from the oven and cool for at least 20 minutes before serving.

6 large eggs
1/4 cup whole milk
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 fully precooked chicken sausages, sliced into thin rounds (or removed from casing)
1/2 small red onion, thinly sliced
1 teaspoon kosher salt
2 garlic cloves, thinly sliced
3 cups baby spinach
1/3 cup pitted, roughly chopped Kalamata olives (or Turkish gemlik olives)
1/3 crumbled feta cheese (preferably French), plus more for garnish
Flaky sea salt and freshly cracked black pepper
Chopped fresh parsley, for garnish
Olive oil, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk the eggs and milk until frothy.
  • In a large ovenproof skillet, heat 2 teaspoons of the olive oil over medium-high heat. Add the chicken sausage coins and brown them on all sides, 4 to 6 minutes, turning often. Transfer the sausage to a plate until ready to use.
  • Add 1 tablespoon of the olive oil to the skillet and heat it over medium-high heat until shimmering. Add the onion and 1/2 teaspoon of the salt. Cook, stirring often, until the onion is soft but not browned. Add the garlic and cook, stirring often, until fragrant, about 1 minute. Add 1 tablespoon room temperature water to the pan to stop the garlic browning, and the remaining tablespoon of olive oil, then stir in the spinach and the remaining 1/2 teaspoon of the salt. Cook, stirring often, until the spinach is wilted and the water in the pan evaporates, about 2 minutes. Spread this frittata filling evenly in the skillet and layer with the chicken sausage.
  • Pour the egg-milk mixture over the frittata filling and use a silicone spatula to scrape the sides of the pan and gently pull eggs from the edges toward the middle so that soft curds form and the frittata begins to firm up.
  • Give the pan a couple of good shakes to release the frittata from the pan bottom (the top of the frittata will still be raw). Sprinkle the olives and feta over the eggs. Transfer the skillet to the oven and cook until the fritatta is mostly dry (the feta will release some liquid--this is fine--but just be sure the egg is completely cooked) and lightly browned on top, 5 to 7 minutes.
  • Let rest 5 minutes, then slide the frittata onto a large plate and sprinkle with flaky sea salt and pepper to taste. Top with more feta, parsley and olive oil. Slice into wedges and serve warm or at room temperature.

1 teaspoon lemon zest, grated

  • In a large nonstick skillet, cook the sausage over medium heat, breaking it up with a wooden spoon, until crumbly and crisp, about 10 minutes.

4 1/2 lbs chicken thighs
7 -10 ounces fresh spinach (1 bag)
5 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried sage
1 teaspoon dried thyme
4 garlic cloves

Steps:

  • Remove the bones from the chicken thighs, leave the fat on.
  • Cut into 1" dices into a bowl.
  • Chop garlic and add to the chicken.
  • Add remaining spices.
  • Stir all ingredients in the bowl then refrigerate for at least an hour.
  • Course Chop Spinach and mix with the other ingredients.
  • Grind the enitre contents through a course grinder.
  • After grinding the sausage by hand for a couple of minutes.
  • At this point you can either keep as bulk sausage, make patties or stuff into pork casings.
  • Can be served by itself or in a spaghetti or Alfredo sause.
  • Cook within 2-3 days or freeze for up ot 4 months.

  • Preheat oven to 450°F. Place chicken on baking sheet and cook until crisp and heated through, about 10 minutes.
  • Meanwhile, combine spinach, cabbage and green onion in large bowl. Add enough dressing to season to taste; toss well. Divide salad between plates. Slice chicken fillets on diagonal. Divide chicken between plates, placing chicken atop salad. Drizzle chicken lightly with vinaigrette and serve.
  • Combine first 4 ingredients in small bowl. Gradually whisk in oil. Season to taste with salt and pepper. (Can be prepared 1 week ahead; refrigerate.) Makes about 1/2 cup.

Steps:

  • In a large salad bowl, combine spinach, leaf lettuce, sliced red onion, and pepper strips. Cover and chill salad up to 2 hours.
  • Cut chicken into bite-sized strips. Toss chicken with rosemary and lemon-pepper seasoning. In a wok or 10-inch skillet stir-fry chicken strips and garlic in hot oil over medium-high heat for 2 to 3 minutes or until chicken is tender and no longer pink. Remove chicken from skillet. Add to salad mixture.
  • For dressing, add vinegar and water to skillet, stirring to scrape up any browned bits. Pour dressing over salad. Toss gently to mix. Transfer to individual salad plates. Garnish with fresh rosemary, if desired.

My husband think's he has died and gone to heaven with all the tasty morsels I have been serving up during this contest. I think this salad is a perfect combination of sweet and savoury with an appealing crunch! Quick easy and impressive.

2 chicken breasts
1 tablespoon sesame oil
3 slices bacon
300 g Baby Spinach, washed (pat dry)
1 cup bean sprouts
1/2 red pepper, thinly sliced
1/2 cup roasted unsalted cashews
1 small red onion, sliced
1/4 cup raisins
1 cup crisp fried Chinese noodles
2 tablespoons soy sauce
1 tablespoon lemon juice
1 teaspoon finely grated lemon, zest of
1 tablespoon honey
1 clove garlic, crushed
1 tablespoon sesame oil

Steps:

  • Brush the chicken breasts with a little oil and cook in a hot pan for 5 minutes on each side, until the chicken is cooked through, without overcooking
  • Remove the chicken and set aside
  • Cook the bacon until crisp in the same pan
  • slice the chicken into thin strips and roughly chop the bacon
  • Toss together the chicken, bacon, spinach, sprouts, red pepper, raisins, cashews, red onion and noodles
  • Whisk the dressing ingredients in a small saucepan and warm gently to dissolve honey
  • Drizzle the dressing over the salad and serve
