Chicken Salad Pinwheels Food

ULTIMATE CHICKEN SALAD PINWHEELS

Steps:

• Roughly chop chicken and green onions.
• Add to food processor and pulse a few times.
• Add in eggs, mayo, mustard, and salt and pepper to taste. Pulse until combined. If too dry, add a little more mayo. Adjust seasoning to taste.
• To assemble: Spread about 1 tbsp whipped cream cheese on tortillas. Add 3 slices of provolone to the edge of the tortilla (see picture). Top with shredded lettuce and finally 3 -4 tbsp of chicken salad. Starting at one end, roll up. Repeat with remaining ingredients.
• Wrap in plastic wrap and chill at least one hour.
• Cut into 1 inch sections using a serrated knife.

CAESAR SALAD PINWHEELS

Steps:

• Combine cream cheese, sun-dried tomatoes and herb-seasoning from salad kit in medium bowl; blend well.
• Lightly crush garlic croutons from kit.
• Combine romaine, cheese and crushed croutons from kit in large bowl. Toss with Caesar Dressing.
• On each roll, spread cream cheese mixture over lavash bread; cover with a thin layer of salad mixture. Roll up from narrow side. (For flour tortillas, fold in sides before rolling up). Secure each roll with 5 to 6 wooden picks. Slice rolls between wooden picks to form pinwheel appetizers.

CHICKEN PINWHEELS

Steps:

• Combine chicken and broth in large nonstick skillet.
• Bring to a boil.
• Cover; reduce heat.
• Simmer 8 to 10 minutes or until chicken is done.
• Drain; cool slightly.
• Shred chicken or cut into thin strips.
• Spread each tortilla with cream cheese to within 1/2 inch of edges.
• Sprinkle evenly with garlic pepper and cayenne.
• Top evenly with chicken, slaw mix and chopped pepper.
• Press lightly to flatten.
• Roll tightly.
• Wrap each roll in plastic wrap.
• Refrigerate until ready to serve.
• Remove plastic wrap from rolls and cut each into 6 pieces.
• Use wooden picks for serving.
• Serve with salsa on the side.
• Refrigerate leftovers.

CHICKEN SALAD ROLL-UPS

Steps:

• Mix chicken, onions and walnuts in food processor bowl. Cover and process by using quick on-and-off motions until finely chopped. Add 1/3 cup of the poppy seed dressing; process only until mixed. Mix remaining dressing and the cream cheese spread in small bowl with spoon until smooth.
• Spread cream cheese mixture evenly over entire surface of tortillas. Remove white rib from lettuce leaves. Press lettuce into cream cheese, tearing to fit and leaving top 2 inches of tortillas uncovered. Spread chicken mixture over lettuce. Sprinkle strawberries over chicken.
• Firmly roll up tortillas, beginning at bottom. Wrap each roll in plastic wrap. Refrigerate at least 1 hour. Trim ends of each roll. Cut rolls into 1/2- to 3/4-inch slices.
